I agree that the original Italian should be the default, but I understand if you wanted to showcase it on this video as default to reach more people. While I can't vouch for the translation itself, the voice and execution is well done. Impressive
wait i didn't even realize it was dubbed as i was mostly listening to the video. then I watched it and the lips really give it away, but the voice is really good
I would also prefer it to be in Italien, as it makes it so much more personal for the viewer and the subtitles on all of the videos are very good. As for the dub in general, it is extremely well executed apart from a few details, that seemed off, but I definitely would prefer it, if it was just an option.

You cut the absolutely crucial step when he started to boil the chicken again after putting it into the ice water! Did he put it back into the same pot after clearing the impurities, or into a pot of fresh water?
Chef puts the chicken, from the hot pot with the impurities, into the pot with cold fresh water and then starts to boil it with the vegetables. The water with the ice is for the strainer to keep it cold so when Chef uses it to skim the impurities the second time, the scum sticks better to the cold strainer.

Il risotto (per quanto questo non lo fosse) viene bagnato con brodo vegetale o comunque con un brodo chiaro. La tostatura dei vari elementi la si fa per i fondi.
ma che domanda è? la cipolla troppo tostata è estremamente aggressiva ed in un piatto del genere coprirebbe tutto. e lo stesso vale per il pepe. mi domando perchè seguiate sto canale se non avete la ben chè minima idea di quello che state guardando

The channel is Italia Squisita. It is in Italian. So I looked for 'options' on language and found none. I looked through all the settings and found no 'language'. I did a Google search on how to change to original language and it was no help. I found YT video also no help. After all this, I am posting a comment. Please go back to the old way, and put it in the original language with ST, and make it EASY to change to dubbing if that is what you like. REALLY, REALLY don't like this. Thank you for listening.
This is fun to see as it's also how my Portuguese family cooks rice! Always thought there was a similarity to risotto but I didn't know Italy also used this same technique of just stirring a little bit and keeping the rice wet.
The AI dubbing might be great for some non-Italian speakers (I'm not a native speaker but I understand Italian very well) - but DO NOT make it the default, per favore!! Make it clear that people who don't understand the original language, can do this - but as I played this video, I was thinking for minutes why the audio wasn't synced with the lips of the host at all, and I missed the beautiful Italian language. From his lip movement, I finally understood he was speaking Italian after all, and only then understood what was going on. I think subtitles should be enough, this is an Italian channel, and subtitles can literally make every language on earth understandable - dubbing is, in my humble opinion, a lazy practice. Lots of love.
The irony of Grandma's Sunday dish using all the parts of the chicken, but then showering it with a week's salary in truffles. Not sure Grandma would approve. She would agree it is delicious, however.

The few times I've had it, there was offal and I think some andouille.
