    my favorite part of this video is in the beginning when steve tells us not to be afraid to leave the onions and garlic alone, and dave just continues to stir nonstop hahahaha

    June 2018, I was diagnosed w/ stage 4 cancer. Turned down all medical treatments & ask my Heavenly Father for insight and directions. Going holistic/natural route with prayers to heal. By August I was completely vegan, mostly raw, all plant-based with no salt, oil, sugar (SOS) or white flour. Found out mushrooms when cooked (more so the white button ones that are large for stuffing) release a substance that helps to kill cancer cells. As of September 18th, 2018, the tumors had stopped growing. My BP is in the normal range (was an average of 140/90 now 116-120/69-72), and I have lost almost 30 lbs. My eating lifestyle consist of low carb foods for now to keep the jump start on killing off the cells. Keep up the good work!

    INGREDIENTS
    -Red onion 1
    -Garlic 2
    -Veg stock
    -Mushroom 250g
    -Tamari 3 tbsp
    -Pasta 250g
    -Cashew 100g
    -Plant milk 500ml
    -Lemon juce 1/2
    -Garlic powder 1tsp
    -Salt 1tsp
    -Oregano

    Recipe: p.s. it doesn’t say the amount usually because they don’t say it so... just add as much as you want
    2 Normal size red onions
    2 small red onions
    2garlic cloves
    Vegetable stock with water (add as much as you need)
    Mushrooms
    3tbsp Soy sauce or Tamari
    250g of pasta (doesn’t matter wich Pasta)
    100g of cashews (optional: toasted)
    500ml of non dairy milk
    Lime/Lemon juice squeeze
    Teaspoon of salt
    1tsp of Garlic powder (or fresh garlic about 1 small clove)
    Add some pasta water to the sauce but not all of the pasta water
    Herb of choice (they used: oregano)
    Optional for people that like it spicy:a red chili
    A tip from me add some freshly cracked pepper I’m not sure if they mentioned it if yes sorry

    I love oil free recipes. I've been reducing added oil in my diet in an effort to lose more weight and it's worked! But I never limit whole food fats (i.e. avocados, nuts and seeds, etc) Thanks for this recipes! I can't wait to make it.

    Nicole here, Robertos wife. I literally have made this 4 times. I doubled the recipe and froze it. It makes a great easy post partum dish. I use lentil noodles. It makes for a great whole meal!

    Yes on the no oil recipes! I went plant-based oil free December 12. I had bought a cane to assist with walking right before Thanksgiving because my knees were getting so bad. In less than five days being oil free and plant-based my knee pain has been gone. I went from needing a cane and every step hurting back to walking pain-free and being able to do my stairs five or six times a day. You are literally one of the few that offer no oil recipes! Plus, I love watching you guys! I’m making this recipe tomorrow.

    Looks super good! But oil does pull out oil-soluable flavours from aromatics like garlic and onions so I'd add a bit just for that purpose. Just a half teaspoon to one teaspoon would enhance the flavour so much without adding a ton of calories.

      Hey Mary! From what i know, heat is a much more important factor to bring those flavours out. And to be honest, i (and all the other people i have ever cooked for) barely - or even at all - taste any difference (and i cook a lot and my sense of taste is very well developed, lol)! It's really not necessary for dishes like those (but i do like and need a bit of oil for my grilled/baked veggies, because they just taste better that way), imho! :)

      Marek, I agree, the cashews add plenty of fat and should probably be balanced with a high omega 3 fat like a sprinkle of hemp seeds.

    Off to make that right now...I'm also using half a zucchini/courgette....20:45 just finished the lot, beyond delicious but I ate way too much and now I'm uncomfortably full....lesson learned.

    Thumbs up for oil-free! I usually just leave out the oil in recipes and it works. Most of the time the oil does not serve a specific purpose. It is the technique, which counts.

    Am I the only one who can’t cook on high heat?.. I feel like everything burns so I cook by putting it on high heat until the pan gets hot and then turn it down to medium when cooking or low if simmering or frying

      Make sure you have enough liquid. If it doesn't have oil or liquid, and it's not non stick, it burns instead of simmering or boiling.

    I made this last night. I have never tasted a such a good mushroom sauce! Absolutely delicious! The only change I made is that I didn't serve it over pasta, but rather zucchini/courgette noodles. The sauce didn't thicken as much so I added a bit of cornstarch. Worked perfectly :)

    Just tried it. I'm no cook, but it turned out well. I don't have a great blender, so I mixed all your sauce ingredients into the mushroom pan. Because I had them, I subbed almonds and thyme for cashews and oregano. Not as elegant as yours, but it tastes very good. Thanks! I'd like to see more of your oil-free recipes.

    Red Onion and 2 cloves garlic in hot pan, let brown for a few mins without stirring. Deglaze with half a cup veg stock. Add 250g torn mushrooms, add stock as it sticks. Add 3 tbsps tamari or soy sauce. For sauce add 100g toasted cashews to a blender, 500ml soy milk, juice half a lemon, tsp salt, tsp garlic powder, blend and add to pan. Let it reduce to thicken. Add cooked pasta with slotted spoon. Add pasta water as needed. Add oregano or chives and sliced red chilli.

