- Tommy's Original World Famous Double Cheese Chili Burger! Yeah!
Chili Recipe: (Ballistic Griddle linked at bottom)
1 pound ground beef (not lean)
1/2 cup masa corn flour mixed with 1/2 cup AP flour
1 1/3 cups beef broth
4 cups water
3 tablespoons chili powder
2 tablespoons grated (and then chopped) carrot
1 tablespoon white vinegar
2 teaspoons dried minced onion
2 teaspoons salt
1 teaspoon granulated sugar
1 teaspoon paprika
1/4 teaspoon garlic powder
1/2 stick butter
1. Prepare the chili by first browning the meat and carrots in a large saucepan over medium heat. Crumble the meat as it browns. When the meat has been entirely cooked (7 to 10 minutes), pour the meat into a strainer over a large cup or saucepan. Let the fat drip out of the meat for about 5 minutes, then return the meat back to the first saucepan. Cover and set aside.
2. With the fat from the meat and half stick of butter, we will now make a roux. Heat the drippings and butter in a saucepan over medium heat (you should have drained off around 1/2 cup of the stuff). When the fat is hot, gradually add the flour/masa mixture to the pan and stir well. Reduce heat to medium low, and continue to heat the roux, stirring often, until it is a rich caramel color. This should take 10 to 15 minutes. Add the beef broth to the pan and stir. Remove from heat.
3. Meanwhile, back at the other pan, add the water to the beef. Add the roux/broth mixture and the other chili ingredients and whisk until blended.
4. Crank the heat up to medium high. Stir often until you see bubbles forming on the surface of the chili. Turn the heat down to medium low, and continue to simmer for 15 to 20 minutes, or until thick. The chili should be calmly bubbling like lava as it simmers. When it's done cooking, take the chili off the heat, cover it, and let it sit for 30 minutes to an hour before using it on the burgers. It should thicken to a tasty brown paste as it sits.

I live around the corner from Tommy's here in Norwalk and Tommy's is trash......u want a good chili cheese burger...homemade is the way to go.
You'll get better flavor with the chili if you add the dry spices to the meat when it's cooked. Adding spices/salt to chili after the liquid is added requires a lot more to get the flavor right, especially salt. You'll never get caught up. JMO. I use cumin/chili power, GP and OP too. Using serranos or jalapeños to the meat mix is nice too.
Thank you James. I just made in prep for 4th of July and I couldn't just spices right, over seasoned! Also, my masa and flower did not turn brown. All and all it was a great video but I'll try it again using your tips
Totally agree. Whenever I make chili, I always spice the meat while it’s cooking. If using onions an fresh peppers, I normally caramelize them slightly before throwing the meat into the pan. It gets the right flavors blended just the way you want them.

You got the masa right, that’s what they use. They don’t add water, only beef broth. In fact the meat is cooked in beef fat too. Increase the amount of spices about 1/3. Between skipping the water and increasing the spices that will take care of that bland flavor you spoke of. So remember, no water! If you put it in the chili it has to also add flavor.🤗

Miss Smarteepants hello, you made a comment on the Tommy’s burger recipe. You said don’t add water just beef broth. Did you mean 4 cups beef broth to a pound of meat and does it matter what type of broth ( cubes or already prepared liquid ) . Also you said cook beef in beef fat. Do you mean add beef fat besides what the cooked meat already has ? If so what type. Thank you for your time.

Yes, they use beef fat the way we would use butter or olive oil. So in addition to what the beef already has.
LA native here. Tommy’s is where I go when not near Carney’s (blows away Tommy’s). Anyway, I can tell this chick knows her dealio-no water, baby, and use beef tallow for the fat (Why? Because you CAN). Xtra flavor. I also add a big tsp of Accent (MSG). 🤟

Thanks, I’m a transplant Californian, I made this today and it is damn near perfect. Made it exactly like your recipe and while it was cooking all I could smell and think about was Tommy’s. Thicken up the way it should have and made my burger taste phenomenally. Thanks again!

I went to the original across the street from the CBS studios. A neighbor used to get a regular steady supply of free tickets to the Carol Burnett show tapings. We'd hit the Tommy's where I learned that you HAD to dedicate a hand to holding the burger until it was eaten. Arizona doesn't have this chain yet but maybe someday. But I can see several uses of this chili - It would be fantastic on pasta.
Thank you, Greg, for your perseverance to creating the knock-off. Now, if you want a real good challenge... Red Cabbage Salad from North Woods Inn, another iconic SoCal restaurant. All the knock-offs are no where close to nailing it.

I live in Los Angeles and had the original Tommy's from the rampart location, with that being said we here are lucky that they sell the chili in separate size containers.
Looks good! Fyi: Tommy's buys their chili con carne from RC Provisions in L.A and adds ingredients to make the chili. SMART & FINAL stores sell the RC Provisions chili con carne.

I lived in LA in the early 80's and I used to go to the 'original' Tommy's and get a double chili cheese burger, plus a handful of pickled serrano peppers and a soda for breakfast 5/6 days a week - it was really cheap but oh so good - I've had withdrawal symptoms ever since I moved back to OZ and I've never managed to successfully recreate the 'Double Chili Cheese Burger', tomorrow I'm having a crack at copying this recipe. Hand on heart, the double chili cheese burger is the best burger that I've ever tasted, thanks so much for bringing back so many good memories.

Well first thing, the dbl chili cheese should be wrapped up.... otherwise it will be everywhere. I've been eating those for years on Roscoe and The 405 freeway in Van nuys,CA..... btw,gotta have some fries and peppers.... and an ice cold Coke or a Budweiser.

