    If you want to make a real Big mac replica you need to use 4x the lettuce, and then put the cheese half on the burger, half in the box. ;)

    Great recipe man!
    One tip given to me by a cookout guru- have a spray bottle of water handy,cook your patties first..When you flip the patties,lay the second sides on new,untouched sections of the griddle.
    Once the patties are done and resting on the back tray,spray water over the sections of the griddle where they've cooked,and as the water sizzles off, toast your bun faces on there. That way the bun retains moisture,browns rather than going black,and gets infused with the juices from the cooking beef.
    Maybe it'd be more relevant to a copy of a Whopper,where you're going for a more intense meaty taste,but it adds SO MUCH flavour to your finished product.

      It's closer to the real thing with a dry unseasoned browning on the buns though. I've tried both ways.

    As I remember the original method for preparing Big Macs in the 70s was to put the onions onto the burgers as soon as they were turned. Then place the toasted crown on top of the burgers and allow the steam from the burgers and onions to rise into the bun. This makes them delicious.

      Michael Raines They do not put onions on the burgers anymore that way if someone orders one without onions they can do it faster.

    As a German, I have to say you did a pretty german job about researching and analyzing this whole BigMac thing ;) I just cooked one myself, but I always leave out the club part and in the end I just mix up some kind of BigMac sauce that suits my taste. About the taste of the original burger, I absolutely know what you mean! Since I guess the german and the american BigMacs should taste pretty similar, the bun is super soft and all the ingredients get together to one singular mash, that tastes much sweeter than those I make at home. One thing that makes my burgers taste so different from those bought at Fast Food Franchises, I usually kinda "fry" the patties using lots of fat so that they get a nice crust and a "charred" taste. I don't do it like they do it at "Dyer's Burgers" in Memphis (first seen it on the stupid tv show "United States of Bacon" - yes, this was aired on german television! :D ), but the thin patties swimming in oil really made me reconsider the way of cooking a nice burger! Anyways, love your channel for the huge amount of burger recipes, although I know only few of the original ones ;) Greetings from Hagen, Germany!

      Tanner Bodie If you think that's bad a couple of years ago the Ashington McDonald's branch in the NE of England got shut down because they found more than 3 different sperm counts in there mayonnaise......When I was growing up in Australia in Perth I knew a lass at my school who worked at midlands McDonald's branch and use to tell me and her brother about the male staff jacking off in the mayonnaise.......

      I remember Big Macs being encased by a white cardboard band with the Golden Arches on it and a tab and 3 - 4 slots to tuck the tab into which was placed in a white cardboard box with a tuck in tab for the lid. I believe the box had the old circle and arches M.

    Well, I appreciate your concern. I am less than a year from 50 years of age and I work out four days a week. Most of my hobbies are pretty physical, such as backpacking and rock climbing. The meals prepare on video do not represent my daily diet.

    That looks spot on. I generally try to avoid McDonalds but a big mac or a 1/4 pounder once a year or so makes a good treat. Looks way better when made at home!

    When I used to work for McDonald's they got six burgers per pound and used it for their hamburgers, cheeseburgers and Big Macs, and these used to always come frozen to the store. (They'd also use rehydrated onions for these burgers. The Quarter Pounder came frozen and there were truly four patties to a pound and for some reason they used regular (fresh) diced onions these. Yes, Big Macs, once cooked, were probably about a quarter pound worth of beef, so the patties were relatively small. (The sauce for the Big Mac came already prepared to the store, so I had no idea what all was in it.)

    I made this tonight. I am a bit of a perfectionist with any recipe I try. And for one, the sauce is pretty exact.. Kudos on adding sugar. Also, the thin patties, using the second bottom bun! This worked out perfect. If I could post a picture, it would be the nicest mac you would see. Compared to the "big" guys. I used cast iron and 80/20. I will use this method from here on out.

    As someone who made thousands of these in high school, I'd say you pretty much nailed it. Not that I have the most discerning of palates, I think I taste just a bit of lemon juice in the sauce.

    Cool video. I used to work for a NorCal co. that was a distributor for McDs. We had a dedicated bakery next door...the best thing in the world is a hot off-the-line Big Mac bun! The beef patties are either 6-1 or 4-1,the sauces are all in caulking gun tubes. We used to make our own Big Macs, Quarter Pounders and McRibb sandwhiches out of the "recoop" (damaged packeges) inventory. Awesome!

    McDonalds buns are very sweet for a bun I think they must have lots of sugar. It's what gives you that bloated, sick feeling after eating any of there burgers, their meat is pretty nasty too in my opinion. The Big Mac is nothing like it was in the 1970's and early 80's, it was much bigger and better tasting than todays Big Mac.

    Man, your are duplicating these burgers in a very realistic way! That looked just like the Big Mac! Homemade tasting would be better for sure! The Royal with cheese, I mean the 1/4 pounder with cheese, lol, (Pulp Fiction) has always been my favorite McDonalds burger.     Great video as always. Thanks for giving me so many ideas/recipes. I laughed when you talked about your burger not having a "mass produced/industrialized taste".. because I know what it is, and could possibly get you a little closer. It's just simply MSG. Lol season your sauce with it, and your burger patties. Also, seasoning your flat top with beef tallow could help as well.

    He's spot on with that middle bread. I frequent a late night McD and they were lazy. I'd often complained because they just threw a bottom bun in the middle and thought I wouldn't notice. I did and I complained about it. They fixed me another one and I noticed it had been cut.

