We make the corn casserole every holiday, but we also add sharp cheddar cheese to it. And it's so easy remember, you just need 1 of everything. 1 stick butter, 1 box jiffy, 1 can corn, 1 can cream corn, 1 cup cheese, 1 cup sour cream. 🤣
Add some chives or green onions or a small can of mild green chiliss. We make this alllll the time and every holiday and reunion so we change it up! So yummy
My families favorite way to make cornbread is as waffles and we serve chili over them. I'm going to try the first recipe for sure but they all look delicious

In case your viewers need a gluten-free cornbread mix, Krusteaz makes one, and I use it when I cook for family gatherings. The Jiffy mix does contain gluten. I love the way that you cut peppers with no waste. I use everything also. If I bought it then I will use a much as possible. On some channels they throw half the pepper away and when peeling onions they cut in so deep that half the onion is gone.😊
I came across your video today after I had already pulled the ingredients out of my pantry to make my Mom’s Mexican Corn Casserole. Recipe: 3 eggs, ⅓ cup vegetable oil, 2 cans creamed corn, 4 oz can chopped green chiles, 8 oz box Jiffy corn bread mix (small box), ¾-1 cup shredded cheddar cheese (for topping). Preheat oven to 350 degrees F. Beat the eggs in a mixing bowl, then stir in remaining ingredients except cheese. Pour into a greased casserole dish, then top with cheese. Bake for 45-60 minutes at 350 degrees. Note: I add about ¼ cup extra cheese which I stir into the batter. Sometimes I also toss in a few jalapeño slices. Funny story: Once I mistook a box of the small Jiffy cake mixes for a box of the corn muffin mix, and didn’t realize what I had done until it was in the oven. I was going to toss it out and make a new one. I did make a 2nd one with the corn muffin mix, but husband and son insisted on trying the one with the cake mix. To our surprise, it was good! But, now, I no longer store the cake mixes and the corn muffin mixes together on my pantry shelf. 🤣 Your recipes sound delicious, and I will give them a try. Side note…We/re having sloppy joes with the corn casserole tonight. Next time, I’ll try your version! Thanks for the recipes! ❤️
This has always been on the menu for Thanksgiving my grandma called it corn pudding and made it from scratch. When I tasted my first Jiffy Cornbread it tasted just like hers and I had a stash in the cupboard always. I now have to use gluten-free Krusteaz but it does taste great. Can't wait to try these! Hi Mandy, I love All 3 of your cornbread recipes!! Can't wait to try them, especially the sloppy joe!! I have an easy cornbread recipe for a snack or on the run breakfast with a cup of coffee or tea. Use a large muffin tin,grease the individual sections or use muffin papers. Mix Jiffy mix according to pkg. ( I use 2 Pkgs. for Lg. .muffins) Tnen I pour batter half way in each section,put a tsp.of grape jelly on top & cover each with the rest of the batter. Follow baking instructions(on the pkg.) &bake until golden brown. Enjoy!!! Suzy Q.

I have been making a variation of the third recipe for years (decades?), but my version uses the liquid in the whole kernel corn. It's very soft, and my aunt, who gave me the recipe calls it corn pudding. I made it Sunday night, and I think I made the best variation yet. I preheated the oven with my cast iron skillet in it, and then I melted and browned the butter in the oven before pouring it into the mix. The edges were crispy and the browned butter flavor made it so good!
I heard Mandy mentioned me in an Instagram story, unfortunately I didn't get to see it, and its not on there anymore, and I follow her on there as well. We often make 'fiesta' cornbread and add in some sauted finely chopped red and orange bell peppers, and onions, plus sweet corn and a small can of diced green chiles to 2-3 boxes of mix. Great with a bowl of chili or crumbled under taco meat and fixins!
I made a cornbread casserole last night. Instead of sour cream, I put in1 egg and a 1/4 teaspoon each of garlic powder and paprika. Bake at 400 for 25-30 minutes. Really good.
Hey Mandy :) My favorite jiffy recipe is tamale pie. I believe you can find a recipe on here by delish! You'll need one small box jiffy, one egg, one can creamed corn, one cup sour cream. Mix together and put in a 400 degree oven for 20 minutes. While this is cooking, make your favorite taco meat. Once the jiffy mix is done, take it out and poke holes in it. Pour a can of enchilada sauce over the top(I usually don't use the whole thing.) Top that with your taco meat and a good helping of shredded cheese. Bake for another 20 minutes. Yummmyyy! 😋

I grew up in Northern WI in a very ethnic community. My neighbor was an old "Grandma" from Norway. Mom would always ask her what she needed from the store. She would always say "pick me up a Yiffy Mix". Jiffy has always been good. Mom would make a Jiffy cake with 2 mixes, then top the cold cake with vanilla pudding, and put Cool Whip on the top( Dream Mix whipped topping when I was young) for my favorite birthday cake. Mama is still here. She's 91 and lives with me.
I made a casserole today. It had ground meat w/onions, no canned tomatoes so used catsup w/Italian seasoning, shredded Swiss cheese ( Gracie would love me), California veggies, & tater tots. Ummm so good.

