It was a great tip to leave the sauce a bit runny. By the time you sit down to it, it thickens up perfectly. I added pancetta and some diced onion that I needed to use up. Absolutely delicious!
I like to add extra amounts when it comes to the sauce. It looks like soup in the pan at first, but I just transfer the extra sauce to a small pot and keep warm. Bring that to the table with a lid on it and people can then get a little extra sauce for their noodles if it starts to thicken up too much.
I made this last night and it was delicious! My husband said, “This is good enough for company!” My only quibble- the written recipe says, Prep time: 5 minutes. Really?!? It takes me 5 minutes just to gather all the ingredients. 😂

@@KD-vf6yq Pasta water! The starch from the pasta will add to the creaminess without too many extra calories! :) I do the same as the cook here, change it up a bit, depending on the mood. Use about a ladle of pasta water, but mainly, watch the overall consistency of the sauce.

If you accidentally add too much, just add a little cheese and it will thicken back up. It's better to do a little at a time, rather than keep adding cheese/water back and forth and end up with too much cheese.

I’ve made this several times, always delicious and so quick and easy. I’ve added things occasionally - white wine, pancetta, oregano, thyme. Also have used sour cream instead of heavy cream. Fantastic recipe to have in your repertoire, good enough for company but also for quick weeknight suppers. Thank you!

A good tip I feel is keeping the stems from the parsley, cutting them very small, and putting them early on in cooking. They boil and don't affect the texture, but they leave a good aroma that fresh parsley cannot provide. Very much used when cooking aglio olio pastas.

what I love about your videos is the slow pace - so much of youtube is fast cuts that are hard to watch and follow without having to pause or rewind. and you show realistic expectations of things like chopping, its reassuring to an amateur. you don't presume expertise from your audience and its a better experience because of that. The general tone is welcoming, not intimidating. it feels like someone showing me in person rather than behind a camera crew with lots of cut-aways to hide the messiness of real cooking. thank you for this

I made this tonight! Delicious! I did make some changes. Because of high cholesterol I used fat free evaporated milk and I added a little wine. I'm gluten free so I used gluten free Jovial pasta fettuccine. Absolutely delicious! 😋 Thank you so much.

Just some advice from one cook to another, I would cook the mushrooms down until the liquid burns off to an almost caramelized texture. Set aside, then when your sauce is nearly done add them at the end. The mushrooms will still take on some of the liquid but you'll be left with a better flavor and texture.
I made this and it tasted wonderful. I also simmered the mushrooms in the cream for a few minutes before adding the pasta / pasta water. Helped to infuse more of the mushroom flavor throughout the sauce.

@@hejhejaske I have Parosmia - which is a smell and taste disorder in which I can smell but the smell are distorted; for example, all meat now smell bad, like rotten or spoiled. That affects the taste as well. If something smells bad, it's gonna taste bad. It happened after I got Covid last year, and I did lose my smell for a few weeks, recovered fully and then after 3 months of normal smell, developed Parosmia. It's like that since March, it's getting a bit better, though.

Add a shot of white wine to the mushrooms... instead of the pasta water, before adding the cheese and the cream. The alcohol will evaporate but the taste stays!
Made a giant batch of this for the guys here at the fire hall. We loved it and will do it again! Everyone raved about it. We did grill a little chicken on the side with it and a salad. Can't wait to try another one sir.👍🏼
Looks like a great recipe. 1 thing I would add is to let your pasta steam dry for 1-2 minutes after cooking it. This allows excess water to evaporate off the pasta and allows the sauce to be absorbed into the pasta

This looks delicious...now if I could get my husband to eat mushrooms! The first time I had pappardelle was also the first time we made Sunday sauce with short ribs. Now we use that pasta anytime we need a wide pasta.

