This was fun to watch. I loved how when the wine was being opened the soft music began playing in the background and the process then became a spectacular ritual. It was as though we had just been swept away. I kept smiling while watching this. I noted all the small details--such as wiping the rim of the wine bottle after pouring, replacing a dinner knife with a steak knife and removing the outer knife and replacing it with a soup spoon. Hey Darryl, I just want to let you know that you also made me smile while I was reading your message! Thanks for the good word! Best of luck in the future!
Serving way " a la carte" was great but there are places where we can't talk at all during the service and while around the table lol. We do not ask if "are you done with.. ", we need to keep an eye on the plate fork and knife and when those are on the positions we start to clear, while informing the next course:)
Love it! I was a server in an 'upscale' wine lounge years ago and recently got back into serving. I love the classy and elegant appeal of fine dining, so I've been going over the things I learned back in the day. I work at casual place so its a lot easier but what i find is most important to connect with people. Steps of service is important and clients seen it tons of times, but here is always different person behind it and you should stand for sonething.
Simonas, even if you work at a casual dining you should still try to follow all those steps because the guests see that you are different than the other! But you are right! Personal contact, personality matters a lot and that is how we make more money!

There is an effort on this video making but ethics were not present..served food on the same side as when retrieving dirty dishes..which was not to Parr of the service steps. Too many thank you...
I worked in a fine-dining restaurant as a busser, for a few months, but I didn't interact with the guests. Plus, I was supposed to stay out of sight. Roll silverware, deliver bread, when asked by a server, who didn't allow me to approach the tables. I attempted to get a mentor, but I think at this restaurant/ location, the servers, closely guarded their clientele; this meant you became competition with other servers. Nobody backstabbed me, but let's just say the environment, was very difficult to move up. This video was definitely a joy to watch! Brings back memories of watching some servers work their magic, when I did get a chance.

I commented a few months ago saying that I was offered the job at a french fine dining restaurant and I finally got the position on the 2nd Jan!!!! Now I am rewatching to brush up on my interacting skills with the customers
excellent demonstration I am newcomer to New York and I want to work as a busboy and having no experience they do not hire me because I get very nervous and sometimes I do not know how to act, or at what time to remove the dishes and which cutlery take or leave aside the problem of language since I speak a little English and my native language is Spanish, there is very little information on how to be a good busboy and this helps a lot I congratulate you, thank you for your advice.
Thank you Michael! I really appreciate you saying that! Watch the videos I did for bussing tables and take notes! Learn everything I am giving you and try again to get a job! On the job interview tell them that you have studied the job requirements and you are prepared to work hard and to prove to them that you can be great help! Try to stay calm and smile! Be positive! Keep trying if it doesn't work from the first time! To get a good job in the States I had to go 7 times to the same place to convince them to give me a chance! Good luck!
Great video man. This is an excellent example of what fine dining service is actually like. I appreciated that you showed the steps rather than lecturing on them!
I don't drink wine myself and I don';t know an awful lot about it so when customers ask me for a recommendation (If the customer is up for a laugh ofcourse, pick your audience) I point to the most expensive bottle and say "I've heard it's pretty good eh" and give a bit of a smile. I think I've sold more bottles of it than anybody else at my work
It is a good tactic with guests who would take a joke but you have to be careful since not all guests are that type! Still you have done well! It won't hurt if you learn little bit more about wine though :)
Hardest part for me is going from Applebee’s to fine dining and learning this phenomenal proper behavior. I am learning to tighten up my persona around guests
It is not easy but you can do it! CHeck this playlist and you will find almost everything you need to know about fine dining there: ruclips.net/video/HTNZ3joCF-c/видео.html

