Look at all the lechons of the world- lechon of puerto rico or hawaii of spain (cochinillo, etc.) nothing looks like how the Filipinos make our own "Lechon". Of course, it glistens and crackles because we are the only ones who wipe it with coconut water and coconut oil. Probably the closest to our lechon would be Indonesia's Babi Guling. So maybe you should be the one to check your history. Like "Adobo", another pre-colonial dish, it is only the Spaniards who gave it a name that resembles their dishes because they dont know how to pronounce the traditional names. Hay dios ko!
It would also help you to know that when the Spaniards first landed in the Philippines it is on official historical records that Pigafetta the Italian Chronicler wrote that they saw natives all wearing gold while roasting whole pig over spit! Ok ka na?

I recently moved from NYC to LA and the differences in socialization and culture are black and white. It's totally worth the flight and commute. Albay isn't a well known place, but they have wonderful food over there, too.
