    Ingredients
    oil for greasing pan
    4 large bell peppers (any color)
    1 tablespoon olive oil
    1/2 medium onion, diced
    1 medium tomato, diced
    salt
    1 1/4 cup corn kernels (fresh or frozen)
    1 medium zucchini, diced
    1 15-ounce can of black beans, drained and rinsed
    1 1/2 cups cooked brown rice
    1 tsp chili powder
    1 tsp ground cumin
    1 cup shredded pepper jack cheese
    Optional Toppings
    cilantro leaves, torn
    1/2 small avocado, sliced thinly
    lime juice (optional)
    Instructions
    Preheat the oven to 400ºF. Lightly grease a 9×13-inch casserole pan (or large cast iron skillet) with oil.
    Slice peppers in half and remove the seeds. Check to make sure all the pepper halves fit into your baking pans. Set aside.
    Heat olive oil in a sauté pan over medium heat. Add onions and cook for 1 to 2 minutes. Add diced tomatoes and a generous pinch of salt and cook for 2 minutes.
    Mix in the corn and zucchini and cook for another 2 minutes. Stir in beans, rice, chili powder and cumin. Turn off heat and mix in shredded cheese.
    Stuff each half of a pepper with the beans and rice mixture. Place them in the prepared casserole pan.
    Cover with foil and bake for 30 minutes.
    Uncover foil, and let peppers cool for a few minutes before serving. Top peppers with cilantro, avocado slices, and a squeeze of lime juice, if you like.

    Great idea and they look delicious..I love all the ingredients you used so I'm sure the final product would be great. You could use the. left over stuffing for quesadillas or nacho topping. Endless possibilities. Good to see you enjoying the kitchen you worked so hard to create.

      Hating Halloween is un American. It's a beloved fun holiday. We had so much fun wearing costumes to school long ago.
      Then some right wing Republican religious nutcases started saying it was satanic and it would turn our children into devil worshipers. How stupid is that? If anyone thinks Halloween characters are real they are the ones who need help. Oh yes and the Easter Bunny is real and will turn out kids into Rabbit's. And Santa can land a sled on a roof and get down a narrow chimney. Why do so many people today have the IQ of 50? It's just FUN. I guess the religious nutcases are all about how God is mean and punishing. Nope, Jesus had some fun while on earth and he was about love. Love thy neighbor, not hate thy neighbor and be miserable. So many religious people today will be surprised when they wake up in hell because they were nasty, mean people in life.

    Drain the diced tomatoes into the measuring cup for rice water, top off with water (or broth!)

    Down south we would add sausage,rice,chicken,onions,garlic,and sometimes potatoes,and we cook the rice in beef stock. Dang i am making myself hungry...lol... And most definitely cheese.

    I side hustled in the late 80's and early 90's by recovering OAK pallets free from a Walgreens distribution center and converting them to patio furniture and firewood with an old Montgomery Ward's table saw that I got from a junk yard. Always on the hunt...... Love the optional ingredients

    I blanche my peppers in boiling water for about 3 minutes to soften it before baking. Good recipe, thank you for sharing! And the kitchen is just gorgeous!!

    I LOVE stuffed bell peppers and I haven't had them in years. (My household doesn't like them). Cool recipe. I have to say ... sometimes you're such a nut. Jack-o-lantern bell peppers. Who'd a thunk. Very cute.

    Those are cute! I just use cold small squares of cheese and add it to the mix just before stuffing. It melts while it's in the oven.

    When we make stuffed peppers, we use either hamburger or bulk sausage mixed with dry Minute Rice (it cooks during the baking), chopped mushrooms, chopped onions, minced garlic, smoked paprika, an egg or two and enough V8 to make the filling pretty sloppy. We fill the peppers, and if we run out of peppers, we use the rest of the filling to stuff cabbage leaves. We place all the peppers and cabbage rolls (if applicable) into a roasting pan. Then we add some flour and seasonings to the rest of the bottle of V8 (we usually use the low sodium kind), and pour that over the peppers and cabbage rolls. We bake it covered on 350°F till the peppers test done. Then we drain off the V8 mixture and thicken it more if necessary, and serve the peppers and cabbage rolls with the resultant red gravy. We ALSO occasionally stuff OTHER things like onions, squash, or tomatoes too.

    So funny, I just made four stuffed peppers today! I use ground chuck, a spaghetti sauce, rice, garlic pepper, onion powder, Italian spice and sugar. You can parboil your peppers for less time cooking. I actually freeze them for future meals. I put saran wrap and quick freeze and then seal them with my food saver. I do the same for my spaghetti sauce and meat loafs. Qick easy meals made ahead. Enjoyed your recipe.

    I LOVE your faces on them!! We are stuff peppered out though. Had a bumper crop this year. I've got enough frozen for two years. I even canned some. (Rebel canning) Try you some Asian inspired stuffed peppers. Super yummy twist on stuffed peppers. Also, I miss Jaimie*.

    I would have poured the tomato juice in the bottom to help steam the peppers a little and saved a handful of cheese for the very end and melted it on top

    That's cool you are doing some cooking again on the channel. I really miss the canning and farm aspect of it but I guess I'll take what I can get. How about the dirt vids? No more of those lately. I hope Jaime and the girls are doing well.

    I make stuffed bell peppers a lot. I used 1 lb ground beef, 1- 1 1/2 cups rice, 1 qt or 2 store bought cans of tomatoes, about 3/4 cup diced onion, 3/4 cup diced bell pepper (or just what is cut off the tops when you core them if you prefer), salt and pepper to taste. I roast my peppers first to get them tender and sweet, but not so cooked they wont stand on their own. While those are roasting I make my rice, but dont cook it fully tender either, set it aside. In brown the ground beef, then drain it. Add to the beef the tomatoes, peppers, onions salt and pepper and simmer for 10 to 15 minutes to marry the flavor. Mix the rice in with the beef mixture and stir. It should be loose and almost wet. Remove the roasted peppers and stuff them with the beef and rice mixture, any additional fill can be put in the casserole pan around the now stuffed peppers for support and just because its tasty. Cover with foil and roast another 15 mins or so. Then remove the foil, cover with shredded cheese and roast another 10 to 15 mins. Note if the rice mixture isnt wet enough before stuffing the peppers, once stuffed add water, broth or tomato juice to moisten to finish cooking the rice in the oven.
