The density of the oil coating makes your voice sound cleaner as the sound waves travel across the oil, and the resonant frequency of olive oil is so specific as to cancel out reverberations and outside noise. If you take off the foam cover off of a headset mic and give it a quick coating of oil, and then replace the foam, you'll absolutely be able to tell the difference. more unusually shaped microphones do better with other oils, but for a desk or headset mic, olive oil is best.
