    I've made your original Big Mac copy cat many times, and the one thing I've found to make it even more authentic tasting (and what McDonald's actually uses) is rehydrating dehydrated onions, and using those instead of fresh onions. They actually go well on a lot of burgers, and have a different more intense flavour. Of course I love fresh onion on better burgers, but for a Big Mac rehydrated work perfectly. Give it a try if you haven't before, it gives burgers more of a "Fast Food" flavour :).

      As an ex MC employee. About the rehydrated onions it's very true and sauce goes on top not on the bottom helps people get addicted xD

      McD's original seasoning for their burgers also gives them their classic flavor. 4 Tbls of Salt, 2 Tbls of Accent, 1 tsp black pepper and 1/4 teaspoon of onion powder; mixed up real good, then sprinkled generously on the patties. I agree with the rehydrated onions and sauce being on top too.

      Also, put those rehydrated onions on the actual burger after flipping while it is still cooking and let them absorb a bit of the burger's juices. McDonald's was my first job and that's what we did.

    Greg, one of their main "secret" ingredients is Turmeric powder. Give it a puff and all a sudden it tastes more like that classic mac sauce

      @@mattl9070 for that amount of sauce, "a puff" from a bottle, or a pinch would do, which I guess would be about a 1/4 teaspoon

    Nice reproduction! I had a Big Mac several years ago after not having ome for a long time. They are no where near what they were in the 70's. I still remember the jingle! Yeah, I am that old...😳

      mickeys is just like all big-business- they are good at cutting costs and cheaping out on their products. look at what kraft, nestleys and hersheys have done to the brands they've acquired....

    Dear Greg, I tried your recipe a few times and I've been satisfied with it. But I recommend you to use dehydrated onions instead of fresh ones (at least that is what they use at McDonald's here in Germany ). In order to get even closer to the original I freeze those patties before I'm putting them on the griddle 😊

    looks decent. But for the onions, take minced onion from the seasoning isle, pour some into a cup and cover them in water and let them sit overnight. That will give you the Mcdonalds onions. Also, use different pickles. Thin burger pickles from Walmart are closer to to Mcdonalds pickles than Dill

      There is no comparison. If for no other reason, Sam couldn’t put a RUclips video up by himself if his life depended on it. He’s a talking head. That’s not a shot at Sam, I’m sure he would tell you the same thing.
      In contrast Greg is running five cameras, does all his own editing, and actually researches his copy cats instead of just using the name brand for clicks and then whipping it out with whatever is in his fridge.
      I personally don’t have anything against Sam but from the perspective of a RUclipsr, this is a little like comparing Britney Spears with Bob Dylan. There’s no doubt Sams way grew his channel faster than the rest of us, so good for him. It’s just not in the same ballpark as what Greg does. Greg is the total package...and a heck of a great guy too.

    As a kid my first job was a cook at mcdonalds, there is only one layer of onions and we ran out of sauce all the time, we then just substituted with 1000 island salad dressing, them telling me it was the same thing just a little runnier

    Awhile back i came across the big mac sauce recipe that was included in the 1968-1969 McDonald's managers handbook. It was used as an emergency back up recipe in case a particular restaurant ran out of sauce it consists of:
    1/4 cup miracle whip
    1/4 cup mayo
    2 1/2 Tablespoons wishbone deluxe French dressing
    1/2 Tablespooon Heinz sweet relish
    1 Tablespoon Vlasic dill relish
    1 teaspoon sugar
    1 teaspoon white vinegar
    1 teaspoon dried onion flakes
    1 teaspoon ketchup
    1/8 teaspoon salt
    Mix well then zap in microwave for 25 seconds then mix well again, let it chill in fridge for a couple hours. You should make this recipe and compare it to your own.

    Gotta say. Props on using the right size patty and actually building it right. (1.6 oz patties and 1 slice of cheese) I've seen too many ppl make a "big mac" and use 2 slices of cheese or bigger patties bc it will be better that way.

    Greg I agree ,yours is the most authentic(Guga went crazy on his)I like that u said the "old Mcdonald's"which was so much better.I'm old enough to remember 15cent burgers and 19 cent cheese burgers.

      actually macdonalds were 10 cents until about 1963. when they went up to 15 cents, our world stood still. candy bars had just doubled in price- everything was going to hell. twinkies were now 12 cents OMG!!

    Hey Greg. Love both channels! You may still have Hamburger Hamlets in CA but I doubt it. I worked at one on the East coast. They had a cajun turkey burger that was pretty damn good. Would love to see you recreate it.

    Any way to make it so the burgers don't shrink up on me? That seems to happen quite a bit :/

      Use a lower fat content burger like 93/7. I use that but add my own oil. Try a tablespoon full of Olive oil and a tablespoon full of water mixed in with the meat then fry, they stay moist and don't shrink so much. This works for venison too. More or less oil and water your call.

    The Big Mac is such a unique burger. It has never been my favorite, but it is definitely a classic piece of Americana and I can't think of another burger like it anywhere but McDonald's. Yours looked pretty authentic! 👉💨

    I never realized until this video that the Big Mac was less than a quarter pounder. I've eaten a ton in my day and always thought they were a quarter pounder. But I loved them

    You need to start adding ground liver to your burgers, soak in water first then process it. Alot of places use organ meat in their pre made burgers. You'll understand once you make and try it.

One request can you do a video on how you would make a basic burger...what meat, buns, how would you cook it, any simple condiments or toppings ....just a good basic burger....I would appreciate that as a starting place

      there are many different ways to make even a basic burger- right down to what kind of meat and what amount of fat, and what types of grease to use on your griddle. if you can imagine this video without adding the sauce and condiments- you would have a pretty good idea of the basics involved in creating a good burger.

    Will dill relish instead of sweet relish make a difference? I only buy dill relish, and I don’t want to buy a jar of sweet relish just for a couple of teaspoon fulls.

    Great lookin burger Greg. I'm not a big fan of the Big Mac only because of the extra bread but when I go to McDonald's I do get the double quarter pounder with Big Mac sauce. Great video brother keep up the great work.

      that makes no sense- the QP buns are way bigger than all 3 pieces of the big mac buns. youre eating more bread (and a lot more fat) with the double QP

    I remember when the Big Mac seemed a whole lot bigger. Now they look more like Baby Macs. I like your authenticity, but I'm betting most home cooks will go with more meat, more cheese, and save that extra bun to build an extra burger. Not to be nit-picky, but three teaspoons is the same as one tablespoon, and it's easier to measure one of something than three. By the same token, four tablespoons equals 1/4 cup.
