      Good day Sir.im going for an interview for a new job as a waitress. My worry is as im doing my research one of the waitress there told me that they dont write down orders in the waiter's book, you must master everything in your mind. Will i manage to that🤦

      @@eneresnyandoro2306 everything that is new at the beginning looks hard and even impossible!
      In the beginning, it will be tough but I don't believe the manager will forbid you to write down the order during your first few days or weeks! Ask! To be able to remember everything you will need to learn very well the menu! This takes a little time! Whatever it is, don't doubt for s second that you will manage better than most! You will!       Good advice. I once worked with a very good server who told me she remembered everything and didn’t need to write it down. I was impressed but I still used my own method. One night she screwed up a table by NOT remembering 3 orders due to stress. It created a domino effect which caused the guests to complain and her to be chewed out by our fussy manager. So much for remembering it all!

    Your stuff is spot on,sometimes as a busser I sit thru a shift and just have the most negative servers, complaining to the point I worry the guests will overhear. I chalk it up to them having a hard day, but jeeze.

    Good stuff. I'm a total a.d.d guy and need lists for everything. This is exactly how I try to make my lists so that's a great template. Somehow I landed a job paying 40 p.h plus tips as my first waiting job so I really want to make a good impression so I don't look like an idiot.

      @@user-zw2gs3ki4n it went great, I’m flying it currently! My trial was great, all you have to do is stay calm, cool and collected in a pressurised environment. It’s so much fun too!

      Taking big leaps even with nervousness is always the right way!

    I have a trial shift for a japanese bbq restaurant. Im good at customer service as i have past experience in working in fast food take aways and snackbars. However my only concern that when i went into the dining area there were no numbers on the tables presented, so i wasnt quite sure if i had to memerise which food goes to which table? Im just scared i will mix up the orders with someone elses? Will they expect alot from me as a trial run? I dont know the menu off by heart, what if a customer asks me for a recomendation on what to eat?

      Sounds like you know what are you talking about and what to expect and that is very good start! The table numbers you should be able to learn in 5 minutes or even less, so make a point to learn it. The menu is always good to know when you are on the floor so at least go through it with some of the head waiters just before the shift and ask questions about items you are not familiar with! Recommending food on your first shift is not recommended :) so to say! If some one asks tell them you are trainee and you will call your head waiter to make recommendations! But it is good to know if someone ask what is ...scarmorza to be able to explain! Anyway no one will expect you to be perfect on your training day! Still it is good to give good first impression!     What about when you have multiple tables to take care of?? I have 3 tables at a time where i work, im struggling, it's my 3rd week..any advice?

      Ana Ochoa, you should know that we all struggle when we get 3 tables within a minute or two! Doesn't matter how good, fast or whatever you are! Experience here help as to keep calm and work your rounds! Don't get panicked, just keep calm and know that no matter how hard and stressful it is in this moment, everything is going to be fine in 15 minutes! What I usually do is, if I cannot get someone to help mew, I do rounds! I take the menus for all three tables and I greet them one after another! Then I get the drinks order again together and then I go and punch it in together. Then I go back and start taking the food order! You can usually sense which table is in a hurry, or hungry and which table is in a great mood and just talking non stop to one another and laugh! You should leave this table for last and start with the one who looks nervous and hungry! once you have taken the order from all tables ...well the stress is gone and you can just relax and do your job further! There is no way to escape the stress! Our job is stressful and multitasking like not many other in the world! But like I said it is 15 minutes that you need someone to help you or just do the tables by rounds and do your best! If you are three weeks there, I am sure it is tough! the good thing is that with every other week it will get better!
      So my advice is: do all the tables at the beginning together! Menus, drink order, food order! Stay calm, we can do only so much and the guests understand that....most of the time :)

      The Waiter's Academy What about when you are over extending yourself like in my case where I have 32 tables to keep an eye on by myself? Any tips on prioritization or how to handle something like that effectively?

      The Woah, where do you work? I have never heard or witnessed something like that! If you can handle 32 tables by yourself, you are by far the best waiter in the world :)
      Tell me more about your place. Is it a buffet? Do the guests only eat or they get drinks too? Fast food restaurant? I can't imagine one waiter on 32 tables without help! When I was 22 and working illegally in Cyprus I was the only waiter in a restaurant with 24 tables and there was one cook in the kitchen! Always full and I had to run so much that my guts were hurting! I was doing sections! If I go to one corner of the restaurant I make sure to check on all 6 tables that were there and take care of anything they need! than the other corner and so on. If some one from a table in the other corner wanted something I was just giving them a sign to wait and their time will come! you cannot afford to run from one corner to the other and then back, you have no time! So maybe yo should try the same, but no matter what do you try, 32 tables are just too much for one person! Good luck, brother :)

      Well, as long as I understood while there it is very hard to obtain a work visa as a waiter in Singapore ...if not impossible! But you can always try! There is no impossible things!

    Awesome Videos Brother...I had two server jobs 2013-2015, used trays. I am getting back into the restaurant business at the age of 40 to support my online business (digital marketing consulting) after finding your videos. I figured I will start at the fine dining level in NYC not using trays (I am a little nervous, yet confident), as a busser....optimize each level........becoming a runner is next.........then work my way up to server........in house. During this process, I will develop a digital marketing strategy for the restaurant to increase their clientele and strive. The Master Plan.

    Thank you so much for your advices I'm starting to work as a waiter, last night I had a table of five people,and I took the order I place the order,fine.
    For drinks they order a bottle of wine and it took me too long to find it,So after I suggested two different bottles, so they picked one, I served them and appetizers arrived on time they were already hungry.
    And I helped a party off twelve, plus two more tables..

