  • This vegan savory loaf cake is part of the “One-Pan Loaf Cake” series. It’s rich in black pepper and olive flavors, with vegan sausage for added protein. Perfect for breakfast, brunch, or a snack anytime you’re hungry! It`s quite easy to make.

    【Ingredients】
    *Mold size: 17.8*8*6cm, yields 4 servings.
    Stir-fried Filling:
    1. Olive oil: 1 tbsp
    2. Garlic: 1 clove, minced
    3. Onion: ½, finely chopped
    4. Black olives in oil: 8-10 pieces, pitted and sliced
    Wet Ingredients:
    1. 2 room-temperature eggs (or 100 g egg substitute for a vegan option)
    2. 50 g olive oil
    3. 50 g milk or plant-based milk
    4. Salt: 2 g
    5. Coarsely ground black pepper: 3 g
    Dry Ingredients:
    1. Cake flour: 130 g
    2. Baking powder: 3 g
    3. Nutritional yeast: 3 g
    4. Vegan sausages: 2-3 pieces (around 80 g), diced

    【Instructions】
    1. Prepare the filling:
    Finely chop the onion and garlic. Dice the vegan sausages into small cubes. Stir-fry these ingredients in olive oil over medium heat until softened. Let cool. Slice black olives into rings and set aside.
    *Tip: Reserve a small portion of the olives and sausage slices to decorate the top.
    2. Mix wet ingredients:
    In a mixing bowl, whisk together all the wet ingredients until smooth. Add the stir-fried mixture and black olives, then mix well.
    3. Prepare dry ingredients:
    Sift the flour and baking powder, then stir in nutritional yeast until evenly combined
    4. Combine wet and dry ingredients:
    Gently fold the wet and dry mixtures together using a spatula. Mix about 30 times or until no dry flour remains. Avoid overmixing.
    5. Prepare the mold:
    Line the loaf pan with parchment paper. Pour in the batter and smooth the surface. Tap the pan on the counter 2-3 times from a height to release large air bubbles.
    6. Decorate:
    Arrange the reserved black olive rings and sausage slices on top for decoration.
    7. Bake:
    Preheat the oven thoroughly. Place the pan on the middle rack and bake at 180°C (355°F) for 45 minutes. Check doneness by inserting a skewer into the center; if it comes out clean, it’s ready.
    8. Cool and serve:
    Remove the cake from the pan along with the parchment paper and let it cool. It’s best enjoyed warm.
    For leftovers, reheat slices in the microwave for about 10 seconds before serving. Wrap in cling film or store in an airtight container in a cool place. Keeps fresh for up to 3 days.
