I used to work at McDonald's in my teens & the Mac Sauce had a very distinctive flavor as well as odor...the individual McDonald's locations did not make their own sauce but brought it in premade from the corporation. At some point in the '90s there was some slight change to the ingredients and it never tasted the same to me...close, but not the same. When I made my own at home recently using the recipe you shared I instantly could smell & taste that this was the original Mac sauce that I was used to as a teen working there.

If McDonald's used something like Hollandaise sauce sourced outside of the manufacturing facility where Big Mac sauce is made, the cost of the final product would soar. Shoutout from norway! I just made this without measuring. Just from tasting. I had to add finely chopped pickles and abit of sugar instead of sweet relish. I altso added 1/4 of an white onion and graded it til it basically turned into mush or what you might call it. Tasted amazing!

Thanks for the recipe. Another even easier way to measure sticky/goopy stuff like mayo (or pretty much anything else for that matter) is to weigh it directly into the bowl you're mixing it. Save you having to clean a measuring cup and fuss with cooking spray or silicone spatulas. You can get the conversion by looking at the nutrition label and doing some basic math. For Hellmann's mayo, the serving size on the label is 1 tbsp or 13g, and there are 8 tbsp in 1/2 cup, so you would weigh out 104 g directly into the bowl you're mixing the sauce in. Kitchen scales are cheap - you can get them for as little as $8. This doesn't work great with a typical kitchen scale for very small quantities, because they're not that sensitive to small differences (5-10g). But you could get another scale that is calibrated for the smaller amounts (like a digital pocket scale, which are also cheap), or just use teaspoons/tablespoons for the small amounts like the spices.

I was skeptical of this recipe . . . like so many others . . . I did not have sweet relish, but did have bread and butter pickles. . . Made this sauce and am very pleased . . . ended up with Big Mac sauce!

Sweet Relish = Gherkin Relish in Australia. PAM spray = Canola Oil spray. * It might be worth mixing the Onion and Garlic powder & maybe the paprika with the vinegar first to make a paste. @@marvin59vongeest79Half a cup translates to approx. 125 grams. For my version of this, I use 120g mayo and a finely chopped gherkin as here in the UK I can't easily get the sweet relish. I've made this several times and it's delicious but I think I should perhaps be adding half a teaspoon of sugar which I've not tried yet. Burgers for Tea tonight so I'll try adding the sugar.

Rick, Thousand Island Dressing is a good substitute but it is not the same as Big Mac sauce. In fact, when I don't feel like working in the kitchen, i use a Thousand Island dressing all the time. Mike 🧔
I worked at McDonald's as a kid. It's cold when taken right out of the fridge and it goes fast so will only warm up to room temperature during dead periods.

Because I've never had a Big Mac I've never had the Mac sauce, but I know people who love it and order extra. I'm going to make it and put it on my vegan burger. Thanks for the recipe. I'm looking forward to trying it to see why people love it.
I have made this a dozen times or so form the original McDonalds Chef video, it is spot on! I use low-fat mayo can't tell the difference. One thing i would say is let is set for at least 30 minutes to come together, you can keep the extra for weeks in the fridge. Also you don't need to make the double patty, triple bun. You can put this on a single burger with , cheese, shredded lettuce, diced onion and pickles and you get the same taste. But my favorite is the Big Mac taco's. smash ground meant onto a street taco sized flour tortilla, S&P cook meat side down first, turn it over and cook until done, put on the same toppings on and eat it like tacos, my son loves them and low carb!

Mark you can do that if you like. But there are no onions on Big Macs. There is however onion powder in the Big Mac sauce. The recipe in the video is the exact recipe used by McDonald's. Mike
I don't know how much difference it made but I added turmeric because it's on the official ingredients list, comes out pretty much identical to what's on the burgers.

I have followed their recipe like this before.. they are leaving out something! In my opinion, it is ketchup! Big Mac Sauce is much more red than what this results in and more sweet/ketchup.
I'm not sure what recipes you are following, but I assure you my friend, there is absolutely no ketchup in Big Mac sauce. My guess is some recipes suggest ketchup because there is often a reddish tint to Big Mac sauce. And that is because of the paprika. Mike 🧔

Following up on your statement that "The exact measurements must be followed"~ I noticed a discrepancy in the written recipe calling for a half teaspoon of white vinegar. In the video you spoke of adding "One half tablespoon" to the mix. Please clarify, otherwise enjoyed your presentation.

@@marvin59vongeest79Half a cup translates to approx. 125 grams. For my version of this, I use 120g mayo and a finely chopped gherkin as here in the UK I can't easily get the sweet relish. I've made this several times and it's delicious but I think I should perhaps be adding half a teaspoon of sugar which I've not tried yet. Burgers for Tea tonight so I'll try adding the sugar.
For a nice burger sauce, I like to mix about a tablespoon each of Mayo, ketchup, dijon mustard, and a dash each of Sriracha and chili powder.
That sounds like a pretty good alternative to Big Mac sauce. Thanks for the suggestion, Mike 🧔

Rick, Thousand Island Dressing is a good substitute but it is not the same as Big Mac sauce. In fact, when I don't feel like working in the kitchen, i use a Thousand Island dressing all the time. Mike 🧔

I worked at McDonald's as a kid. It's cold when taken right out of the fridge and it goes fast so will only warm up to room temperature during dead periods.

If I order anything but the Mac I always have them put Mac sauce on it - it makes any of their burgers taste like a Mac.

I have made this a dozen times or so form the original McDonalds Chef video, it is spot on! I use low-fat mayo can't tell the difference. One thing i would say is let is set for at least 30 minutes to come together, you can keep the extra for weeks in the fridge. Also you don't need to make the double patty, triple bun. You can put this on a single burger with , cheese, shredded lettuce, diced onion and pickles and you get the same taste. But my favorite is the Big Mac taco's. smash ground meant onto a street taco sized flour tortilla, S&P cook meat side down first, turn it over and cook until done, put on the same toppings on and eat it like tacos, my son loves them and low carb!

Mark you can do that if you like. But there are no onions on Big Macs. There is however onion powder in the Big Mac sauce. The recipe in the video is the exact recipe used by McDonald's. Mike

I have followed their recipe like this before.. they are leaving out something! In my opinion, it is ketchup! Big Mac Sauce is much more red than what this results in and more sweet/ketchup.
I'm not sure what recipes you are following, but I assure you my friend, there is absolutely no ketchup in Big Mac sauce. My guess is some recipes suggest ketchup because there is often a reddish tint to Big Mac sauce. And that is because of the paprika. Mike 🧔
