HELLO FRIENDS!! So, the internet loves croissants. And, coincidentally, so do I. So after falling down a cronut hole of croissant content - I decided, I needed to make some frickin croissants. And surprisingly, Black Box Bakery in Denver agreed to take me on as a pastry apprentice! Not only did I get a high-altitude pastry bootcamp - learning how to laminate my own dough, and roll my own classic croissants - but I also got to create my own custom, semi-goth, cream-filled croissant CUBE - that you can actually try at Black Box Bakery if you go there in person!! What i love about Safiya is that she goes to these business as playfully as she can, but when it's time to work, she follows every instruction and isn't there just to mess up their work or to bother them. She actually wants to learn and inform people around her; she's respectful, goofy and promotes small businesses the best way possible.This is what makes everything so much more enjoyable and fun

I think using the dough scraps for the black stripe was probably the main issue. Because the dough wasn't made black from the start, trying to incorporate the color into already mixed dough meant it ended up getting overly mixed, so it got chewy and stretchy. It didn't quite fluff up the way the rest of the dough did.
I was just thinking that. "Wow, I wonder how much that dough will be over mixed than the rest," and I was right! Well, they were just prototypes anyway, and they still looked great in the end.
And when the world needed her most... SHE RETURNED 😢🎉💖🤗

It's not, don't worry. It's just the rapid gentrification here means an unusually high concentration of trendy small businesses. The current trend is making croissants into anything but a croissants, so we ended up with a lot of trendy little places that make them. It's new and definitely won't last.

I did a little google sleuthing and it looks like the bakery is closed two days a week (probably for general prep along with letting the staff take a break) so my guess is that Saf came in during off hours for the main bulk of filming. Between teaching a novice and working around filming set up, wouldn't surprise me if this small test batch is all that she made. But for a first timer without a culinary school background, she did really good!
Wonder if Safiya had to watch those mind numbing new employee orientation safety videos before being allowed behind the counter lol

When in culinary school for Patisserie and Baking, part of the first courses is to whisk your Whipped Cream by hand. So in a way, yes, it is a kind of hazing but also to make you appreciate how Bakers have been doing it for decades before Mixers, aside from present day Bakeries that don't have the Machines/Machines that break down.

I used to have make my whipped cream by hand because I didn’t have a mixer 😂 my mom taught me to freeze the bowl beforehand and it made it easier
My parents had the hand cranked whipper that we used for most whipped cream. When some was left over (rarely), we sometimes massaged it into unsalted butter . Only for big bowls of whipped cream did we use the electric machine .
Using pasteurized not ultra pasteurized cream is key to whipped cream by hand!
This and making hollandaise sauce by hand 😩😨 never again.
Now that is a chef that loves their job, they’re both having so much fun!

as a french person I'm always amazed at how crazy imaginative people from other countries got with croissants. Like in France you'll never see a croissant cube or a croffle or anything like this haha (or maybe in like specialized bakeries you can only find in big cities) but nothing beat the taste of the og croissant for me

I feel like these types of videos Safiya makes, is like "first day at a new job" type of way, which I actually think is really useful and healthy for people to see, like starting from knowing nothing, to actually achieving a finished product. I had to go gluten free over 10 years ago due to an autoimmune disease. Croissants are the one thing I miss so freaking much. So jelly you got to do this. 🖤

@@yriEth baking any type of dough without gluten is incredibly difficult, the gluten is a fundamental component that gives the dough structure. I think a GF croissant would be a pale imitation of the real thing, if even possible in the first place
@@potatoppppower 100%. I've seen gf crescent shaped rolls, but making an actual croissant would not be possible with gf doughs. We can't even get a gf donut unless it is cake style.

Back in the Stone Age (the 80s), I had to learn to laminate dough and whip egg whites stiff by hand. I also learned to test sugar syrup BY HAND ( no lie, sticking an index finger in 300 degree syrup). Consequently, the sheeter and 80 quart mixer are now my besties.

Should really try some Danish or Copenhagen recipes for butterdough and Wienerbread . They start out the same, but end out flat with a hole for the filling .
Classic fillings include a yellow cream, red jam or a rolled in layer of cinammon . Major final shapes include the snail @, stick | and kringle 🥨 . The kringle is big enough for a dozen people or more, but remains the bakery icon .

The croissants look real good and authentic! In France, the default is not to add the simple syrup (which I prefer without) but that's actually how the Italians (and Spaniards I think) love it so it's just a preference. Would love to try it!