    Cashews aren't exactly low on calories (600kcal per 100g). But for me that's a good thing! Love this recipe! SHROOOOOMS!

      And they have around 45g of fat in them so there's a lot of added oil. Don't get me wrong, this is very healthy because the whole cashews add a lot of other nutrients, but his statement at the end that it tastes very light is more likely just imagination.

    You guys gave me the courage to cook fearlessly. No more measuring, close enough is good enough (except rice ratios to water) but other than that, chop, experiment, try out something new, take chances, swap out ingredients for what you have on hand and stop the confounded measuring it is such a time saver! I just cooked three main dishes in that many days that were so good they should be on a cooking show, that, I owe, to you two.

      Oil is bad because you stripped away most nutrients from the whole food and you're left with only calories, which is triple the amount of calories compared to sugar. So i suggest not using more than needed

    Thank you! I love this recipe and did not miss the oil at all. My Chinese friend informs me that if you boil the nuts for around 10 minutes it greatly reduces their fat content, so I am going to try this hoping the recipe will still be as tasty, and if not, perhaps baking them as well. I feel so much better eating oil free vegan food and am really enjoying trying new recipes.

    AWESOME! thanks for showing people that they don't have to "sautee in water" which is boiling and dilutes and steams away all the flavor that you can build from the carmelization. I have been frying onions and garlic without oil and letting the sweat from the veg deglaze the pan for years. If you have a good pan, it's not a problem. Especially for mushroom dishes. In fact I keep cooked mushrooms in the fridge to use the juice to deglaze. Love your recipe. Having a big dinner party and using this. cheers.

    Ive lowered my cholesterol by nearly 40% by cutting out dairy. I was already vegetarian 5 years and still had an elevated total cholesterol. Not any more!

    Just made it and it was awesome, i added more mushrooms 450gms so it a long time to reduce like 30mins, but it had longer to absorb the tamari and stock, vege stock, i also added the tamari to the onions and garlic, so it would absorb that flavour at the beginning.

    LOVE you two! We have just switched to a plant based diet two months ago. Your recipes are my go to place. I'm excited to see the oil free recipes. I always keep my veggie peels and scraps to make my own veg stock.
    I hope mushrooms become a super food. We LOVE them. They give a real meaty texture and absorb the flavor of whatever is being cooked.

    Easily the best thing I ever cooked. 5 star restaurant quality!! It should be noted though that the sauce is extremely high on calories. When I try cooking this again I will have to use 25-33% of the quantity demonstrated.

    Definitely no Oil, I have been cooking my onions for always in just a hot pan, I must say though that I stir them & when they get brown I cook my large variety of veg in the same pan as the onions,
    All the nutrients are saved in maybe one cup of water. I will cook for maybe 10 mins & then turn the heat off keep. A lid on the pan to keep the moisture in & they will continue to cook in the ambient heat
    . I then have to decide how to make some sauce / gravy / soupy something. That is not full of salt. I love salt But I would like something creamy & healthy.
    This is why I am going to do your course. …. Ye are great 🍐🍋🧄🧅🌶🌶🍆

    Shrooms are life! Enoki is a really cool one. Also, cholesterol is great to keep within a healthy range, but more so than that it is more imperative to get your lipoprotein(a) cholesterol checked. Lipoprotein are the vessels that transport cholesterols around our bodies and if they are too large they can start banging up against arties and causing clots. There is not much research out there for various reasons, but I still believe maintaining a vegan diet is the way to go! Love you dudes! Keep up the awesome work!

    I agree about the shrooms. i drink medicinal mushroom tea daily and eat tons of shrooms...I'm getting into foraging and I love it.

    Made this earlier. Really great if you like creamy pasta sauces. I used some oil because my induction hob and wok don't get on with dry frying. Didn't need the stock and still came out fantastic.

    Love the no oil recipes! I made this for dinner tonight. I used half mushrooms and half zucchini because I needed to use it up. So delicious. I also added basil instead of oregano. Definitely a recipe to make again.

    To the comments praising the "no oil" initiative:
    You need fat. Your cell membranes are made up of lipids (it goes without saying that not having the building blocks required for cells isn't something to strive for) and the bad kind of cholesterol is type-B LDL cholesterol which is mainly caused by carbohydrates.
    Yes there absolutely are bad fats, like heavily processed vegetable oils that are sky high in inflammatory omega-6. But don't avoid all oils or fats, you do need them.

    I don't remember how I came across your channel, but just wanted to thank you for your awesome recipes and videos.
    I just made this pasta dish for the 4th time, this time using pasta made from green pea flour and every time it's just so delicious.
    Cooking the onions and mushrooms without oil and getting that charring on there really brings out so much flavor!
    Recently made your vegan palak paneer too, it was awesome and my gf loved it as well.
    Keep it up guys, you're the best!

    The good thing about using Extra Virgin Olive Oil is that scientists put the extra long lifespan of Mediterranean countries down to diets high in EVOO, plus it’s also very good to fight against arthritis and heart disease.
