Correct me if I'm wrong, Bicolano call Laing as Pinangat. But go to Luzon, Pinangat is fish in a broth of Ginger, fish sauce, garlic, pepper and tomatoes.

I was in Bicol this past June during my stay in the Philippines visiting from Missouri. So many amazing sights to see there. Mt. Mayon was insane. I enjoyed the restaurant called Soccoro's on Samlang lake. You have a great view of the volcano as you are eating. Definitely a memorable trip there.
I can't help but comment on your Bicol gastronomic experience. Because my family is from the same southern Luzon area. Your soup at the hotel is Chicken Tinola, a ginger base soup. Your pork is our version of Adobo. It's called adobong tuyo ( that means dried, no sauce, just braised until the sauce evaporates & then fry it crispy) Oooh I missed that one. There's a lot of coconut milk in our cooking. I liked the Laing. Another version I like is the snails in coconut sauce. Just like escargot. Not sure if you eat snails. And of course the green chilies. If you want your dish hot, you can smash the chile so the broth or sauce becomes hot. And the pili nuts, love love the pili brittle & honey coated nuts. Enjoy the Southern Luzon region.

Actually that bread that u bought from the guy with a motorcycle it's the traditional bread which is called Pandesal. It's usually we eat in the morning and dip it on the coffee as you've said it's crispy on top that's the purpose of it to dip in the coffee tp soften it. Pandesal u can eat it with everything like egg, spam, jam or partner it with the pancit🤗👌

the bread in 46:00 is pandesal, which is usually breakfast or afternoon sanck and is often dipped in your hot coffee (something my grandparents and our helpers always do). You can also cut it open and put a bunch of sandwich spreads (found everywhere from sari-sari stores (small mom and pop shops) to supermarts).

I mean, After hearing him talk about it's rich green taste with slight bitterness stewed down with a bit of pork for flavoring...the very first thing that came to my mind was well, greens...not you basic run of the mill spinach. Yes, I know spinach greens are a thing, and some people use it instead of the traditional greens but IMO it doesn't hold a candle in terms of flavor and isn't the thing people think of when talking about greens. A few years ago there was a really nice Philippino restaurant that had a very similar (might've been it) Taro/Cassava leaves dish and the first time I had it, I fell in love with it. IMO, it's clear that this THE way to cook dark leafy greens...(Well, in terms of flavor, health/nutrition wise...Umm, well, maybe not so much! LOL) I know one thing though, if more people cooked greens like this, they wouldn't get such a bad rap. I know if I had it as a kid instead of plain old spinach, I would've acquired a taste for them much sooner!

The oil of laing is healthy too because it's coconut oil, they use coconut cream and then oil comes out. Good dish if you're on a keto diet. ❤