    Love the videos. Very helpful. Although his accent can be difficult at times. But also pretty funny. Like when he is speaking of the guests main course. It sound like he is saying the guest's inner course
    . Over and over again! "The guest wants inner course, the guest does not want inner course." LMFAO!

    I work as a Hostess ,3 years already in 2020, and I love my job, but is about the Restaurant, cause I was working only for 2 days in some other place, and was the more terrible nightmare i ever have in my entire life, a mad house, where the other hostess treat me like a garbage. All is about the Restaurant you work, guests are deligthfull only a few can be an asholess, but the real issue sometimes in order to be successful in the Hospitality Business, is the coworkers and Managers. I am so lucky to work in a Restaurant where all my coworkers and Managers are like my family, and we support each others in every shift. Guests are the same, just nice people very regular, full of good manners and courtesy. I feel bless. And the other nightmare place, I send them where they belong, to THE HELL!!!!!! Thanks no Thanks.       You are completely right, Paulinha, the co-workers are most of the time bigger problem than the guests! As I always say, very small percentage of the guests are rude or difficult and they come and go! The colleagues are there all they long and if you don't have a good team it makes your life miserable! So you have done the right thing! If you cannot change the atmosphere, just find another job and go on with your life! Good luck! Stay happy!

    Yes boss you clearly does everything. Very useful tips. Apreciate it. I too a long time waiter and i had lots of good and bad experiences like what you said. Also you should have present knowledge as well how to deal with angry customer in terms of time-delayed food. If everything is perfect eventually you can see million dollars on your hand that's called as tips..😀😀😂 Good luck all waiters.

    Thanks for this helpful video. I love it. The only thing I wonder is how can you stay with a notebook that big. My pants can hold just a little notebook to take orders. Actually, I’d love to have that size of a notebook in order to have more room to be clearer in my notes. But I think I wouldn’t be able to carry a notebook that big.

    i guess i made the right decision for coming here..i find your video very interesting and useful for me especially that you were able to explain it in a very simple way that i can understand it..though its a li'l bit long but its clear and precise.. i was looking for a video that can help me understand more the process of taking orders wherein i can also explain it to my students the way you are explaining it on the video..i even checked your other videos and downloaded it, hehe, like, how to open a bottle of wine, how to carry a large food tray ,because its very easy for me to follow it and explain it also to my students how it is done..so thank you for these videos, i'll be applying it next week for my first day in class.. whew! good luck to me.

      Here is the answer to both of you guys!
      When I start a new job in a new country ( and that has happened very often) I tell the managers I need to spend a day or two on expo and as a runner! This is the best and fastest way to learn the menu!
      You have to off course before everything get the menu card, read it, learn it, google everything you don't understand but then work on the espo or as a runner one or two days and you will know everything on the menu perfectly! The job will be much easier after that!

    Love your video on taking orders. This was only the left side of the order right?? I'm starting as a managing waiter for two restaurants in a 600 million project (that's Danish kroner) it opens up March next year and I really need the opening to go smoothly

I participated in few openings of big and small projects and my observation is that you have to have experienced staff and you still have to train them really good in order to have a successful operation from the start! If you hire new waiters and train them good - it will still not be enough! If you hire experienced waiters and rely solely on their experience and don't put them through extensive training - not good enough either! So that is my advice for you! Good luck with the project! Opening a new restaurant or bar or hotel or any development is a difficult task! All the best!

    Hehe, I've forgotten a course before. It's awful. Especially when it's a family or something and they say, oh we can't wait any longer, we have to get the kids home to bed, etc. (For newbies) - In my experience, if you were doing something, and you get distracted, and then you come back and can't remember what it was - DON'T think, oh well, I can't remember, it can't have been important. NO. It most likely WAS important. Go and check your tables, Go and check your orders. CHeck the tickets on the pass. It's more than likely you forgot something 😲

    Fifty years ago, I worked at a famous Italian restaurant on East 56th Street in Manhattan. This is close to exactly how I was trained while trailing. I worked in the business for just a few years, but the discipline of note-taking, organizing information into sequential columns, circling variables, etc has stayed with me throughout my life and was extremely helpful in a spectrum of circumstances during a successful professional career. I hope many people follow your excellent advice. Keep up the good work!

    Unfortunately in my area it’s hard to prevent waiter turnover, and keep good ones. It’s a busy restaraunt near Trenton NJ, so there are a lot of tables that just tip horribly.
    It can really destroy morale.
    Some people just don’t get 20% average, they don’t get that you tip out other employees and even with no tips period (will never happen) you get taxed on sales .1

      We deal with situations like that! More training for the waiters and more info for the guests is useful! Still, very busy restaurants tend to have big turnovers because the waiters work too hard and don't make so much! It is what it is!

      Kids in generally don't wait, you order their meals with the starters but what I always do is if some guests orders starters and others don't, I am telling them: So, I am going to bring first the salad and the soup for the ladies (for example) and then all the main courses together! If they say it is okay, so you do! Sometimes if only one man has ordered starter and they are 4-6 people we don't want the whole table to wait for this one man, so they will tell you to bring their meals with his starter and then he can eat alone the main course! But in fine dining, the other guests simply wait for the people with starters to finish and then eat all together main course!

      Learn the menu first! If you know every item on the menu it will be much easier for you! But as Brent says, you should write everything the guests ordered down and you will be fine!

      Good recommendation! Thanks a lot! If I have not said it in the video I usually take the drink order before I get to the food order! But if someone still orders a drink while ordering the food I write it in top of the list , next to the table number!
