Ragu Alla Bolognese Recipe | How to Make Authentic Bolognese Ragu Sauce
Eva and Chef Alfredo are back, this time to share an authentic Ragu alla Bolognese recipe! Well, make that two recipes, because this week Chef Alfredo is here to cook (he's getting a little tired of Eva getting all the credit).

Italian parents tell their children, if they misbehave Chef Alfredo will cook for them.
😂
HAHAHAHAHAHA!
Child abuse🥴
😂
🤣🤣🤣🤣🤣🤣
Chef Alfredo's Italian is improving more than his cooking.
A dire il vero non è stata una cattiva prova l'italiano! Peccato si sia affossato con la pasta.
Where did you get that dish rack?
Vero. Come cucina gli anglo americani sono orridi, ma hanno grande talento nell'imparare lingue nuove. A ben vedere forse tutti ce l'hanno sto talento tranne noi.
Chef Alfredo could give Chef Boyardee a run for is money on bad cooking.
@@howardbartlett3026 i miss him! Where's he been?
chef alfredo is literally every high school student when they are assigned a video project for italian class (myself included) and i love it
Eva makes this channel so good, he's lucky to have her!
Chef Alfredo is one of the luckiest guys on earth
They're FORTUNATE to have each other❤
My Father was from Bologna and I lived there many years. Eva's recipe is the real deal and you can use the same sauce for a nice lasagna too. Kudos for Harper speaking Italian.
I used ground pork because I couldn't find fresh ground pancetta wich is a part of PORK!!! 😉
@Spongebob Schwanzkopf Old school Italians cook with whatever they have available without losing authenticity. That's real deal.
@@PastaGrammar Eva, instead of white wine, can you use red wine?
I've been told Bolognese recipes change in Italy from households to households. I make it from a Jeff Smith recipe, sort of fashioned in my own way. sauce meat, beef and pork seared, pan glazed with red wine, cooked low and slow for 3 hours. meat removed. Add heavy cream and a handful of Lucatelli. Done. Over pappardelle.
@@deniseg812 Probably true. Everybody likes to add a personal touch. Sometimes, a "family secret".
I love how Harper couldn’t keep a straight face when trying Eva’s dish because it was so good, and poor Eva’s face when he wouldn’t even try his own 😂😂😂
The two of you are my favorite couple in all of RUclips.
I love the traditional Italian cooking (of course), but even more than that, I love the way the two of you interact with each other. The love the two of you share is obvious...and food is never better than when it’s made with love.
p.s. Chef Alfredo is hilarious. Absolument.
This is too good to be true. He doesn’t want to try his scrapidoo. Poor Eva. She cracks me up. Well coordinated. You too rock. Muchos gracias.
Love Eva's expression when the chef is speaking ... :-)
I’m learning Italian, learning to cook, and really laughing the whole time while watching these videos!
Very entertaining and fun video! And I'm hungry now. 😋
Chef Alfredo!!! Made me laugh so hard! 😂 I LOVE the humor you two show❣️ Please teach the world your perfect pasta grammar for many years to come!!
🇮🇪 💚 🧡
Go on Ireland!
I live near Bologna. Every time "Alfredo" spoke, I heard distant cries of horror.
As dramatic as an Italian should be 😄👍
Every time an azdora dies!
@@Thebasicmaker l'arżdåura !!
I froze in fear, when I saw his "Soffrito", and I am not even Italian.
When he broke the spaghetti, I think I heard Italian nonnas weep!
I love this channel. Eva & Harper use light hearted humour to highlight the difference between the authentic and what passes as Italian cuisine outside of Italy. Of course, Eva wins, every time. Mia Cara, you make my mamma/Nonna proud. Every mamma. Ti Voglio Bene! Tutti e due!
Loved when Eva tasted Chef Alfredo's dish, and her reaction was "aiuto"!!!
"the reaction of his mustache" lol I was dying
One day I hope to cook food so delicious it will make someone's mustache fall off.
Note to self. Grow mustache
😂😂
Me too,my mother-in-law's!
You made me laugh so hard! So sweet👍🏽🤗
With an attitude like that, I believe you will and probably soon. Take it one recipe at a time and you'll get there😉
Harper is so lucky to have
Eva as his wife just think all those delicious things she cooks! 😋🤤
Her name is spelt Eva in Italian, otherwise you would pronounce it "Ava" and not "Eva" (of course) ☺️
@Guido Zabini Sorry I'm not Italian in any way, shape or form and we always spell it Ava
@@stefankruger929 yeah it's quite a frequent mistake, in the US Ava is probably more common than Eva. In Italian you read every letter only one way, so the spelling is closely tied to its pronunciation (or viceversa)
@@stefankruger929 read it Heva
Another great Chef Alfredo video. But the real star is Eva, the most charming Italian lady on this Earth. Well done guys!
