I believe I had one of those burgers in Milwaukee back in the day, i.e. 1964. Never forgot how good it was and never have had one since that was as good. Hopefully, I will get back there somebody to enjoy another one. Wisconsin has great food. My family had a cottage on Shawano Lake years ago. Many fond memories.
I just reproduced the Solle's butter burger for my family. I tripled your recipe for the stewed onions and found that it was enough to dress 10, 1/3 lb burgers. Also, beer poured straight from the bottle is a very convenient and effective way to steam the cheese.
I live in an apartment in China so i am just watching your burger videos as i can't bbq at home. But when back to Cali i am gonna make and eat hamburger 3 times a day (at least). This will be one of my first burgers that i will make.
I live 15min from Solly's and it is one of my all time favorite burger joints. If you come to Milwaukee vist Solly's and AJ Bombers for two of the best burgers in the city.

We did have Heinemann's on Silver Spring out in the 'burbs which served a great butter burger (there was no other kind) in a plastic basket nested in crispy fries. I only had the Solly's hamburger when there. The butter melted right on top of the burger. Fantastic! Thanks for the memory.
Here in Michigan we finally got Culver's restaurants that specialize in butter burgers here in Oakland county. Well they are terrific for sure. I lived in Wisconsin for a year and therr the restaurants MUST offer butter on the restaurant counters...no imitation since they ARE the Dairy State.
I have been eating at sollys since 1955. The cheese berger with the onions and all that butter is still the same. Berger, fries, and the traditional chocolate malt from sollys you need to be there. It's an experience.

Oh my gosh me too! Back in my university days in WWU saga was our food service and my favs were the steak night on Friday and yes that butter! And I loved their lyonnaise potatoes for breakfast! Good memories.

Just ate this tonight and it was out of this world good. As you suggested i used chicken brother. I cooked the burger in a cast iron skillet on high rather than the grill and used 80/20 (ground chuck). Will definitely make this again. Thanks for the video

I’ve noticed a lot of the good burgers have onions I tried a burger just putting a lot of very thin caramelized onions with salt and it was honestly one of the best burgers I’ve had you can never go wrong with cooked onions on a burger
Very nice job by the way and I like the way you did it in very clear, concise manner. No Frills, no hype and just check this out and see what happens. I have passed this on to my brother and sister-in-law as an option when entertaining our friends. I think it would be fun to use the fundamentals here, do the Preps get the onions right as well as the burger and then let our guests add condiments as they wish. I got to believe those mini slider Burgers like White Castle cells, would be a big hit using this particular formula. Best of luck and thanks for the great Channel!
For the Wisconsin experience, do everything but substitute a steak sandwich patty and Sheboygan hard roll for the hamburger bun and burger patty, use a slice of real cheddar, and serve with a bottle of Spotted Cow. Otherwise, spot on
That would be a backyard Wisconsin experience. Solly’s, kopps, mazos, Culver’s, etc. is a whole other thing. Beer bath brats. Now THAT is classic backyard Wisconsin.
Another burger that is just as Wisconsin as the butterburger is a "Pete's" burger from Prairie du Chien- they've been in business now for over 100 years. And it's just a burger cooked on a bed of steamed onions. For beer- ya gotta have a New Glarus Spotted Cow.....but its' only sold in Wisconsin, lol.
I just made one and this burger is awesome! I used a buffalo burger and chicken broth in the stewed onions. I am going to eat many more of these. we don't think anything about eating mayo on our burgers so whats the difference? if you've ever eaten a fast food burger, large fry, movie popcorn, macaroni and cheese ect... you've eaten way worse. butter is not the enemy. I love this burger. thank you for sharing.
I am always curious as to why everyone is always stressing Unsalted Butter when the amount of salt in salted butter is so very very small it is almost nonexistent.
Only thing i can come up with is that maybe the salt affects the way the meat cooks as in texture or juiciness. But its true there isnt a whole lot of salt in salted butter. Maybe they use unsalted because it's healthier for you? Lol 🤪
In 1960 we would run to Solley's during high school lunch, chow down on a burger and shake and run back to school in time for next class. Never gained any weight because we ran it off when young. They have since moved but I will stop for a burger once a year as remembrance of high school days long ago.
"Line-in-coog-els" is the correct annunciation, but everyone gets Wisconsin names wrong, LOL! Solly's is a stop that has to be made if you're ever in Milwaukee! Nice video, sir.

