Also, it is worth mentioning that seitan firms up further overnight in the fridge, which is especially important when making sausages like chorizo. The base recipe that I started with was Chickpea Cutlets from PPK, which seems very similar to your Chick'n Cutlets, though beyond using chickpeas also has sage and lemon. I loved this video as it really is the 3 ways to make seitan. Another thing I like to add is mushroom powder from blitzing dried forest mushrooms.

That all looks so good! I have been obsessed with seitan since the first moment I ever had it in a restaurant many years ago. I highly recommend trying black beans for the steak mock. I find they really add to the beef flavor. I also like to include some cocoa powder for color and flavor too 🙂