Great job sir and thank you for helping people like me become a better waiter... but i doubt if while serving water, the glass should be on or off the table during pouring.
Great point, Fon Pride! The glass could be on the table and you could also pick it up off the table so you don't spill water on the table clothe! Both are proper you just have to know how to pick up the glass the right way! Thanks for the kind word!
The manners are something I can master, however, I don’t drink any alcohol nor coffee, it’s hard to recommend anything since my food knowledge is so slim. At least I can assist. Amazing video, thank you!
I started training today for the first time as a server. I took advantage of the strange times we're in now where a lot of people don't want to work and I figured the place that hired me was probably really needing servers and that I might have a chance and it worked!! I'm starting out at a good place too; God works in mysterious ways.
I was always taught in fine dining you should always serve from the left. If that isn't necessary any longer I would love to know that. I very much appreciated all of your helpful pointers!!
@@TheWaitersAcademy i appreciate the reply and advice. I don't know why the Americans have to do every damn thing different! Lol! When I do visit Europe I won't be working , only dining as a customer so I guess I never really paid attention. But your videos are helpful in many ways and much appreciated by me and my friends! Much love from Denver Colorado 🌎❤🤝🏻🙂
@@justinvasquez5280 Hi Justin, there is a simple explanation of why this is done differently! In the USA most of the restaurants use trays to carry the food out to the table! You put the tray on a tray jack and you serve! It makes sense you serve from the left because you don't interrupt the guests if they want to take their glass at this exact moment for example! From the left, the intrusion is much less! But in Europe, this is not the case because the food is taken out of the kitchen 90% of the time with hands only! Now, when you carry three plates, how do you carry them? You have two plates in your left hand and one in your right hand! Try serving with your left hand from the left side of the guest! Not possible! So you serve with the right hand from the right side and this is the standard! Greetings to Colorado! I love Aspen :)
@@TheWaitersAcademy That explains it!! Thank you. Although I just started working at a fine dining Mediterranean restaurant and all food is served by hand. Trays only used for drinks. I can only carry three plates and it makes me nervous to try carrying more. Although somebody's always there to follow if you need. I have seen a video of yours where you explain the carrying of plates wich is very helpful. You're very much my go-to guy for all the questions I have. I appreciate your videos and I know I have more to watch which I will soon. Thank you so much for your kind reply. hope I don't bother you but I'm sure I'll be back with another question! 😄 Thank you! 🙂🤝
Excellent side: 1. You hand the wine menu first and ask If they want water or an aperitive: Aperol/gin-tonic/prosecco 2. With handing the food menu, you offer the "special" of the day 3. If they do not make eye contact or close the menu, do not ask If they are ready to order. 4. For the main course, you can also offer side dishes such as fresh salad/grilled veg, baked or fried potatoes, and boiled rice/veg. 5. The more grease on the meat, the higher body of red wine Is required. 6. Don't mention when the food will be prepared until you are 100% sure, however, not even then :slightly_smiling_face: 7. Salt and Pepper should be on the table when the main course is served. 8. No need to ask If It was too little or too much, only makes the situation uncomfortable, however, you can ask If everything was good. 9. Do not bring an extra plate for the desert If It Is a couple, ruins the magic. 10. Much more that can be done then what Is shown In this video, specially In fine dining. Good side: 1. Always be polite 2. Good table setup 3. Change cutlery in between meals 4. Ask If they are enjoying their food 5. Ask If they want a break In between courses (important) 6. Leave the cutlery to share a dessert. 7. Preserve the bottle for the next days 8. Offering liquors and coffee after dessert.
Great video I recently did a course for up selling food but this really broke it down for suggesting a more enhanced experience for the customer. thank you
You are welcome, Karma! You will be a very fine server, I have no doubt about it! Best of luck! Make sure you check the website and learn from the waiter course online! It is free!
I have few experience working as a waiter in a fine dining restaurant in my country..This is absolutely excellent !!!. I have never seen kind of a great serving.
Thanks. I appreciate it! If you learn the steps of service and perform them on the floor, you will do a great job and you will make more money than ever! Good luck.
I started to keep following and practicing these steps by watching your videos because I have planned to go abroad (Europe) very soon and there I will be starting my career as a waiter.. When I imagine my past experience as a waiter in that restaurant I can be happy myself because I think I have done a good service for customer satisfaction from the best of my level. Thank you again for sharing your knowledge and experience with us..!
WoW! Great job! Keep learning and improving and by the time you turn 20 this job will be like piece of cake for you and life will be much easier! Best of luck!
Thanks Jamie, it is old school :) The new teachings are that the guests could drink any kind of wine with any kind of food as long as it is their test :) The world is changing! Greetings!
Sooo useful phrases and the plan of catering! Thank you once again. I just want to ask, if you ask your guests do they want to take a break before the main course... How do you deal with a kitchen? If the guest ordered a steak ... how to behave if a guest asks for a 10 min break, but the steak is ready?
It depends on the restaurant you work for! In fine dining the steak won't be ready till I say to the chef that the guests wants the stake now! The waiters do the timing! If the kitchen does the timing it happens very often that the guests in not done with the soup or the salad and the stake is served! that will piss the guest off and all the hell will break loose! But I understand why you asking! I used to work in Bulgaria as a waiter and this is a normal thing! the kitchen works as they want and you deal with the mad guests! Crazy shit! Now, I ask if the guests want to take a break because I know that the kitchen won't start cooking the stake before I tell them too! When it is a busy night and there is a lot of stress in the kitchen I never ask the guests if they want a break! we have to work together and help each other! But still if the guests request a break himself I go to the kitchen and tell the chef that table 20 want 10 min.break and that's it! If you have made a mistake or the kitchen has made mistake and the stake is ready but the guest asked for break....you go to the guest and tell him that you have made a mistake and the food is ready. If he says I don't care I need a break, then you bring the stake back and kitchen will prepare another stake when the time has come! Sometimes the guests will take the stake although they won't be happy! It is a matter of experience! you learn with time!
@@TheWaitersAcademy thank you a lot for the explanation! Really useful for me, and not only for me, I guess :) You tell about another reality, where the kitchen deals with a waiters :))) Generally, I have also worked in a Polish fine restaurant, there was a very nice Chef, she did her best, but she wasn't in time to prepare how I wanted it to be prepared because she was alone and should do to everything from the carta. But it was nice experience. Now I should to learn how have to it be :)
@@marinar8757 if you want to have a good life working in our business you can! You have to learn as much as you can and work hard! You have to always search for a better opportunity and you will find it. All the best to you!
All depends on the culture of your restaurant. Typically you are able to establish an idea of whether the guest will be ready in 20-25 minutes before you put in their mains. Depending on the flow of your restaurant, you could always establish time constraints with the guest, if they aren't pushed for time to see a show after, or they say your restaurant was the reason for getting ready, error on the side of not rushing them. Typically any diner in a rush, it'll be obvious to a seasoned waiter. In dealing with chef's and kitchen staff, it's not something you can get in huge trouble for,on the kitchen side, however bringing out mains while a guest is eating a salad or 2 minutes after a table said 10 minutes, will land you in some hot water. I'm a 10 year waiter, I'd do what the chef asked and rush my table and explain it to my matir'd or manager. Ask them what to do in the future. Maybe the guests rage and ask for a manager in that moment, which would be ideal, as you just listened to the chef. We are there for our guests and your staff should support you and train you to do so in a way that doesn't make you uncomfortable in front of the guests. There are other ways to go about it, but idk your restaurant dynamic
Nice video, only observation is that one doesnt have to say Thank you so many time, after each approach to the table, it comes off as Submissive. In my opinion .
Jose Batista, you make a good point! I am talking to myself in this video but if those are real guests in front of me most of those "THANK YOU" will be actually "YOU ARE WELCOME" because the guests are those who say mostly THANK YOU! Still, in fine dining when talking to your guests you should say thank you as many times as the etiquette requires! Those pleasantries are annoying but they are the norm in fine dining! Thanks for the input. Take care
@@619chrisoriginal there us a diff between having manners and saying thank you several times when approaching a table....like when crumbing a table or bussing plates
@@619chrisoriginal you are correct but Jose has also a point. In this video I am talking to chairs and the "Thank you" is overused! Still, we should say Thank you to the guests every time the opportunity presents itself without worrying not to look submissive, like you said it is a manner! Great point!

