Lacy thin smashburger, probably 85% Maillard reaction browning, which is optimal for a nice flavouful crunchy (crispy?) texture. I will head in this direction with my next ones to test - I think I would like them. I've been mixing my own super lean ground beef from my own cow with bacon to make up the 20% fat ratio - it works quite well. In the summertime there'd be a line stretching around the corner and extending beyond the back of the parking lot. Customers salivating over the anticipation of wrapping their hands around a Johnnie's Italian Beef "sangwich" followed by a refreshing Homemade Italian Ice! Oh, and on the scene were guys clad in uniform shirts that read "Johnnie's Beef Security" LOL. Ah those were the days... PS - Hey I can take some of those Martin Potato Rolls off your hands! Good video and the sauce looks great! If you don't want to wait an hour, try Hammer Burger in Santa Ana. Same technique on a burger but they are all about the sauces and have a special garlic sauce that you can kick up the other sauces with. Hammer Burger started out as a food truck and now has celebrated their 2nd year as a brick and mortar shop. I've been their several times with my grandson and he agrees this place has it going on. You should try making a burger like this: Dijaise sauce (dijon and mayo) Two 4 oz patties (whatever blend you want, I like chuck, brisket and short rib blend) 2 slices of yellow American cheese, on top of each patty Finely sliced onion on top of the burger thats stand about 1/3 cm off of top of burger I can't get enough of them. Not my recipe; came from my roommate.

Love this one! I luckily had Easy Street before Keith Lee made the wait insufferable. It's in my top 3 brick and mortars alongside Heavy Handed and HiHo, closely followed by Win-Dow. All are exceptionally good, decandent smash burgers with high quality beef. Greg, would you ever consider doing burger tours? I'm sure you could get an outing together to chat burgers and make your trips profitable off the bat.
I agree with you about the Martin's buns! They use them at Shake Shack, they are the best and really make the burger! But they are expensive! The burger looks good. The sauce looks even better. I'd go for the jalapeno one, or one with grilled onions. As for the smash...I don't think extreme is the right word. Maybe absurd? You said it, it's like a cracker. You smear a paste of meat onto a grill until it turns into a cracker. I don't think this is what the father of the smashburger had in mind. But it's just my opinion. Great video as usual Greg!
I’m guessing that Martin’s is coming to your neck of the woods soon. I live in Texas and they weren’t available for a long time after I heard about Shake Shack using their buns. Now, they’ve been available here in most grocery stores for about two years and they also sell hot dog buns and sliced sandwich bread. So, be patient. I think you will be pleasantly surprised someday. Cool video!!!
These look a lot like Steak & Shake burgers, when it comes to the thinness of the burgers. I agree with the double cheese. If you didn't have that, they would be very dry... Great video!

While i like smash burgers, i think that takes it further than I'd like as I generally think past a certain point the texture no longer feels like a burger to me. But who knows until you try it, maybe going even more extreme brings it back home for me. i may give it a go soon.

I bought that steak weight, and while expensive and way overkill for me. It's awesome, at 2.5lbs it works great on top of my grilled cheese to get it more evenly grilled. Basically anything I grill I set this on top to get a better sear. And while a big spatula will make a great smashed burger. This being as heavy as it is takes less effort and I don't tear the patties like I sometimes do with a spatula. Greg's a 9th degree black belt at making burgers so he doesn't have my issues. But I have ruined a few smash burgers using a regular spatula lol. While cost alone most wouldn't even think about buying it, if you're dumb like me it's an amazing kitchen tool. And I can confidently say it will last forever.
And seriously I have been subscribed for a few years, and I noticed that you Really REALLY deserve more Subscribers. All of the research you do. So everyone Hit the Subscribe Button, Already!!! P.S. I really like raw Jalapeno but I had Diverticulitis so I don't do Any seeds

I'm not a smash burger hater by all means. But this is going to extremes. I wouldn't even get in line for one much less stand in it for an hour. At least you won't have to worry about food poisoning from the beef. 😂

Raw jalapeños on burgers are APEX. They have this bright, “green” flavor that when combined with the fattiness of the burger and sauce is indescribably delicious. I slice them thinner than we saw on this video, and as I get close to the stem where the seed and pith are dense, I slice the green part in a downward motion away from the stem so it leaves the seed/pith core attached to the stem for disposal.

I love your channel and appreciate that you reverse engineer these famous burgers. That said, I can’t believe people wait in line for an hour for these particular burgers. They just don’t look very impressive.
They opened a location near me in LA. Tasty as far as a smash burger but overall I wasn’t impressed. Way too long of a wait for what it is and fantastically overpriced. Also have to get at least a triple for it to be even remotely substantial as a meal.

Yes, I've done a couple videos on the other channel using a tortilla press. Very good technique!
As far as the bread and buns you don't use dry the bread out and make bread crumbs with a cheese grater.
Times are hard and any little thing helps.

This isn't for everyone, but it is worth a try. It's good and very similar to Red Hot Ranch in Chicago. Another top rated burger.

If you "hate" a smash burger see a doctor.
Charbroiled burgers are still the best burgers. The smashburger phase will end and people will go back to grill/fire and larger patties.
