Well….. lol, in an airtight environment it can be directed. Theoretically the heat and smoke enters cabinet high, is pulled down over meat and exits bottom of cabinet because it is the only way to exit. Making for a more consistent temp inside top to bottom.

Is unused metal that was leftovers from project long ago. After building I seasoned it. (Brought it up to temp)