This was a really positive experience for me and I thoroughly enjoyed the tutorial. On that note--I've just subscribed.
Thanks,
Darryl
Hey Darryl, I just want to let you know that you also made me smile while I was reading your message! Thanks for the good word! Best of luck in the future!
I get really self conscious opening wines at the table- thankyou for showing it can be a nice ‘ritual’
the wine presentation is like watching a well-made movie! so calm and soothing! beautiful music, well done!
WOW thanks Sophie!
Agreed, except for the fact that the bottle should never touch the table during wine presentation.
mesmerizing haha
Label facing is important as well. :/
A perfect monologue. You're more of an actor. I like this video.
Hehe thanks Janey! I guess, to be able to do what I do on this channel I have to be somehow an actor!
Serving way " a la carte" was great but there are places where we can't talk at all during the service and while around the table lol.
We do not ask if "are you done with.. ", we need to keep an eye on the plate fork and knife and when those are on the positions we start to clear, while informing the next course:)
We say knife and fork to be more 5 star
Never worked in a restaurant. I did this work in the private sector. Works the same. Super job and your comfort level makes the difference. 👍👍
Appreciate that!
Love it! I was a server in an 'upscale' wine lounge years ago and recently got back into serving. I love the classy and elegant appeal of fine dining, so I've been going over the things I learned back in the day. Though my restaurant is not considered 'fine dining' by any means, I still approach all my tables as if they / we were in this type of environment.
This video was spot on and perfect. Really love your presentation! Thank you my friend for putting this together!

