I am following plant based lectin free so I put 3/4 TBS of Monkfruit sweetener in mine. I will try this recipe again using my kitchenAid. I made it with a mixer and it didn't come out too fluffy.

How stable is it? Do you have to do any of the stabilizing methods that you would use for regular whipped cream?
Hey Kim! It’s actually really stable. It’s got a nice rich and creamy texture. No stabilizing methods needed. It keeps well in the fridge too and doesn’t break down, you can just spoon it over whatever you like!
How does the taste and texture of coconut whipped cream different from dairy whipped cream?
It’s honestly really close - just a hint of coconut
How long should I chill the coconut cream in the fridge? Does it need to be overnight?
I usually do overnight (or rather just keep a can in my fridge so it’s ready when I need it) but I bet an hour or two could probably do it.
I’m no vegan but because dairy has phosphorus ( I have CKD) and need to limit that, this would be a great switch.
My favorite dessert with whipped cream is a bowl of frozen berries :)

I like the whipped coconut cream because cool whip turns sour in my stomach and is a hot mess, with acid reflux. Its like I drank sour milk. And heavy cream, while good, can sometimes bother me in other ways. Dairy only bothers me sometimes.
I am not plant based diet, but like to eat more plant than prepackaged garbage.

I don’t used bleached sugar what else can I use?
Hmm maybe try adding a touch of maple syrup or agave? Or a stevia, either powdered or a couple drops of liquid?
What to do if it just separates like curdled milk and doesn’t whip?
Make sure it’s cold from the fridge (I leave mine over night at least) and don’t use the liquid from the can. Otherwise try another brand and be sure it’s whole fat coconut cream. Not canned coconut milk. And be sure the brand you use has only coconut and water. If it has any emulsifiers in the ingredients those can cause it to not whip properly.

Hey there! The consistently is closer to cool whip then frosting but I think it’s well worth a try! If you wanted it to be sweater you can always add more powdered sugar! Let me know how it goes ❤️❤️

Using Trader Joe's organic Coconut Cream and i took out and discarded ALL the bottom liquid but its not thick and fluffy like whipped cream, more like a thick glaze texture. Whipped for 5 solid minutes 😢
Hmmm, ya I’ve found some brands just dont seem to work as well. Don’t give up, try some others until you find one that works right for you. Also don’t forget to put it in the fridge first - I’ve definitely done that and was so confused when it didn’t whip up right.
