    Eva and Chef Alfredo are back, this time to share an authentic Ragu alla Bolognese recipe! Well, make that two recipes, because this week Chef Alfredo is here to cook (he's getting a little tired of Eva getting all the credit).

    My Father was from Bologna and I lived there many years. Eva's recipe is the real deal and you can use the same sauce for a nice lasagna too. Kudos for Harper speaking Italian.

      I used ground pork because I couldn't find fresh ground pancetta wich is a part of PORK!!! 😉

      I've been told Bolognese recipes change in Italy from households to households. I make it from a Jeff Smith recipe, sort of fashioned in my own way. sauce meat, beef and pork seared, pan glazed with red wine, cooked low and slow for 3 hours. meat removed. Add heavy cream and a handful of Lucatelli. Done. Over pappardelle.

    The two of you are my favorite couple in all of RUclips.
    I love the traditional Italian cooking (of course), but even more than that, I love the way the two of you interact with each other. The love the two of you share is obvious...and food is never better than when it’s made with love.

      Her name is spelt Eva in Italian, otherwise you would pronounce it "Ava" and not "Eva" (of course) ☺️

      @@stefankruger929 yeah it's quite a frequent mistake, in the US Ava is probably more common than Eva. In Italian you read every letter only one way, so the spelling is closely tied to its pronunciation (or viceversa)

    You two are perhaps the most enjoyable cooking show and I think I've probably seen just about every one that exists starting back in the 70's
    But as far as Italian Mario doesn't hold a candle to the QUEEN
    There are some good ones on line but that cute calabrese makes it so much fun

      We really want to make that happen! The problem is finding authentic Indian food where we live. Come to think of it, finding ANY Indian food is difficult 😂

      @@PastaGrammar haha you can always try making some at home! Get the dried legumes/spices(they store well) and just use regular vegetables you have at home to make a dish 😊.
      Start with something simple like 'dosa' only takes rice, one legume and some fermentation. 😁 Indian food is easy to make for people who love to cook their food like Eva !!

      KomalJi I have to order the spices on line and it’s expensive. So I go to a big city about every 6 months for Indian and Asian (Chinese/Japanese), and middle eastern ingredients from the individual grocery stores for each nationality. It is 6 hours one way though 😭

      @@PastaGrammar Rasika in Washington, DC is supposedly the best Indian restauarant in the US but even this restaurant is not 100% authentic. You probably will only get that in India.

    I made this today. It was heavenly. Fresh tagliatelle is my all time favorite to eat and make! The Bolognese was rich and creamy and coated the pasta perfectly. My goodness I am in love with your recipes!

    Finally made this! I left it to cook for 4 hours as I learnt that the longer it cooks the better. I also put a bit of milk near the end (I saw it was the traditional thing to do).
    Long story short, it was amazing! I couldn't speak, just eat eat eat :p

      Agree, my research across a variety of traditional sources (sauces!) calls for a dash of milk and I have found this helps the emulsification of the fat into the ragu.

    Happy Sunday, guys! Love that Chef Alfredo's Italian is so impressive. But that sour cream...it's almost a Hungarian dish instead! They would like it here. But... traditional bolognese is for me. Eva, the pasta looks amazingly good.

      Spagetthi is overrated. The best kind of noodles are the small ones. Easy to pick them up and they can carry alot of sauce.

      hans Haperle pasta is pasta and noodles are noodles - in the modern world outside of America the words are not synonymous - but regardless if you made spaghetti super thin then it would end up feeling like you’re eating grass

    Hi Eva , I made this and it’s what I’ve been looking for all these years! I knew Italian food was supposed to be delicious, but I hadn’t been able to find good recipes, apparently.     Wonderful ragu, as my mother's recipe! But I must tell the truth: it's is so good with every kind of pasta, also spaghetti (unbroken spaghetti of course😂)

    Wow i Just made this.... this is the best sauce ever!! Only it was very oily, so i get rid of the ecces oil, but the taste... wow love it
