Sam, a tip for canned enchilada sauce, that Las Palmas tastes good, but a bit like the can in came in, so look for El Pato canned enchilada sauce. Always found in Mexican markets and some big chain markets, made in LA. It has a bit more spice and the flavor is superb. Once you try it, you'll use nothing else. Absolutely love your channel!

Talking about the knife rocking back and forth to cut the meat, I was thinking you might try an Alaskan Ulu. They are an incredibly useful tool and rock back and forth really well. The best restaurant in my town in Alaska was a Mexican place called Mosey's (their dog) who made everything with fresh seafood. Green chili shrimp enchiladas to die for! Halibut mole burritos. Crab tamales. Would love to see you try something like that ❤ Anyway, thanks for what you do.
That is the best Enchorido recipe I have ever seen. You’re defensiveness about corn tortillas is because you know it’s not the right way. Take a corn tortilla, heat it on a cast iron skillet until it’s flexible enough, then do everything exactly the same. That’s what I’m gonna do, because the recipe is fantastic otherwise, but it’s San Diego, be legit.

Make your own as I do. If you care to do this this is my mother's recipe. I don't weigh out my ingredients however. 3 Tablespoons of bacon fat or oil. 3 Tablespoons of flour. Make a very dark rue, think dark brown. Remove from heat and add 1 teaspoon salt 2 beef bullion cubes 1/2 teaspoon garlic powder 1/2 teaspoon ground cumin 2 Tablespoons red chili powder Return to heat. Slowly add 1.5 - 2 cups boiling water, mixing well, until smooth and thickened.

These are most definitely enchiladas. traditionally made with corn yes but to be pedantic about something like that is ridiculous. Try them. Love them. OMG you are so right about thickening the echilada sauce! Makes a ton of difference! I even dunk my whole tortilla in the sauce and then stuff it. Holy crap what a mess but deliciousness out the ying yang! Only thing is you said you were going to address the onions and beef and I don't think you ever really spoke to them after that. If you are ever in the Phoenix area, there is a place called Gadzooks. They do enchiladas in a style similar to chipotle and they are FANTASTIC! I love the shortrib and the spicy cornbread. They make their own corn and 50/50 blend tortillas. They have all sorts of proteins, sauces, and other fixings. You definitely should give it a try!

Made this for the family tonight, first time they tried enchiladas. Absolutely FLOORED them! I cut the green chile to half a can and did 1.5 pounds of brisket. Used monterey jack on the kids side, pepper jack on ours. Awesome recipe!

@@forbin1185 the canned enchilada sauce has a lot of salt... we are trying to reduce our salt cuz so much high blood pressure here