Without going into detail, I learn much from your videos. It all comes down to a good base knowledge and acute attention to detail. The two of you have fun together and that's another reason why I enjoy your tutorials so much. Thanks!
Ogni volta che vi guardo mi sento orgoglioso di vivere in un paese così pieno di storia e tradizione (anche culinaria)
Ci pensavo giusto ieri... Non so in quanti paesi gli abitanti, costretti a casa per due mesi causa Covid, li avrebbero passati a cucinare leccornie come abbiamo fatto noi in Italia...
I am surprised that Chef Alfredo didn't use American Bologna in his Ragu !
Buona idea!
😂
Well it's got to be called that for a reason amirite? 🤔
@@PastaGrammar seriously though tf was that vile looking pink slime?
MrGoatflakes That’s Walmart’s best!
3:59 Chef Alfredo, you're hilarious! I love when you show up in the videos. And, Eva, thanks for making home made pasta look less intimidating to those of use who've never tried making it from scratch. I'm eager to try it now. Grazie for these fun and informative videos!
That look Eva gave “Chef Alfredo” was priceless! I laughed so hard!
chef alfredo had me in stitches at 8:24 ... keep these vidoes up you two, since findning your channel, learnt so much and got to be one of the best youtube channels out there. Love from the UK to America and Italy
❤️ Thank you!
Another fantastic recipe from Chef Alfredo ❤️. Every time he teaches me the importance of fresh and local ingredients. Let us all hope that Eva will continue to learn from her mistakes 🤣
😁😁😁
I just want to say thank you so much! Your videos have been an absolute inspiration! I have been doing them on my weekends off for my family, and they love them! I've enjoyed learning to cook authentic Italian dishes.
His eyes told it all when he tasted your pasta! Thank you again!
I used your gnocchi recipe a few days ago and they turned out great! I love the variety of content on this channel. It's both entertaining and enlightening!
Yay! We’re so glad you made gnocchi!
Harper's Italian has improved! Bravo!
P.S.: I'm talking about the language, ok?
You two are perhaps the most enjoyable cooking show and I think I've probably seen just about every one that exists starting back in the 70's
But as far as Italian Mario doesn't hold a candle to the QUEEN
There are some good ones on line but that cute calabrese makes it so much fun
Thanks 😘
Love it!!! My favorite video thus far!!! 👏🏾👏🏾👏🏾
I need to go back and delete all my spaghetti bolognese photos from my Facebook! Haha. Love this episode. I will try it this week.
Although, the outcome was already decided, I thoroughly enjoyed your presentation. Eva for the win, of course. Chef Alfredo is the perfect foil. Great job, your videos are always a treat,on a Sunday morning.
It's been simmering for an hour now and it smells absolutely delizioso! I'm making this ahead of time as a part of my meal plan for the week. TY!
You guys bring so many smiles to my face! Thanks for all your videos!
Ciao! I’m so happy to see another upload from you two ❤️
This is the second time now that tasting Eva's food has blown off his mustache. Must be good stuff.
Who wants to see Eva's reaction to authentic Indian food!? 😁
We really want to make that happen! The problem is finding authentic Indian food where we live. Come to think of it, finding ANY Indian food is difficult 😂
@@PastaGrammar haha you can always try making some at home! Get the dried legumes/spices(they store well) and just use regular vegetables you have at home to make a dish 😊.
Start with something simple like 'dosa' only takes rice, one legume and some fermentation. 😁 Indian food is easy to make for people who love to cook their food like Eva !!
KomalJi I have to order the spices on line and it’s expensive. So I go to a big city about every 6 months for Indian and Asian (Chinese/Japanese), and middle eastern ingredients from the individual grocery stores for each nationality. It is 6 hours one way though 😭
@@ytreece that's some serious dedication to spices hahha
@@PastaGrammar Rasika in Washington, DC is supposedly the best Indian restauarant in the US but even this restaurant is not 100% authentic. You probably will only get that in India.
Wow, what a great video! The best I've seen yet. Love Eva, the music, the food, the comedy, everything! Now I'm hungry too. Sheesh. From someone who doesn't speak Italian I must say I'm impressed with Chef Alfredo's Italian.
Cannot wait to try this!!! Eva, you're giving me the courage to try to make homemade pasta! Love you guys!
Chef Alfredo is probably the best thing on this channel... Sorry Eva... he slithered his way in and stole the spot light!
I was thinking the exact same thing. Alfredo is charming now that he speaks Italian!
@@carolmerlini9971 don't know about the Italian...but that mustache 😍 especially when it detaches itself...