Love your comment, Nyoman! Thanks a lot!

Keep trying if it doesn't work from the first time! To get a good job in the States I had to go 7 times to the same place to convince them to give me a chance!

I started training today for the first time as a server. I took advantage of the strange times we're in now where a lot of people don't want to work and I figured the place that hired me was probably really needing servers and that I might have a chance and it worked!! I'm starting out at a good place too; God works in mysterious ways.
I assume you are from the States, Brenda! It is perfect timing to land a good job ad you have done it right! Good luck! You are right about God! 😀
@@TheWaitersAcademy Yep, I live in Florida but it's like that all across the country right now; people collecting unemployment instead of working.
I was always taught in fine dining you should always serve from the left. If that isn't necessary any longer I would love to know that. I very much appreciated all of your helpful pointers!!
Hi Justin, if you are in the USA you keep serving from the left! Don't do it in France or the rest of Europe, though!
@@TheWaitersAcademy did you not mean, ‘you serve with your right hand when you on the guests left’ . I think you may have confused them. I think
Excellent side:
1. You hand the wine menu first and ask If they want water or an aperitive: Aperol/gin-tonic/prosecco
2. With handing the food menu, you offer the "special" of the day
6. Don't mention when the food will be prepared until you are 100% sure, however, not even then :slightly_smiling_face:
Good side:
1. Always be polite
2. Good table setup
3. Change cutlery in between meals
4. Ask If they are enjoying their food
5. Ask If they want a break In between courses (important)
6. Leave the cutlery to share a dessert.
7. Preserve the bottle for the next days
8. Offering liquors and coffee after dessert.
Thank you so much sir I really like your service every moment , every step

Let Me Go, thanks a lot! I appreciate it!
Wow. I Worked in french fine dining as a cook. You bring a lot of class to service.
Thanks a lot
Really useful for me, and not only for me, I guess :)
You tell about another reality, where the kitchen deals with a waiters :))) Generally, I have also worked in a Polish fine restaurant, there was a very nice Chef, she did her best, but she wasn't in time to prepare how I wanted it to be prepared because she was alone and should do to everything from the carta.
Nice video really helped me I am a hotel management student in India and focusing in food and beverage services
Glad it helps! Best of luck!

Thanks you very much 😁
You are welcome Qwiki!
Thank you The waiters Academy. Powerful staff
Take care
I have been to many fine dining restaurants and there is never to many thank you. It’s manners.

The job i had was just at a vegetable shop but i had that when i was 13 years old I've got a lot of customer service skills up my sleeve already!