Aw I missed James’s rating! I am making this tonight. We have a foot of snow in the yard and my hubby wanted some pasta. We live in Northern NV about 20 minutes from Lake Tahoe. Thank you Jim, you do such a nice job of explaining everything.
By far this is one of my favorite dish. Linguine with Porcini mushroom sauce is the typical dish of the Roman Lazio region. Goes well with a light white wine. This is an excellent summer country dish. I just add some porcini mushroom to spike the mushroom flavor a little and its AWESOME! ⭐ 👍 ⭐ I fell in love with this simple dish while travelling through the Autostrata in Lazio's rural town and stopping at a restaurant for a meal. Its still my favorite dish.
I coincidentally make my mushroom cream pasta similar ro this for years now, through coutless small improvements I came up with over time. I really think this dish gets elevated by adding just a little bit of some kind cured ham, cut into small pieces and fried till it's crispy. I usually use the kind of slab bacon that's common here in Germany. Tastes similar to regular bacon, so that would be fine as well. Basically, anything fatty, meaty and cured would be fine, though. Not much, maybe 30 grams per serving or so. Also, American Parsley looks so different from European one. How does it taste though? Is there a noticeable difference?
Made this tonight. Used parmesan instead of pecorino because it's just what I have on hand, but I think that's a minimal change. It's rare I have meals without meat, but this one was very good, honestly. I'll definitely make it again sometime, as it was also very easy and quick on top of being quite good.
This would be an excellent side dish with a steak, next to some fresh broccoli to help cut the richness of the two. You could even omit the noodles, use a little more garlic, cook the mushrooms with onions, keep the sauce thicker, and use it as a topping for your steak also.
I'm definitely making this for dinner next week. Having gone through breast cancer and having to change what I eat they said I eat all mushrooms I want only hard cheese and this cheese is ok surprisingly I can have pasta to this great. Thank you

In the nonstick pan I don’t think they will get to that state… maybe 🤔 separately in a cast iron pan
@@sahej6939 I generally don't use nonstick pans if I can help it. They aren't very good for most cooking. Stainless steel is the way to go 🙂

I usually do a similar recipe, but adding roquefort/blue cheese to the sauce instead of romano cheese, it is awesome!

This is a family favourite. I sometimes add a small amount of Dijon mustard for an extra layer of flavour.

I do use alcohol every so often. But for this dish and many others you can get great results without it. Thanks for watching!
Add a shot of white wine to the mushrooms... instead of the pasta water, before adding the cheese and the cream. The alcohol will evaporate but the taste stays!

Looks like a great recipe. 1 thing I would add is to let your pasta steam dry for 1-2 minutes after cooking it. This allows excess water to evaporate off the pasta and allows the sauce to be absorbed into the pasta

This looks delicious...now if I could get my husband to eat mushrooms! The first time I had pappardelle was also the first time we made Sunday sauce with short ribs. Now we use that pasta anytime we need a wide pasta.
It's such a good pasta and the easiest type of fresh pasta to make. I just cut the noodles even wider than store brands. Hope you enjoy it!

I’ve now made this with mushrooms, no mushrooms but with steamed broccoli and sliced grilled chicken, I’m addicted to it. I moved to Costa Rica from the West Coast of Canada where there’s a huge Italian community. 🇮🇹
I needed pasta desperately. 😂 Sourcing and finding all the right ingredients in this Southern beach town was hard, but I found all the Italian pasta and Pecorino Romano cheese through a specialty store. No Italian parsley but cilantro had to do. I’ve shared it with many CR locals who loved it! Now to dive into some others you have on your RUclips channel. 😋🍝

By far this is one of my favorite dish. Linguine with Porcini mushroom sauce is the typical dish of the Roman Lazio region. Goes well with a light white wine. This is an excellent summer country dish. I just add some porcini mushroom to spike the mushroom flavor a little and its AWESOME! ⭐ 👍 ⭐
I fell in love with this simple dish while travelling through the Autostrata in Lazio's rural town and stopping at a restaurant for a meal. Its still my favorite dish.

I coincidentally make my mushroom cream pasta similar ro this for years now, through coutless small improvements I came up with over time. I really think this dish gets elevated by adding just a little bit of some kind cured ham, cut into small pieces and fried till it's crispy. I usually use the kind of slab bacon that's common here in Germany. Tastes similar to regular bacon, so that would be fine as well. Basically, anything fatty, meaty and cured would be fine, though. Not much, maybe 30 grams per serving or so.
Also, American Parsley looks so different from European one. How does it taste though? Is there a noticeable difference?

Made this tonight. Used parmesan instead of pecorino because it's just what I have on hand, but I think that's a minimal change. It's rare I have meals without meat, but this one was very good, honestly. I'll definitely make it again sometime, as it was also very easy and quick on top of being quite good.
This would be an excellent side dish with a steak, next to some fresh broccoli to help cut the richness of the two. You could even omit the noodles, use a little more garlic, cook the mushrooms with onions, keep the sauce thicker, and use it as a topping for your steak also.
I'm definitely making this for dinner next week. Having gone through breast cancer and having to change what I eat they said I eat all mushrooms I want only hard cheese and this cheese is ok surprisingly I can have pasta to this great. Thank you
