As a Singaporean, its great to see a cooking video on this local classic. Usually we eat this with garlic Chili sauce and/or dark soy sauce, but you can’t go wrong with just the base dish alone.

I like when you make different meals from different cultures and put your little twist on them. To me it shows how you have respect for the group of people that enjoys that type of food daily and your own little twist shows that recipes are not set in store and cooking does not have to be an exact science but it can be a fun experiment. I made this tonight in my oven as I don’t have a rice cooker.
I cut up a whole small chicken (1kg & bones in) and covered my baking tin tightly with foil for 50 mins at 175° fan forced oven. Then removed foil for the last 25 mins approx. the chicken pieces got a little golden & the tips of the rice on the sides of the tin got a nice colour & texture, in a good way. ( I just cooked until rice had absorbed the liquid & tested chicken was cooked through. Chicken was nice & moist & tender) Will make again. Thanks for the recipe 😊
I'm assuming you cooked the rice and chicken together. I don't have a rice cooker - chicken is layered on top of the rice water? Then cook for about 20/25+ minutes? Thanks!

Now that we crossed some cultural borders, let me remind y'all Westerners again that chicken skin doesn't need to be crispy to be good and so-called "soggy" un-crispy unrendered skin doesn't mean that it's bad, it's a different feel that's good in its own way, having said that some styles of chicken rice result in springier skin and that adds a nice texture

Tried this last night for dinner after watching. Didn’t have the fresh garlic or ginger… just jarred stuff. Still came out really good. Even in a crappy rice cooker. Still works. It’s legit!

i've known about this dish for several years, and i know the blonde looking rubbery skin is part of what makes it authentic... over time i've developed a similar method of making this in a rice cooker, but i do 'brown' the skin side before placing in the rice cooker and to me it's just better that way. i also put garlic in the hot oil sauce and finish with chopped cilantro on the dish right before serving. it's such an easy and wonderful dish... plus my children LOVE it!

Looks absolutely amazing. You should do a roasted chicken with lebanese garlic dip called Toum. Its insane.

Guys, Sam is not kidding about this stuff being absolutely amaze-balls. Made this for dinner last night and it was fantastic! I did add some red pepper flakes to the sauce, because pepper belly, oh, and try browning the thighs before you put them in with the rice. It adds a little something extra. This one's going into heavy rotation in my kitchen! ^_^ Thank you, Sam! ^_^

I remember seeing Anthony Bourdain order that dish in the food courts in Singapore. Great to see you share this recipe and I look forward to trying it. As an owner of two Zojirushi rice cookers, the more I can use them the better. Love what you do.

Although I can’t help be a little skeptical about boiled chicken skin, I really want to try this! By the way, I have seen over the years a lot of chicken parts being reserved to go in the “bag” in the freezer to make chicken stock. I’m betting that bag is mighty full right about now. Don’t cha think it’s about time to show us how you do chicken stock? Just sayin’.
I thought the same. I'd put that chicken in the pan in the end to give the skin some crispness....

I’ve been making this the same way for a while. With the bones from the chicken, boil them up with water, garlic and ginger and make a side of broth that goes with it. A game changer.. It also needs a garlic chilli sauce with soy with a touch of sesame oil. My favourite!

Lived 30 years ago for four years in Singapore. And I agree, the favorite ones are Chicken Rice, Chili Crab, both India and Malaysia curries and many more, all at neighborhood food-court stalls.

This is so awesome! Pro tip for those without a rice cooker, do it in a pan on the stove, get busy chasing your toddler around, burn the rice on the bottom of the pan just a little bit and mix it in with the properly cooked rice for some extra crunchy texture.

It’s so weird, I just made this last night (someone else’s recipe), in a pot though and most of the rice burnt, so there was only enough for my children. This is my favorite rice and chicken dish ever. Chicken adobo and rice a close second but Hainanese rice is so simple and sooo flavorful. It's soo hard to stop eating.

Just made this tonight. Loved the ginger and garlic. Will make this again, but make sure that I open the pressure cooker after 10 minutes. I let it sit for 20 and the rice was just a bit mushy. Thanks Sam!

made today using the rice setting on an instapot. worked great. the sauce makes this dish. I got a little confused because the website recipe mentions sesame oil, but the video he says you need only soy and salt. I added toasted sesame oil and soy and it was very tasty.