The concept of doing the videos has been wonderful to the extent that we learn how to make many types of Italian meals thanks to Eva!!!!!!!!
Omg, I was looking for a ragu sauce for my lasagna that I was going to make today. What a great timing!
Let us know!
Eva's bolognese looks delicious 😋👌
I love you guys!, And Eva. I love your recipes! Thank you.
I made this today. It was heavenly. Fresh tagliatelle is my all time favorite to eat and make! The Bolognese was rich and creamy and coated the pasta perfectly. My goodness I am in love with your recipes!
In Italy a pasta like that of chef Alfredo is called "mappazzone" :-) Brava Eva, perfect dish. ❤️

Finally made this! I left it to cook for 4 hours as I learnt that the longer it cooks the better. I also put a bit of milk near the end (I saw it was the traditional thing to do).
Long story short, it was amazing! I couldn't speak, just eat eat eat :p
Agree, my research across a variety of traditional sources (sauces!) calls for a dash of milk and I have found this helps the emulsification of the fat into the ragu.
@@hunterpressurecleaning6483 I felt that's what the milk did. Thank you for the confirmation 👍
@@hunterpressurecleaning6483 that's exactly what it does, you can also use pasta water during the cooking process instead of regular hot water which helps bind things together.
@@andrewrenshaw2741 wow, great idea! Chef Vincenzo on another channel did not think of that!

Happy Sunday, guys! Love that Chef Alfredo's Italian is so impressive. But that sour cream...it's almost a Hungarian dish instead! They would like it here. But... traditional bolognese is for me. Eva, the pasta looks amazingly good.
I made this last night for the family. Absolutely delicious and was a hit. I didn’t have the ground pork but still amazing. I confess I ate all of the leftovers before lunch today. I have no control with Chef Eva recipes

Breaking the pasta? Well you’ve done it now
My heart broke when the pasta broke.

The horror
Spagetthi is overrated. The best kind of noodles are the small ones. Easy to pick them up and they can carry alot of sauce.
hans Haperle pasta is pasta and noodles are noodles - in the modern world outside of America the words are not synonymous - but regardless if you made spaghetti super thin then it would end up feeling like you’re eating grass
How can you guys be sooo funny😂😂. Your inteligent humor is incredible with Chef Alfredo!!
Thank you for the vid!!! I learn and you guys put a smile on my face every time🤙
Summary:
Chef Alfredo tooks everything that was in the pantry and made the "American Bolognese" sauce
Eva: only fresh and Italian ingredients, SUBLIME!
CHEF ALFREDO ALIAS HARPER, ti vogliamo bene comunque 😂😂
