I only cook bacon in the oven now. So much cleaner and you can get it as crispy as you want without moving it around all the time. Just one flip required.

The special care and attention to detail is amazing here. The layering of sauces and ingredients. I love the use of both grilled and raw onion, need to try that at home. I've quit ordering burgers out at this point as nowhere just seems to get it right and I find my $20 goes farther on other items these days but I would love to try both of these.

I then asked myself WHY on Earth am I watching something like this at 11 at night tho, lol. I've long cut off food for thr night but this just makes me hungry for a good bacon cheese burger! Making my own tho would be the way to go. I haven't been to a restaurant in 2 yrs except to have breakfast one morning and I was reminded why I stopped going, the people were great but the food is overpriced & substandard! Idk how people justify a "biscuit meal and juice" for $8 when 3 yrs ago the same food was just over $5.... You're lucky if you can make it out of the grocery store for less than ~$400-$500/mo for just one person forget a family of 4....

I actually like that these burgers are "flatter" than a lot of the other Asian made burgers. I always look at the ones half a foot tall loaded with toppings and wonder how I'm even suppose to fit it in my mouth.
They’re called smash burgers. I prefer them too because there is more browsing on the patty and it does feel like you trying to eat your way through a really thick less seasoned meatball.
As a Texan and a gourmet chef, I have the following observations: 1. The way the chef smashed/spread the meat was brilliant. I need to try it that way. 2. Mustard grilling the meat is very underrated and I’m super happy to see that they do it like that. 3. Sautéing the onions in what I assume was butter was excellent technique. I can imagine how wonderful those taste. 4. Generous with the cheese is excellent as well. 5. Bacon cut in half and using a grill press to keep it flat is also a very good technique. 6. The buns looked good. From the color I wonder if those were yeast rolls, which are an excellent choice for a juicy cheeseburger. I love how Asian street food vendors put so much effort and heart into the preparation, in my opinion it adds to how much they care about making the food. The pickles seemed small, and I think they were sweet pickles and not the typical dill used in most American burgers. Personally, I LOVE restaurants that use sweet pickles on hamburgers. The only two things I did not like: -mixing cooked and raw onions in the same sandwich isn’t good. Raw onions especially can distract from and overpower all of the other flavors in the profile. -too much sauce. Four different sauces is entirely unnecessary. Most American restaurants will use two sauces, and a maximum of three. Some sauces can stand alone as well depending on how well they compliment the food they are paired with.
I’ll have to rewatch the tomato section, but unless those tomatoes are vastly different from what is sold in the US, I only remove a single slice of the top where the stem is, then slice it laterally, and do not discard anything else.
Maybe it’s just me but that’s a lot of onions. They’ve got the caramelized onions on the burger along with the raw ones. In my opinion you only need one kind. Other that the burger looks good.
