Autumn is there and it is the signal for soup ...my lunch is a bowl of soup and a fruit . So I try as many recipes as I can and this soup will be on next week . I love to use spices , it changes everything 😊
I made this soup today for lunch - and for the freezer. It was delicious. I had to substitute passata for fresh tomatoes and I didn't have any coriander or cinnamon so a slightly different flavour. I'm looking forward to trying it with all the spices.

I think I'd add a cup or two of cooked red lentils after blending for some added protein and to make it go further because one serving definitely wouldn't be enough.😋😊

I made this last night. It was very good. I added about 1/4 cup coconut milk at the end for flavor just b/c I love coconut so much. For 2 people you could easily half the recipe. But I like having plenty of left overs.

sautéing the veggies along with the spiced onion and garlic for a couple of minutes before adding the broth will bring out their flavours even more.
