I've never had this version with kohlrabit before. I've mostly eaten the cabbage and carrot version which I have always loved. It's interesting that you didn't use the seasoned fish sauce as your dressing. Very healthy!

I grew up seeing my grandmother, mother and aunts using salt instead of fish sauce in it, so I'd never really wondered why. It's very interesting that you brought it up. I think it's because it's usually served in parties and big meals so using salt makes it a light, vegan, healthy salad to compliment rich meat dishes. I've never tried seasoned fish sauce in this kohrabi salad, but I think that'll be good too :D