Greg, You should check out Culvers Butter Burgers. They are a chain, and use a very similar process to your Smashburger technique which i love and use all the time. I picked up a ballistic griddle for my Weber Summit and the thing is amazing. I had 6 patties on it last weekend and then ran a bunch of red onions while the burgers rested. The local Whole Foods sells a patty that's a blend of Brisket, Short Ribs, and Ribeye and they are insane. I think it's available around the country and not just here in Colorado but it's my go to, with some butter lettuce, fresh tomato, red onion, mayo, and a nice mild cheddar on their Brioche bun. Love the channel!

I cooked this today. It was amazing. I made my wife very happy because she loves onions. After all the stewing and reduction, they just melted in your mouth. I guess I was a bit timid and didn't get as much outflow of butter as you did. I have leftover onions for tomorrow night and I'll adjust up. Thanks again. By using butter we are avoiding the perils of trans fatty acids!
Nice job. Good ol' fashioned Milwaukee style. Lots of dairy, no hot stuff, really simple seasoning. Looks like others have pointed out that Leinenkugel's is locally pronounced with an English long-i sound. But after a couple of liters, they're just called "Leinie's" (line-ease: slurred, not shaken).

I just came across your video. I allow myself one visit to Solly's per year - usually after my annual physical and cholesterol test. Not only are the burgers great, but their french fries are amazing, and they make the best vanilla malt I've ever had.
Brian Kaminski its common by chefs to put this much butter on. it will melt into burger to other side. last week I grilled out and I only put 1 tablespoon and it wasn't enough.

Wonderfull, I can see why this burger is a favorite for middle aged and older people. Very easy to chew and digest. cholesterol off the charts though. that's why you only eat on Sunday afternoon when you get old. lol I'm so trying this. this week.
I live in Arizona so the only butter burger I have ever had came from Culver's which I am sure doesn't compare to Solly's if they are actually the original creator of the "Butter Burger ". It must really suck to live in states where clearly no one knows what a patty melt even is. A patty melt has caramelized onions, not stewed onions. A patty melt comes on sliced rye bread, not a bun. A patty melt has an oblong-shaped patty to fit the rye bread. A patty melt uses swiss cheese, not american. A patty melt is topped with thousand island dressing. This is NOTHING like a patty melt at all. lol

Been to Solly's grill and had their butter burgers I owned the Aftersix newspaper and entertainment guide out of Green Bay,WI. I covered everything in Wisconsin as far as food and entertainment bars and music and musicians and I Love the food and people of Wisconsin you did a good job but I Know there is nothing like a real Solly's butter burger . Also , should mention I had Butter burgers from a bunch of places in Wisconsin and it is absolutely got to have butter dripping out of the Burger and bun without a doubt . Peace . WTF you've never had a Solly's butter burger oh man you have no clue then . Hope you have by now .

Cause people hear "butter" and think they're smart addressing it's fat and gross, yet they'll search a video on how to make a burger named "butter" burger. I just don't get it.
If said people are being absolutely rude in their display of ignorance, then yes, we can totally blame them for being Negative Nancies. Grass fed butter brands: Kerry Gold, Organic Valley, Anchor, etc. Kerry Gold is pretty much available everywhere, but it's not 100% organic. Costco carries it. I prefer Organic Valley Cultured Pasture Butter in the green wrapper. You can find it at Sprouts, Wholefoods, sometimes at Trader Joe's.
I used your recipe as a guide to my own Butter Burger, Yesterday, except I liberally added Maggi Seasoning, to the stewed onions. (I buy Maggi from Amazon.com) I thought it was perfect then, but today I added Steak Sauce, to the stewed onions, and reheated them. OMG! It is now ideal. The only other major change I made, from your recipe, is I used Vermont Butter, salted, and Cabot Vermont Sharp Cheddar Cheese. I was hoping to use Extra Sharp or Hunter, but they were sold out.
I grew up eating at Solly's. You nailed the clarified butter. Your butter looked a little thicker, and bigger, they are seriously the size of Mc Donalds Cheeseburger. Too many onions, (but necessary). You didn't use enough butter, it's at least 2 tablespoons per burger. Great job, preach the word! Sidenote: I once saw a woman eat 10 of them. If I eat two I need a nap.
Have had many many Solly burgers. You used too many onions and they place the butter on the burger top while It’s under a steam dome finishing cooking.

