When using the food processor to shred or slice, remove the bottom blade. I did the exact same thing Mama Hoss did and it made my hash browns more like mashed potatoes. lol

Thanks for the video. We've been growing kohlrabi from your seeds for two years and love them. Will try fermenting as we've been doing veggies as well. Our favorite way with kohlrabi is for a potato alternative (we're keto) and use them in making hash browns and had Scalloped kohlrabi with a Christmas ham. Everyone loved it and you wouldn't know there were no potatoes in the dish.
Planted some of the Kossak variety this year and I'm just about to harvest. I believe running the kohlrabi thru a cheese grater might suit you best instead of the food processor if you're looking for a consistency of sour kraut. And the 5 tbsp of salt seemed a bit excessive for just 4 cups of water. But it was nice to see you also harvesting the greens as well.

I just eat the bulb raw with hummus then treat the greens like collards. Ive got a few locals hooked on em now that they know what those weirdo flying saucer things are.

I don't know what processor you have so I don't know your attachments but to shred veggies without making a sauce, there should be a top blade that spins just below the lid... leaving the bottom for falling schnibbles. I wonder how that pickle would work with a bread and butter recipe.. hmmm. I haven't had kohlrabi .. is it closer to rutabaga or jicama?
Some respectful constructive criticism: Please change intro sound as we put volume up high to hear you, and then the quality of the music at the intro is quite low so it hits badly on the ears 👂 🎶 thank you
For me,I had to turn up the volume all the way, but then the theme music blasted me out of my chair. I agree that they could play with volume mixing. Turning up her volume level and equalizing out the banjo

We used to slice them up raw and put them on a veggie tray with other raw veggies and dip
