    First of all, I DON'T use coconut milk!! I was using coconut milk before but I don't like the smell of coconut. but this whipped cream has no such a smell because I use completely different ingredients and a method! I never knew vegan whipped cream can be so white, fluffy and tasty without any added additives.

    【recipe 】(1g=0.353oz)
    ◼️50g rice flour paste(15g riceflour :40g water)
    ◼️100g soy milk (warmed/any vegan milk is ok)
    ◼️75g coconut oil (odorless/riquid)
    ◼️9~13g maple syrup(any sugar is OK)
    ◼️0.5g vanilla extract
    ◼️0.5g sea salt
    ※Any kinds of rice flour is OK but glutinous rice flour.
    ※Please make sure using"odorless"coconut oil.
    ※Depending on the coconut oil, separation may occur at lower temperature.
    In that case, cool it further than 20℃ before separating.
    1. Mix rice flour and water well and knead over medium heat.
    2. Gradually add the (warmed)soy milk to the mixture to prevent lumps from forming.
    3. Gradually add coconut oil(odorless/riquid) to emulsify the mixture.
    4. Heat them for 10 seconds on medium heat to dissolve the paste completely.
    5. Blend in ice water with a hand mixer until the temperature drops below 20 degrees Celsius.Stir.
    6. when the temperature drops below 20°C, remove bowl from ice water and mix in room temperature (or use hot water if you need) until it reaches 23°C.Stir constantly.
    7. when the temperature is around21~ 22°C, the oil begins to separate and then whips into aIt will change.
    7. when the whole thing is whipped and the temperature reaches 23°C, it's done.
    8.flavor them.(※If the maple syrup is cold separation may occur again, but it is OK if you adjust the temperature to 23℃ and mix again.)

    ①It is important to completely dissolve the paste.
    ②cook with air conditioning in summer.
    ③If the temperature does not rise easily, use hot water to adjust.
    ※Depending on the coconut oil, temperature are defferent a little.

    Finally made it! After 2 tries and 3 hours in the kitchen 😅
    It’s sooooo good 😌 I used coconut milk and it ended up a perfect match for the coconut cake I was preparing.

    Omg it worked!!!! My first whipped cream!! Thank you so so much. One question mine doesnt look so “smooth” at the end. It emulsified and turnt white but you can still see a little bit of something. I dont know if its separation. Should i keep whipping or if the temp is right just leave it there?

    I am definitely going to give this recipe a try, but I have some questions:
    1. As this is a very long process to repeat every time, Is it possible to store "un-whipped" cream in the fridge until use ?
    2. How long can it be stored for (airtight)?
    3. How do we bring it back to whipping stage? Should we just keep increasing the cream's temperature as mentioned in the video?
    4. For how long does the whipped cream lasts at room temperature, or if its around 26-27C? Will it melt?
    Again, many thanks for this ingenious method, but I am only trying to realize the stability feature of this cream, as it is of course very healthy, and without any artificial stabilizers ❤

    Hi I just did this and it worked so well, until i added the maple syrup and then it curdled? it says to bring it back up to 23C and it will all combine and get fluffy again? also how long does this last? should i put it in the fridge? thank you! it's truly a genius recipe xx

      Wow! Im glad to hear that you success! Would you mind letting me know which country are you liveing in? and which coconut oil did you usable?
      If you put this whipped cream in a cold space, it gonna be hard. But when keep it on room temp it will become soft again.

      I think u can store the rice flour paste in the refrigerator. I normally store it for making other dishes. Even after taking it out of the fridge, it remains the same as before .

      I wish there were other oils that change with temperature, such as coconut oil ... And you need thermometer too because temperature control is the most important recipe :(  Sorry !

      It will stay for many hours at around 23 ℃ of room temperature. but it will melt in hot place, and get hard in cold place. thank you.

    I sticked to the recipe and rice paste was fully dissolved. But the separation didn’t happen even I whipped it for over 10 minutes. How can I fix it?

      I see.
      You had need to mix with making the temperature up(21→23℃) ”gradually”.
      ”gradually” is most important point.

    I try to make it, but it fail T^T
    The consistency is very sticky. It look like custard cream than whip cream.
    Then i read your recipe again found that in video mix coconut oil and boil 10 mins. But the content number4 write boil for 10 second.
    I will try it again next time. ✌🏼

      Thank you for watching! Yes, it's ok to over whip it as long as you keep 23℃. If cream get colder it gonna separate again and get warmer it gonna get loose. in that case, you just need to adjust temp and mix again! thank you!

      Sorry,you can't use another oil but coconuts oil.
      Because coconut oil gets solid when it is in cold place.so that you can get the ideal texture of whipped cream.

    Rather than coconut oil you could actually use palm oil which is cheaper though might be more yellowy

    Hi! I tried the recipe but the only problem is that the oil melts too quickly in room temperature and it destroys the cake 😢 Is there any way to prevent it??

      Try Gretchen's Bakery Stabilized whip cream. She uses Agar Agar to stabilize the whipped cream. It's genious!

      thank you for the commemt. This whipped cream can't be cream nether at hot place nor cold place. If you put that at hot place (more than about 25℃),it will melt. if you put it in fridge, it will be hard,sorry.

    У меня получилось с кокосовым маслом от Aroy-d. Вместо сиропа брала сахарную пудру только, на вкус сладко, консистенция хм ну мука чувствуется на уровне немолока 🤔 но с печенькой прям взбитые сливки!!
    в общем работает и вкусно!!!!! 💖
