Wow. I like that you use a simple blender to make these. I look forward to making the cheese ball. I love your vegan ricotta recipe and look forward to this. I will need to leave out the oil...hopefully it won't significantly impact the flavor (or texture)? I made the vegan queso sauce using unsweetened soymilk and it is amazing. Funny: cilantro used to taste like soap to me too. Oddly enough I "grew" to like that flavor! What are your thoughts of leaving the oil out of the cheese ball? Will it ruin it?
Thank you so much Melanie! I think it should be okay. It does help to firm it a bit so i can’t say for certain that it will work without it but the tofu is pretty good at holding its own shape. Let me know how it goes! Haha i don’t know I’m 31 now I’m not sure if I’ll grow out of it at this point!!
Well, I'm 62 & doubt I'll outgrow my dislike for cilantro but really wish I could because soooo many recipes call for it!

It wasnt clear for the queso blanco if the 1 3/4 cup milk was scant or if youre just adding extra warm milk at the end to thin it out🤔
1 cup in the beginning, 3/4 cup warm milk after you’ve made the cheese. In the blog post with detailed instructions it specifies, hope this helps!
Do you think it will be ok to use cornstarch instead of tapioca flour? Thanks 👍
Hi the tapioca starch is it what gives the gooey, cheese-like stretchy texture. Cornstarch won’t do that it will just thicken. If you want to try you can but just know the outcome won’t be the same
