As a Hillbilly from Washington St. (We have more hills than you would think.) and a Grandpa born in Kentucky (along with lots of other relatives,) I think Bologna is too good to serve to company. Well maybe I want it all to myself. The rich can have their Fish Eggs which God made so we cold go fish'in. Thanks for the receipe. I'll give it a try.
As a precaution making sliders with texas toast garlic bread will make you run for the porcelin as they do indeed slide right out of ya if you eat too many of them things.
My dad was from Texas and he would have my mom buy bologna in a huge log. His favorite meal was an inch thick slice between 2 pieces of white sandwich bread and a gallon of milk.
I wouldn't do this with Bologna because I don't like it. But you could use any sliced meats. A Chicken Cordon Bleu version, or a Philly Cheese Steak. Yummmmm! :)

Was very good! I did use I did use stone ground mustard instead of spicy mustard
Mayo mustard combo is the absolute best!!!
Yes it is! It tones down the flavors and blends well.

Texas Toast is just very thick bread slices. Usually double the thickness of regular bread.