Thank you! Love this reminder of how good cornbread is to make at home during the colder weather! This is a good thing to do with leftover red chili made with chili beans and most of the ingredients you used for your sloppy Joe's (except garlic). I put the shredded cheese on top of the chili before I pour my cornbread over the whole thing, a basic cornbread recipe, but as it bakes, it raises up about 2"higher so it looks like a pan of cornbread (with a delicious surprise of chilie underneath the topping). This is such a fun channel, Mindy! 🥰
We make a chili pie similar to this. Just basically add chili seasoning or powder to the meat and tomato sauce then can add some pinto beans and I layer that in a pan, spread frozen corn over it then little grated cheese. I add a touch of sugar or honey to cornbread batter and spread over all. Bake until almost done and sprinkle shredded cheese on top if you want. Return to oven to finish baking until cornbread is done but not over done. I often use two boxes of jiffy cornbread mix so have extra.
I love the last one. Been making a version of it for 20 or more years. My recipe doesn't have the regular corn and uses just a teaspoon or so of sugar. I'll be trying the sloppy joe recipe. Looks good.
LOVE LOVE LOVE the last cornbread casserole recipe!! I was introduced to this recipe by my [then] husband, it was a family favorite!! The version he shared with me has a few more ingredients or variations but either way it is a DELICIOUS addition to any meal where cornbread goes well. We have included small diced slightly sauteed yellow onion, small diced bell peppers of all colors; as well as, either diving up jalapenos or using the kernel corn that includes chili peppers. WOW!!!!!!! That first recipe is truly simple! I can definitely make that!!! The third recipe, the corn bread casserole I make at least once a year. I’ve experimented with making it sweeter by adding 1/4 cup of granulated sugar and also a spicy jalapeño version using a cup of jalapeños and 1 cup of cheese. Thank you for those 2 other recipes though! Would have never thought to add broccoli! ❤M

Laine Ruscelle, if your change of recipe (Jiffy) was allergy, the white corn has not been G-M-Oed so may be the perfect alternative in your cooking.

Mom would make a Jiffy cake with 2 mixes, then top the cold cake with vanilla pudding, and put Cool Whip on the top( Dream Mix whipped topping when I was young) for my favorite birthday cake. Mama is still here. She's 91 and lives with me.
If you want to amp up the corn casserole, add shredded cheddar cheese. I add 1 cup to the mixture and a cup on top. It really ups the recipe.

I made a casserole today. It had ground meat w/onions, no canned tomatoes so used catsup w/Italian seasoning, shredded Swiss cheese ( Gracie would love me), California veggies, & tater tots. Ummm so good.

I make the corn casserole every year for holiday dinners! I also add cheese to the top a few minutes before taking out of the oven! So delicious!

Thank you! Love this reminder of how good cornbread is to make at home during the colder weather! This is a good thing to do with leftover red chili made with chili beans and most of the ingredients you used for your sloppy Joe's (except garlic). I put the shredded cheese on top of the chili before I pour my cornbread over the whole thing, a basic cornbread recipe, but as it bakes, it raises up about 2"higher so it looks like a pan of cornbread (with a delicious surprise of chilie underneath the topping). This is such a fun channel, Mindy! 🥰
I love cornbread. I like to add 1 tbsp flour, 1/2 cup sour cream and 1 tbsp honey to my cornbread batter. It’s so good!!!

We make a chili pie similar to this. Just basically add chili seasoning or powder to the meat and tomato sauce then can add some pinto beans and I layer that in a pan, spread frozen corn over it then little grated cheese. I add a touch of sugar or honey to cornbread batter and spread over all. Bake until almost done and sprinkle shredded cheese on top if you want. Return to oven to finish baking until cornbread is done but not over done. I often use two boxes of jiffy cornbread mix so have extra.
I love the last one. Been making a version of it for 20 or more years. My recipe doesn't have the regular corn and uses just a teaspoon or so of sugar. I'll be trying the sloppy joe recipe. Looks good.

LOVE LOVE LOVE the last cornbread casserole recipe!! I was introduced to this recipe by my [then] husband, it was a family favorite!! The version he shared with me has a few more ingredients or variations but either way it is a DELICIOUS addition to any meal where cornbread goes well. We have included small diced slightly sauteed yellow onion, small diced bell peppers of all colors; as well as, either diving up jalapenos or using the kernel corn that includes chili peppers. SOOOOOOOOOOO good!!! Thank you for sharing the recipes, cannot wait to try them!💜🤗

WOW!!!!!!! That first recipe is truly simple! I can definitely make that!!! The third recipe, the corn bread casserole I make at least once a year. I’ve experimented with making it sweeter by adding 1/4 cup of granulated sugar and also a spicy jalapeño version using a cup of jalapeños and 1 cup of cheese. Thank you for those 2 other recipes though! Would have never thought to add broccoli! ❤M

The corn bread with the cream and whole corn...I always add about 3/4 cup of chopped onion. It makes it so yummy. I'll try your seasoning too.
