  • I love the smell of freshly baked home made granola and that is this week’s recipe - an easy vegan granola that you can make at home.
    Have you tried making your own granola?
    When making your own granola you know exactly what’s gone into it and you use the best ingredients too. It has no added oil, preservatives or refined sugars. This recipe uses real foods and uses natural sweeteners.
    I store it in an air tight container and it keeps for up to 2 weeks but it never lasts that long as is always so popular in our home.
    Home Made Vegan Granola
    Dry Ingredients
    5 cups rolled oats
    2 cups chopped nuts (your choice of cashews, walnuts, almonds, etc)
    2 cups pumpkin seeds and sunflower seeds
    1 cup shredded coconut
    Pinch of cinnamon powder
    Pinch of sea salt
    ¾ cup cut dried fruit (cherries, dates, plums, etc)
    Wet Ingredients:
    1/2 cup nut butter
    ¾ cup maple syrup
    Preheat the oven to 160°c. Line a baking dish with parchment paper.
    In a large baking tray combine together all the dry ingredients.
    Mix the wet ingredients in a bowl. Pour this over the dry ingredients ensuring all dry ingredients are fully coated.
    Spread the granola evenly onto a baking dish lined with baking paper. Bake for 20 to 25 minutes, and turning over once.
    Remove from the oven and allow it to cool. Store in an airtight glass container for up to two weeks.
    Make your own granola, as the problem with buying granola is it’s high in sugar and when you make it at home, you decide the quality and quantity of your sweetener.