    I haven't had a chance to make the burger yet, but I tried the sauce and it's great. I made it, let it sit a few hours to marry, like with most sauces, and when I put some on a sonic burger, it tasted like I was eating a big mac. Thanks man. I'll try the burger as soon as I can.

    This is the best Big Mac recipe video that I have seen on RUclips ! You are very painstaking in what you do, it's great.
    Unfortunely, in France we don't have all of those ingredients (sweet relish for example), but I've founded an american market online. So I will test it soon.

    Mcdonalds uses dehydrated onions for the Big Mac, hamburgers,cheeseburgers, and double cheeseburgers. And the quarter pounders they use diced onions.

    nice video! from my research i determined that there was some kind of filler in the patty mix.. i use salt and breadcrums (15%) and leave it for a day, works really well with the texture and makes the beef easier to work with. I also put the cheese on the burger after i flip it to help it set.

    "Two all beef patties, special sauce, lettuce, cheese, pickles onion on a sesame seed bun (tm)" McDonald's came out with the big mac 1968. It was a copy cat of Big Boy Inc.'s double decker hamburger + pickles & onion. note; Bob's Big Boy (1938) has mayo & red sauce & Frisch's Big Boy(NW Ohio) uses tarter sauce & pickles.
    I worked at a IHOP in 1972. they also had a copy of the Big Boy Inc. #8 (1/8lb) frozen patties cooked on a griddle. Special Sauce came out of a 1 gallon jar of Kraft 1000 island dressing. Tasted exactly like a Big Mac.

    If you like the Big Mac, but don't want to pay $3.50 for basically a glorified $1.19 McDouble, here's what you do. Order a McDouble without mustard and ketchup. Ask for Mac Sauce. And then order a $1 Spicy Chicken (and a fork). Transfer the lettuce from the chicken sandwich to the McDouble and basically you have exactly a Big Mac except for the sesame seeds and an extra bun. You also get a chicken sandwich out of the deal. (I ask for extra pickles on it.) It will cost you less and you'll get more.

    I'm pretty sure they use rehydrated onions, you can't help but seeing them on their burgers, or use to. I know they use fresh, but on the plain cheeseburger or plain burger, I use to see and taste them, so I put some on my son's with pickles, mustard ketchup, and the first thing he said was it tasted like , Mac, D's. Onion powder also gives that flavor if you don't have the dried onions. The buns make such a difference too.

    It would work, but I compared it to the actual stuff and it isn't the same. That being said, Thousand Island dressing is one of my personal favorite burger toppings. Hate it on a salad, but LOVE it on a burger!

      Vic Vinegar That is 1000 Island dressing. He just broke down the recipe for us. If he had simply used about 1-2 tbl spoons of Ketchup instead of the vinegar and sugar, he could have gotten the same results.

    At one time, I worked at McDonalds. Occasionally, we would run out of the Big Mac "secret" sauce. So we'd substiute a mixture of mayo & thousand island dressing. Apparently, no one ever noticed the difference.

    i just came across your video while searching for a good bicmac recipe. did this exactly your way and it was just amaaaaaazing! my wife loves the big mac and even she said: wow, this just tastes like a real big mac!

    Thank you! I've been researching White Castle burgers and they too use dehydrated onion. I reconstituted some just to see how they taste and yeah! Totally like Mc'D's. Thanks again!

    Long ago (1974) as a kid I worked at a McDonald's for awhile. The onions were actually reconstituted dehydrated onions. The patties were frozen when they hit the grill top and they always used presses on top of the patties as they cooked. Yours looked like a pretty good burger though!

    the original big mac is made with 2 x 1/10 pound (50g) meat patties , 2x 1/3oz (10ml) of sauce, 3.5g of rehydrated onions, 2x 10g of iceberg lettuce, 2 slices of pickled cucumbers on top and a slice of "cheddar cheese" (artificial cheese thing) on the bottom. Except of the toasting on the bun, this burger looks perfect. Great job!

    Nice!... When I was a kid in the 70's, I had the T-shirt that had the Big Mack on it.. It said in between the buns, " 2 all beef patties' special sauce, lettuce, cheese , pickles on a sesame seed bun!

    Hi. Just posting again so you get some activity on this video. It’s under my favourites and just made it again today. I use Yves veggie burgers and slice them in half (I don’t eat meat). Your sauce is bang on! Love it still to this day.

    IT IS AWESOME! I miscounted my sweet relish though (duh) and when I went to put another tspn in, I grabbed my dill relish instead.... TURNED OUT GREAT! I also put in a tbspn of ketchup along with the mustard because, hey, red is a nice color! :) AWESOME Vid, awesome recipe and that grill plate REMAINS sick awesome to this day! Thanks for all, bud!

    probably like they used to be originally. my husband worked there back in 60s..he said he had made a sauce using ketchup and tarter sauce and put it on his own burger while he was at work.. he always jokingly thought..Hey..I invented the special sauce! He still likes to make up stuff weird like that and hes 70 now. Thanks for sharing..That used to be my favorite burger but not so much now that Im in my 40s and do all sorts of cooking.

    I like that you openly say things about the way "they do it", yet do it your way, because that's the way you think it's supposed to be. That's tough.
    & that's great.
    Burger King focused on " You can have it your way" .
    McDonald's focused on the "You deserve a taste today."
    BigMac, an how so few know that Frish's Big Boy has the same sandwich,
    with a "Double~Cut~Bun".
    It never ends with this fun food.
