    Recipe: Barbecue Bologna (also known as Mississippi flat steak)
    5 lb. chub of bologna cut at a slant both ways
    (X cuts) about 1/4 inch deep. (see video)
    Make a brine:
    In 1 tbsp. bacon grease sauté:
    1/2 cup red onion
    2 Tbsp brown sugar
    1 tbsp. minced ginger
    1 tbsp. minced garlic
    1 tbsp. apple cider vinegar
    1/2 cup Hunts Ketchup
    1 tsp. thyme
    1/2 bottle beer
    1/2 tsp salt
    1 tsp pepper
    Simmer for 5 minutes and then pour mixture into
    a loaf pan and place the sliced bologna into the brine.
    Place it in the refrigerator for 24 hours turning it a 1/4 turn
    every few hours. Smoke on the smoker for 90 minutes
    at 250 degrees.
    Slice it 1/4-inch-thick or a bit thicker and sear the slices
    back on the grill for 2 to 3 minutes a side and brushed
    with the rest of the brine or your favorite barbecue sauce.
    Put it on a toasted bun and top it with coleslaw!
    It can also be cubed into 1 inch squares and served
    with toothpicks as an appetizer.

    Take a piece of 2 inch pvc and poke a hole in the chub. Push out the bologna inside the pvc out and marinate the plug and the chub with the hole keeping it filled with marinate. When ready to cook, put the plug back in then cook/bbq/ smoke as usual.
    Really puts the flavor into the chub and gives it a cool look. I was raised by a pack of wild Okies and bologna beats t-bone. Ever in Tulsa look up Billy Ray's BBQ. They have THE BEST bbq bologna.

      Brother I hear you Loud and Clear!! I'm from Tulsa myself. Been around the world and whenever. I got a chance I'd THROW DOWN on food that'd have folks DROOLING! Secret is have the fire going with out rushing it. I'd use that time for preparing everything Else! Any one who "Wants to Help". Have them ice down beer, slice onion, tomatos,lettuce,tend bar,ETC... Because when it's SHOWTIME that meat comes FLYING off the fire Quick!!

      My buddy was from WV used to have me over for West Virginia round steak. Had no idea the first time we ate it that it was bologna till he told me bc he had made his mom’s own recipe. Don’t know too many people making their own bologna but it was fabulous.

    I just made this and WOW !!!
    When I basted it for the last time, I sprinkled on some Stubb's B-B-Q All Natural Spice Rub.

    That's a grease can. I haven't seen one of them since the 70s.
    As a Memphian, some of the BBQ restaurants smoke the bologna and then cover it up sauce; others fry the bologna ( it must be a thick slice ) and then cover it in sauce. It also taste good without the sauce. In the Southeast, bologna is known as Tennessee Round Steak.

    At a.Wal-Mart in OKC. I got some thin sliced Wunderbar bologna. About 6" across. Plus some 1/8"thick provolone cheese. In a shallow dish add worshestershire. And Stubbs Hickory liquid Smoke. About 4 or 5 drops. Paint each slice, put it in the fridge. Forget it for a while. Let it marinade. When you're ready to assemble supper, heat up a skillet. Have the bread,sliced tomato,onion ,what ever you want READY.Now,.the fun part! If you want bar b Que sauce, have it ready. Take the meat HOT OFF THE FIRE and assemble.!😄🍺🎶🎸

    I remember going to Kroger and getting Cumberland brand chub of bologna, it was the best. Make a thick fried bologna sandwich but in the sandwich-party maker. It was like a grill and it made 4 pockets like little egg rolls out of a sandwich, you would make two sandwiches at a time in this grill. Too bad they don't make those anymore, it was so good when you were a kid. Plus it made white bread special.

    Many years ago, I was in Memphis. We played two different shows. I played mostly where there were black folks. Anyway, after the show, we went to eat some BBQ. It turns out it was BBQ Baloney. It was the best thing that I have ever eaten in my life. On the side was lemonade. It was so delicious. I never have forgotten that. They had a name for it and for all the money in the world, I cannot remember what they called it.

I had to laugh, remember when you were smoking things and had this flash light and you made the joke about it flashing and keeping away burglars.     Went to work a few years back up in northern British Columbia. In a place called Bella Coola, real close to Alaska. Working in the butcher shop of the local grocery store. We had bologna on sale, and when it arrived there was cases and cases of it. Couldn't believe the folks in one small town could possibly eat that much bologna, turns out they love it. 5 lb. chubs 2 to a case just being snapped up as fast as we could put it out. They call it Bella Coola round steak, and they like it b.b.q'd nothin fancy just cut it in thick slices and b.b.q. with just off the shelf b.b.q. sauce serve with corn on the cob. It was really quiet good. This looks amazing, got to try it. Trouble is most folks around here would probably turn their noses up at it. There loss.

    I lived in Chicago there was a company there that made veal sausage it was like a bologna chub size my mom would fry it in butter and onions it was fantastic I'm now living in east tennessee I have made smoked bologna and love it I wish I could find the veal sausage down here I talked to a boars head rep he said he never heard of it I'm going to try your recipe I'm sure it will be good or better than other smoked bologna recipes

      You can use chicken broth, ginger ale, white grape juice, or white wine if your recipe calls for a light beer. Use beef broth, chicken broth, mushroom stock, apple juice, apple cider, root beer, or coke instead of dark beer

      NO if it doesn't have the alcohol the bologna will not absorb the brine. Also you must drink the other half of the beer if not your bologna will never finish cooking.

      Steve passed away Dec 2018. I think he did later after filming the show.
