Ancient Bolognese Sauce in an Emilian Michelin restaurant with Massimo Spigaroli - Pallavicina*

- Chef Massimo Spigaroli continues his recount of the Emilian tradition starting from an ancient recipe, the courtyard (bolognese) ragù. A dish of peasant origin which allows Spigaroli to illustrate the agricultural and farming system of the Antica Corte Pallavicina, a Michelin restaurant that preserves the knowledge of an entire territory.

I could listen to chef Spigaroli all day long. Thank you !
Unfortunately, after watching all of these videos, I no longer go to Italian restaurants, because I can cook better at home with these instructions. I❤Italian food.
depends where you live, there are some amazing Italian restaurants in some cities
You don't have these exact (fresh) ingredients, on the other hand neither do the other restaurants
😅👍
So well said. I have cooked my whole life and when you discover a series like this your level of cooking is transformed. I too have such a hard time going out to a restaurant now because it is soo disappointing..
There are Italian restaurants in America that are not Olive Garden, and try their best to dial up the quality level. But, for the most part, a family run restaurant is going to follow their family traditions and recipes, and those are the ones that I search for. Those that are in it just to make money aren't going to have the same "heart and soul".
Spiegando ogni passaggio. Fanno capire quanto cuore, passione e dedizione ci vogliono per mettere in tavola piccoli capolavori.Dai più semplici ai più complessi. Grazie Italia Squisita. Grazie davvero
Been following this channel for sometime now. I watch every video with captions on. I'm fluent in French and English and feel as if i can slowly start to understand more and more Italian. Nothing beets a homemade pasta dish, not now not ever. Grazie for these behind the scene videos on these amazing chefs.
I like to hear Italian at least once a week, being from the Tampa area.:)
The respect for ingredients here, and their handling, goes beyond a mere recipe. It's how my grandmother cooked. And it's difficult to teach. It has to be within you. Squisita, si!
Your grandmother didn't use forceps to cook.
@@moishglukovsky By "forceps" I assume you mean plating the pasta with chef tweezers. On that you'd be correct - - but my comment was directed at culinary philosophy, namely, a deep respect for ingredients; the tools of the trade are incidental.
@@robertopisano6582 Don't pay that idiot any mind. We know what you meant and you are correct. Our mothers and grandmothers cooked from their hearts and souls with love.
Grazie mille, @@DSmith-gs4tr !
And thank you for your kind words of support!
Much appreciated ❤
Buongiorno Chef!
G.N.
Don't want to meet Lorenzo in a knife fight, superb skills.
My mouth watered almost all the way through this video. Bravo.
I video fatti all' Antica Corte Pallavicina, sono quelli che mi fanno sempre emozionare, grazie ❤
That is a special dish right there. Nothing but the best ingredients, made with love and precision.

Lorenzo e massimo: semplicemente fantastici. grazie. fateci ancora entrare nel vostro mondo
These are real chefs, no food processors , just a knife and a pan, ❤❤❤❤
And a fuckin huge farm
I just wanted to say your channel is great. I always enjoy the videos. Checking in from Newfoundland and Labrador in Canada.
I would have never thought to use different fowl and rabbit in a ragu. Thank you for these videos as it makes me think differently about my cooking and different techniques. Bravo.
Wow ❤
I love these videos, thank you for sharing the soul of Italian cooking!
Superbe ! Les produits, la recette, tout est parfait.

splendido piatto della tradizione
Italia Squisita
fantastic episode!
Attention to detail, concern for quality and proportions, adherence to tradition - this is what makes this recipe an art, and not just another video about pasta Bolognese
Flawless! Respect from a pasta lover!
Magnificent, just bloody magnificent.
Amazing video once again, thank you so much.
Meraviglioso!!! Grazie.
I can't wait to try some of these techniques at home!
This channel is just amazing...
That pasta trick with the knife, I got to learn that one. It'll definitely impress your friends, that's for sure.
Will be staying there in July and are very much looking forward to the experience
that looks so delicious! thank you for sharing
Alleluia e lode a questo chef
This is why I learned to cook. I'm a 36 year old man from the woods but I have been cooking for more than twenty years. Occasionally, I'll go out and eat but I'm almost always disappointed because the things we can make at home with recipes like this utterly outshine next to everything. I made a traditional Irish corned beef and cabbage boiled dinner for St. Patrick's Day and authentic Chinese Bao the next day with a dipping sauce. I'll go shopping again soon and pick up the ingredients for this recipe that I am missing and I can tell just by looking that it will be phenomenal.
i made bao recently with curried beef for the filling, can never go back to the take out ones!
@@oliverseguin7812 That sounds phenomenal! I'm going to have to try that. I've always just filled my bao with pork and cabbage gyoza filling.
Wonderful video, as usual.
Wow che meraviglia!
commovente, vorrei abbracciarlo
What a video.. insane. perfect !
A joy to watch.
Belissimo!!!
finalmente un CUOCO e non uno chef. Viene appetito solo a vederlo il video. Grazie Massimo
Spigaroli è un poeta
He handles that massive chef’s knife like it’s a paring knife!
Absolutely beautiful.
Uno dei miei primi preferiti

Che meraviglia!!
che bello!... 💖👍
Bravi ,prodotti naturali senza prezzi esorbitanti.
Naturali e poi usa l'olio di semi? E quali semi? Prodotto da loro?
Grazie , Anna Rosa dall'Australia.
Very heart warming video :)
Massimo sempre super!!! Firmato Silvia e Giorgio Bisagni!

Meraviglioso

a gifted chef
Io faccio il cuoco.
In Africa.
Ragù spettacolo!
Thanks to Massimo educating me on lasagna al forno I have made my American Italian friends mad and can never go back to using ricotta. It’s such a wildly better version. Additionally, I’ve found a fantastic wine that pairs extremely well(bought all the bottles) in making a chicken variant for the bolognese of that same dish. Also my pasta making skills have also evolved due to making that recipe so I’m excited for this. I will definitely visit this place one day.
Uma arte gastronômica 🎉
Poesia!!!!
Everything great in French cookery is pilfered from the Italians: Everything great in Italian cookery comes from Sicily, the seedbed of European culinary traditions. Thanks!
