- ingredients:
2 cups of water
2 tbsp glutinous rice flour
3 tbsp brown sugar ( white sugaR IS okay )
1 cup garlic (before blender)
1 whole onion Medium size
2 tbsp ginger
1/2 cup fish sauce
1 1/2 cup chili flakes ( for mildspicy you can use 1 cup)
procedure;
combine water and glutinous flour on a pot mix well
let it cook over medium heat for about 10 to 15 minutes until it starts to bubble. Add the sugar and cook 1 more minute, stirring. Remove from the heat and let it cool off completely.
put the rest of the ingredients in a blender and mix it with the glutinous paste,
and ready to use for kimchi making

Oh! I made it today and left it to ferment .....I am still uncertain about it because I have a very bad spice tolerance and also I'm vegan so I added soy sauce instead of fish sauce......but let's see how it turns out for me!!

For a little context, my family is always a little skeptic about foreign meals but they really liked it too they said they scented home in this recipe

simple rice flour will work?, not able to find some ingredients, what to do Abbhas
Just grind rice in a coffee grinder and use that. I've made lot's of kimchi using this method also the amount of garlic is way to much will destroy the taste.

@@zeena8955 rice flour. The above video uses glutinous rice flour which is sticky rice flour.
However, if you can't get hold of it in the country you're in, try it with rice flour.

British man here,Recently I bought some kimchi from my local Asian shop,taste was OK,but not sure if the fermentation time was appropriated OK or not maybe has been prepared quickly I'm not sure, I thank you for sharing your video with us,will try to make my own kimchi with your sauce.
Homemade kimchi when done properly always tastes best. If you're going to buy ready made kimchi I recommend a brand called Bibigo if you can get it. A lady called Maangchi on RUclips has really good Korean recipes. Good luck :)

I'm sorry, but it is painful watching you peel onions, garlic and ginger when there's ways to do it quickly! Bash the garlic with the back of a knife to peel easier, peel the ginger with a teaspoon and cut the onion in half before removing the roots and tip, then the skin comes off easier and it burns your eyes less.
I cut the root bit off, smash with the side of a knife and use the tip to pull the skin off. Unless for some reason I need to do it the Goodfellas method. Then I skip the smash part and peel by hand before using a razor to slice :)

Psssss just put the garlic bulb in a sealed jar. Shake that mfer and it will peal it's self. 🫣🫡

add soy sauce to the liquid until it tastes as salty as fish sauce (meaning REALLY salty). if you don't want the sauce to discolour your dish, use sea salt instead of soy sauce

I wanted to know if using ordinary chilli flakes or dried chilli instead of korean chilli flakes makes it any different? I mean in regard of taste and all?
I think its the same although i only use korean flake,
Put less as for gochugaro is much milder

Just a tip. If you're on a budget like the rest of us a knife and cheap cutting board would work. Just mash everything after wards with the handle of the knife.

Korean spice flakes, I understand, called GOCHUGARU comes mild or hot. A brand recommended by one Korean food chef is BITGGALCHAN. Hope this helps.
