    RECIPE:
    Butter Burger! (Solly's Grille Milwaukee Wisconsin)
    In a medium sauce pan put 3 tbsp. olive oil, 1 full stick of
    salted butter, 1/8 cup white wine, 1/4 tsp. black pepper,
    and once it starts to melt, add 2 diced sweet onions.
    Bring to a simmer and ad 1/3 cup of chicken broth.
    Simmer for 20 to 25 minutes on low/medium heat stirring
    every 5 minutes until soft. Drain the onions and set aside.
    Now spread a little butter on your hamburger buns and grill
    them up golden brown and set aside to cool a bit.
    Then cook 1/4 lb. "thin hamburgers" that are slightly bigger than
    the buns until they are almost done. Spoon on the onions and let simmer for 1 minute... then add a slice of American cheese and cover with a lid and about a tbsp. of water and let them steam
    for 30 seconds... or until the cheese is melted.
    Put the burgers on the bottom 1/2 of the buns and spread a "thick" amount of butter on the top 1/2 of the bun and place it on top the burger. Slice the burger in half right away before the butter really
    starts melting!

      Let me answer my own question - Steve Hall. Passed away in 2018. I am very sorry. I just arrived, and heck, it is a nice (small) consolation that he left all these warm, pleasant videos as his legacy.

      Did Shotgun Red pass away? If so, that is very bad news because he was an excellent cook and a great video maker and entertainer. I've enjoyed watching him for quite some time now and It just sucks to that bad things happen to good people.

    When I was a Trucker I would plan my routes around food.
    I would always try to get loads that went to Wisconsin, New Orleans, and Texas.

      i WAS also a driver and I did the same thing! It would be fun to compare spots.
      All those great places i see on Dinners-DriveIns and dives--god how I wish we could have parked at them.Every town had great mom and pop kind of places but alas no parking. remember brown paper sacks of shrimp and crayfish in LA. brisket by the pound in TX, tamales N.M. and AZ etc etc

      My little place is quite rural but it serves as a straight pass from east to west in Central, NH. Went Trucker friendly and it was a great decision. We only have a handful of trucks at any given time but it has proven good for business and the community. I've learned that after a long drive any meal is welcome and appreciated..... you serve someone something that is actually delicious and affordable you'll make friends for life.
      And out of the few thousand that come through we have encountered maybe 2 or 3 wierdos. You find five times that at the local Walmart all day every day. Truckers.... good hard working people.

    We are from British Columbia and last summer we travelled fairly extensively around northern Wisconsin and kept seeing restaurants advertising "butter burgers". We didn't get a chance to stop at a restaurant due to traveling with our dog and so missed out trying one, however now we can make our own! Thanks!

    If my Mom (born in Milwaukee) was alive today, she would be 97. She started going to Solly's Grille at age 14 (opened in 1936), and when our family and extended family visited Milwaukee our first go to was Solly's Grille. This has turned out to be a family favorite including my Mom's grandchildren and great-grandchildren. Solly's is a must if you visit or are driving through Milwaukee. Next family favorite In'Out Buger in CA.

    Wife showed me a trick to making burger patties like this using a lid from a peanut butter jar wrapped in saran wrap. Grab a ball of meat and press into the lid then just flip it over and shake a little. Falls right out, with perfect edges and even thickness.

    A quote from a chef's recipe, "Time to Baste, the key to next-level steak flavor is butter (the answer to every question is always butter). spooning melted unsalted butter, thyme, rosemary, and garlic over the meat for about 30 seconds ensures a richer flavor and more sophisticated crust as the butter mixture and steak juices mingle".... It's starting to make sense.

    Just caught the title of this video on the sidebar as I was watching something else. I grew up in Whitefish Bay and Solly's was my Mom's, who was a fabulous "from scratch" baker and cook, favorite place to eat. We always had to go there when we went home. They are truly the best burgers. After she passed, we rented the restaurant on a Sunday night and had a wake for her with all of her friends from the area. And I just happen to have the Packer grille flipper from the video that was a present from my wife's daughter and son-in-law. Then to top it all off, I moved to Nashville 20 years ago so have that in common with Shotgun Red and love to ride Harleys. Sorry to read of his passing. It is truly a small world....

    I'm really glad you turned the comments on, Sheila. I found your and Steve's videos early last year and even though I don't know you personally, I was devastated by Steve's passing. He was one of a kind and a genuine soul. I love your new videos but still take comfort in the fact that I can still watch Steve. Take care.

    The originator of the butter burger in Milwaukee was the Dutchland Dairy Store back in 1938. Dutchland had the best Custard, Chicken and Sundaes and was in business until 1980. Culvers now follow Dutchland's model.