To help describe this burger you have to appreciate a time before the "health" nut stuff kicked in. This burger is greasy and messy and that's the way we like it. Especially after a night of drinking. This is not a mind blowing burger. It's a culture, it's what we grew up on. You have those kinds of places that you love. This is in that category. I moved away and you better believe I miss this place. I will come and visit and Tommy's will be my first stop.

I have tried the Tommy's copycat chili recipes and they have turned out just so-so. I have not tried making a roux like you do.
I totally agree with your call to use half masa harina and half all-purpose flour.
I'm not sure the sugar is necessary so I leave it out. I've seen in in all of the copycat recipes.
I think there is a crucial ingredient missing from your recipe. Try adding 1/2 tsp CUMIN. This will make it a lot more Tommy's-like. I live in Hollywood and can have the genuine article any time I want so I don't have to go by distant memory. I think I detect a hint of cumin in the chili I order from Tommy's on Hollywood Blvd.
If you want to live on the wild side, instead of butter you could use a few TB of beef lard - yes, lard - added to your hamburger grease.

I followed your recipe, I thought pretty close. The flavor is very good, but it didn't come out dark like Tommy's and it didn't thicken up like theirs either. When I was making the rue I may not have caramelized enough or it just didn't. You heated up your pan before you added the grease and butter, my pan was still hot so I didn't do that, is that 1 of my problems? I did put masa in and added reg flour, I also used 3 lbs of hamburger and accompanied for it. 1 lb just doesn't last here long lol. What am I doing wrong?
Moved 750 miles away from LA but go back once or twice a year and I hit 3 different Tommys. The one on Pico, the one on Roscoe in the valley and the one on the way to Vegas, possibly near Barstow truck stop.
I never had Tommys but a friend of mine who lives in LA goes often and she says they have a very distinctive smell to them. Basically she says they make the car stink for a day.

I feel as though all the copycat recipes are missing something they never look greasy enough I'd probably try beef tallow over butter.

I am not a huge fan of onions I do not order my In and Out burger with them, but I LOVE the chopped onions from Tommy's it makes the burger.

Masa flour is awesome but it is pretty strong...I use about 2 tbs in my chili pre-mixed with beer or water . Good looking burger dawg. I enjoy your channel.

Looking for a CC Tommy's chili brought me to your channel. Yours was listed first. So I clicked on it So glad I did! Liked your video content. So clear and concise with very little fluff. Just subbed you and all new content:) Looking forward to trying your CC recipe for Tommy Burgers. A bit of background. My husband grew up in Socal and introduced me to this culinary crack!! LOL!! Tbh..at first I wasn't sure as I was never a fan of chili burgers. And this chili was definitely something new to my palate. But it sure didn't take long for this to grow on me and now I can't get enough of the stuff! FF a few years and we now live in Southern Utah. But that puts us close to Las Vegas. And we recently were thrilled to learn that Northern Vegas has a Tommy Burger!! We just tried it two days ago and it was clean, well run and the food was just as good if not better than the one we frequented in Socal. We even stopped at Walmart and bought a small cooler so we could order a couple of their breakfast burritos to go home with us and put in the fridge for breakfast the next day. OMG!! I've yet to find a better tasting BB!! yum!! Will update as soon as we give your CC recipe a go! 😜

Awesome! The masa was a great thought. I even mentioned to people that there was something about Tommy's chili that reminded me a bit of tamales, but never thought about using masa... Will have to try your version. I think the only think I miss about Los Angeles is Tommy's.. ;-) Well, maybe Philippe's french dip too, but its been so long, not sure I remember what that actually tastes like. Just that I loved it..

Driving all day (12 hours or so) from Grand Junction, Co to Barstow, Ca, Tommy's was ALWAYS our "what's for dinner" stop when the 12-12 tours brought us to SoCal... And I miss it. Now, ya have me thinking of trying to find a way to convince Mercy that we need to return (12-12-5 is scheduled to be a Colorado only trip this summer). Hope I can convince her!

For me it was the only positive reason to go to Vegas. Get Tommy's twice in a week. Their burgers are okay but I usually got the chili cheese fries. Love it when I would put it in the fridge and eat it the next day, microwave it and it tastes even better

That burger looks so good, but Tommy's chili is more on the runny side and oozing with a red-orange colored sludge. To die for! However, I would be more than content to allow one of yours make its way past my lips.

In the UK, we tend to add kidney beans and cumin to our mix though I understand this isn't common practice in the US?
In regards to an earlier video where you talked about Worcestershire sauce - you said in the UK we pronounced it "wooocestershire sauce" - I've only ever heard it pronounced "wuss-cestershire sauce" But I'm not from Worcestershire so don't take my word from it.

Hut's Burgers in Austin, Texas make the best burgers hands down.
My wife and I used to go to Tommy's for there Double Chili Cheeseburger and Chili Dogs, I would always grab a bunch of there yellow peppers too. That is one place we miss since moving to Northern California. Hey Greg your Copycat looks most excellent:-) The messier the better :-) A "BIG" thumbs up :-) Have you ever been to The Hat for pastrami sandwiches? ROCK ON!!!!!!!
A potato masher works really well for breaking up ground meat in a pan.

It doesn't make it too fine, since it is chopping the meat instead of breaking up the already ground chuck? Also, that's a bit extra clean up.
Just pulse a few times. The consistency of the finished product is just like the real thing. I grew up a couple miles from the original Tommys location and have eaten a good amount there.
Try putting about 2-3 cups of water in the meat and making a slurry before it's cooked. Mash the meat in the water. Cooks up very fine; sounds weird but works like magic.