Great job. Your mouth was watering. Yes, I've been to Solly's many times too, and I have to agree with Mark Schnoll. At the restaurant, Solly's puts about 2Tbs onions on. And the burgers at Solly's are less than full size, almost like sliders. But I think yours beats theirs!

In 1960 we would run to Solley's during high school lunch, chow down on a burger and shake and run back to school in time for next class. Never gained any weight because we ran it off when young. They have since moved but I will stop for a burger once a year as remembrance of high school days long ago.

Greg, You should check out Culvers Butter Burgers. They are a chain, and use a very similar process to your Smashburger technique which i love and use all the time. I picked up a ballistic griddle for my Weber Summit and the thing is amazing. I had 6 patties on it last weekend and then ran a bunch of red onions while the burgers rested. The local Whole Foods sells a patty that's a blend of Brisket, Short Ribs, and Ribeye and they are insane. I think it's available around the country and not just here in Colorado but it's my go to, with some butter lettuce, fresh tomato, red onion, mayo, and a nice mild cheddar on their Brioche bun. Love the channel!
I second you on that. Culvers is pretty good for a "fast food burger" joint. Also..I love those Wisconsin cheese curds that they have.

I cooked this today. It was amazing. I made my wife very happy because she loves onions. After all the stewing and reduction, they just melted in your mouth. I guess I was a bit timid and didn't get as much outflow of butter as you did. I have leftover onions for tomorrow night and I'll adjust up. Thanks again. By using butter we are avoiding the perils of trans fatty acids!

Nice job. Good ol' fashioned Milwaukee style. Lots of dairy, no hot stuff, really simple seasoning. Looks like others have pointed out that Leinenkugel's is locally pronounced with an English long-i sound. But after a couple of liters, they're just called "Leinie's" (line-ease: slurred, not shaken).

I just came across your video. I allow myself one visit to Solly's per year - usually after my annual physical and cholesterol test. Not only are the burgers great, but their french fries are amazing, and they make the best vanilla malt I've ever had.
Living in the Milwaukee area I've been to Solly's! I think you put just a tad too much butter on the buns but other than that it looks spot on. 👍

Wonderfull, I can see why this burger is a favorite for middle aged and older people. Very easy to chew and digest. cholesterol off the charts though. that's why you only eat on Sunday afternoon when you get old. lol I'm so trying this. this week.

I live in Arizona so the only butter burger I have ever had came from Culver's which I am sure doesn't compare to Solly's if they are actually the original creator of the "Butter Burger ". I have to say I do enjoy Culver's, but my curiosity is up to taste the difference. I hope one day I can visit Wisconsin just to try Solly's. Looks delicious 😍🍔

Been to Solly's grill and had their butter burgers I owned the Aftersix newspaper and entertainment guide out of Green Bay,WI. I covered everything in Wisconsin as far as food and entertainment bars and music and musicians and I Love the food and people of Wisconsin you did a good job but I Know there is nothing like a real Solly's butter burger . Also , should mention I had Butter burgers from a bunch of places in Wisconsin and it is absolutely got to have butter dripping out of the Burger and bun without a doubt . Peace . If said people are being absolutely rude in their display of ignorance, then yes, we can totally blame them for being Negative Nancies. Grass fed butter brands: Kerry Gold, Organic Valley, Anchor, etc. Kerry Gold is pretty much available everywhere, but it's not 100% organic. Costco carries it. I prefer Organic Valley Cultured Pasture Butter in the green wrapper. You can find it at Sprouts, Wholefoods, sometimes at Trader Joe's.
I used your recipe as a guide to my own Butter Burger, Yesterday, except I liberally added Maggi Seasoning, to the stewed onions. (I buy Maggi from Amazon.com) I thought it was perfect then, but today I added Steak Sauce, to the stewed onions, and reheated them. OMG! It is now ideal. The only other major change I made, from your recipe, is I used Vermont Butter, salted, and Cabot Vermont Sharp Cheddar Cheese. I was hoping to use Extra Sharp or Hunter, but they were sold out.
I like my burgers thick ( about 1" cooked ) with the diced onions on the inside please. Medium rare will do. 👍