    SUPPORT YOUR FAVORITE RESTAURANTS - order a Butter Burger Kit.
    Kenneth "Solly" Salmon had his cooks put the buns in an extra wide toaster set to a very light brown, today it would be a Bagel Toaster. And sear the meat on a really hot grill, they would not touch it until burger would begin to split the flat patty in the middle. Then they'd use a scraper to scrape all the good stuff right down to the grill. Cook for maybe 20-30 seconds on the back side, place it on the bun with about 2 T's of soft butter. It would be served immediately, that's why they only had counter seating. Your first bight was the best before the butter was fully melted. MMMMM......Goooood
    Been eating these since 1962.

    In my home town we have a fair every summer that has this really popular hot dog stand. Their big draw are the mountains of onions they are frying on all sides of the kiosk. Their trick to give the onions a sweet tang is to periodically pour orange soda on. Anyone can do it and it tastes great. I've also tried maple syrup and a very cautious amount of wine vinegar or apple cider vinegar.

      I love a great cheddar, but I used to live a couple of miles from Sollys, the butter burgers are amazing, and they use processed cheese.

      This is absolutely the perfect cheese to use on hamburgers. Ask most chefs what cheese should go on a cheeseburger and most will answer Kraft slices.

    Kroll's East hamburgers in Green Bay, WI have been serving butter burgers since 1935, hey it's WI...dairy. I haven't had one since the 80's, but it was pretty good back in those day's.

    OMG...Shotgun is gone?💔.....can't believe it....I have just been watching and loving all the recipes these last few months not knowing he is no longer with us...this is so sad....I am so sorry for your loss.....Please keep the videos running he is always so happy and makes cooking so easy....I have fed my family on many recipes from Shotgun....and we just love Miss Sheila.....GOD bless❤

    We have butter burgers at Culver's, here in Wisconsin and also in upper Illinois. Super good, and this recipe is terrific! I never knew how to make them, so now....ready to go! :-)
    Better idea for making round, flat burgers: Go to a thrift store and look for those cookie tins. They have lots, usually, from Christmas, popcorn, cookies and whatnot. I make burgers with either 2-1/2 oz or 4 oz (weighed on a kitchen scale). So I bought two different sizes, based on eyeball view -- one a bit smaller. The important thing is to make sure the inside of the lid is flat! And that there's no imprinted, embossed "something" on that lid. Sometimes the lid is bowed a little, like a super shallow bowl. Don't buy that! Flat metal, flat lid, no weird bumps.
    When I found the right sizes for our buns, based on weights, I used a Sharpie, marked the numbers on the inside of the lid, and threw away the can. If I'm making a typical diner-type burger -- very thin, fast cook -- I use the smaller 2.5 oz lid. Lay a piece of plastic wrap in there, as a "remover lift," somewhat smoosh the burger ball into like a flying saucer, then just use your fingers and palm to make it a) flat, and b) get to the outer lid edge. You'll see how high an edge you prefer. If you don't like the first purchase, just keep an eye out and buy the right lid next time.
    When you've got the burger right, lift it out of the lid with the plastic wrap. I usually cut some wax paper squares and lay one on top of the burger in the lid, then pull up the plastic and flip the burger onto the wax paper. You can use the same plastic repeatedly. When you're done, you just toss the plastic, and there's no need, really, to wash the lid. You can if you're a germophobe -- up to you. Perfect, flat, round burgers, weighed exactly, with no extra cut off the edges from the bowl. The lids go in a little sandwich bag, ready for the next burger night.

    He just brought back me home! I am from Madison and I eat butter on everything! I live in South Carolina now and there thing is Dukes Mayonnaise. I still eat butter on my hot dogs buns, PB & J, everything! Thanks for bringing the awesomeness of my beautiful hometown! Go Packers! I will always will be a Wisconsinite, Badger and a Packer fan. I fell in love with the Vikings when Brett Farve played for them.

    After you put paper above and below the burger. Use a pizza pan and push down and it makes it as thick as you like it. Works great to. That’s how I do them now. If you like thin burgers it’s great because you can get them very thin. I usually take 70 grams of burger mash it down to the size of a MacDonalds burger. (Or thinner) Then add 2-3 patties per burger. You can put onion, cheese, or whatever between layers.

    I'm a vegetarian for religious reasons, but I come back to watch Red every now and again because I love his energy (I actually can eat meat but only if it was hunted, not trapped or raised on a ranch, I just don't happen to know anyone who hunts in the big city where I live). I also cook professionally which means I need an arsenal of recipes for meat eaters so there's that too. Thanks for everything you do!
