I always add finely chopped onions and peppers and grated carrots,I started that 50 years ago to get extra veggies in my son's and still do today. 😊🤗
I also do the vegies. Its just something I prefer.
The grated carrot is a great idea (and not a bad way to get kids to eat their veggies!).
We Love meatloaf! Great idea with the cornbread mix!👍. Sometimes I add a roll of Jimmy Dean sausage also to my two pound of meat! Sometimes I add bacon to the top of my meatloaf, no matter how you make it, it’s always good.👍❤️

My husband is not a fan of cornbread, but I'm sure I can sneak this one past him! I just happen to have a box of Jiffy in my cupboard so I think it's going to be a meatloaf weekend. :)

I make 2 smaller meatloaves, 1 for dinner and 1 for sandwiches the next day. Plus they take half the time to bake. I mix Ketchup and A1 sauce for the glaze and put it on before putting in oven. It's so good. Use about 1/3 A1 to Ketchup ratio. I will try the Jiffy recipe. Love Cornbread.

I used the tool for breaking up ground beef to mix the meatloaf together. No need to glove up,! I loved this meatloaf!

I like adding Parmesan cheese like the block that you actually great into it. it makes for an amazing moist meatloaf
I love meat loaf and I love jiffy mix too. That looks like a great idea. I LOVE meatloaf. Especially meatloaf sandwiches with ketchup. I eat it cold. Lol so good.

I have a hack for you Connie, if you have a toaster oven, bring it to your patio or garage and bake things there outside your home, I have mine on my back porch it’s 100+ in so CA so I found a way! Good luck!

Will have to try this one! I usually add cup of stovetop stuffing, stuffing has onions, diced celery, shredded carrots, and handful of craisins,! I keep left over stuffing in 1 cup containers in freezer for this. Your recipe sounds great and will have to try! Love watching and hope you have a great week!

I've never had a bad meatloaf and never tried it with Jiffy mix! Can't wait to try this!
I made this and it was absolutely delicious! My husband doesn't like onion so I used a green bell pepper instead. I made half the recipe but ended up using the whole box of of muffin mix. I used an a sweeter mustard for the glaze part. It was one of the best meatloaves I ever made! Thanks for sharing!

This recipe sounds great. A variation is to use a box of stove-top stuffing, a can of cream soup of your choice, an egg, and just a touch of milk. Bake an top with topping of your choice at end of bake time.
Stove top sounds better! Not a fan of sweet cornbread and the idea of sweet meatloaf just doesn't sound appetizing. Thanks for the tip!

Jiffy Cornbread Mix, yummy! Catherine, that is a beautiful meatloaf!! Such different ingredients than I use, but so nice to make something different... My husband sometimes puts in some Italian sausage with the casings removed, of course! When I saw that beautiful plate 🍽 it was so appealing! And, those green beans :) ....If I did not have mac 'n cheese (yum), I love to serve with a large jar of cinnamon applesauce! We pour what we want onto our plates... If I had a block of some mild cheddar cheese, I would have cubed some cheese into the meatloaf... am not sure if that would work... I have used some Alpine Lace Swiss Cheese (any Swiss would work)... Just a thought... Cos, sometimes my cooking inspires "ideas"... Hahahaha...THANK YOU FOR ANOTHER TERRIFIC RECIPE CATHERINE!! ...I LOVE to hear you say "delicious"! ...😋

I made meatloaf before but never thought of putting corn muffin mix in place of bread crumbs or I use crackers I'll definitely have to try it this way. I have picky eaters at my house so this ought to be interesting. Hope you have a great day

Oh this looks great!! I learned my regular meat loaf from the mom of my bff in grad school! She takes a stack of saltines in a gallon zip bag and you have fun turning them into fine crumbs. I don't know why, but the taste and tenderness is amazing!!
One thing I love about this cornbread mix is the flavor it must give. However, I think I might do like the Italians do with their meatballs. They soak their bread in milk but they wring it out a bit before adding to the beef. I think I might add all my milks and egg to the cornbread mix to start with and dump it all into your meat mixing bowl. And once the cornbread mix is saturated, then I'll add it to the meat. Either way you shake it, it is going to be good. You tell Dad of the house that I loved me some meatloaf sandwiches -- cold ones, too!!
I do my meatloaf the same way you said. I use ritz crackers bc they are buttery and also just a little oatmeal. I know everyone has their own recipe for things but to me it's not meatloaf without onion and green peppers. I top it with ketchup and a tbsn of sugar to make a glaze. I also put lots of ketchup in the mixture. Dinner is served!
@@debbieworth7865 oh wow!! Ritz crackers sounds just wonderful as the binder that lightens-up the meatloaf! Ooh, it also makes me want to try Club crackers as well!! It is funny, I get into a certain habit, and always do it the same way. Now I want to experiment a little. 😊

I grew up on Jiffy cornbread mix I love it! Best cornbread ever I would never think to add in the meatloaf but my Lord I know that must be delicious. Can't go wrong with Jiffy
If you want a really moist meatloaf try this! Pour about 3/4 cup water around the meatloaf and cover with foil. Uncover for the last 10 minutes. Delicious!
