This Chinese stir fry green bean recipe is often found in sichuan provence. We call it gan bian doujiao [干煸豆角]. The green beans infused by all the seasoning combination, it is really flavorful even though we didn’t put that many seasoning. It is definitely worth a try.

400 grams of green beans or snap beans
30 grams of dried shrimps
3 ounces of ground pork
Some dry chilies [[Amazon Link: geni.us/hmTd]]
2 tbsp of vegetable oil
1 tbsp of minced garlic
1/2 tbsp of minced ginger
1.5 tbsp of soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce: geni.us/wABlLXf]
1 tsp of sugar
1/2 tsp of salt
First, Soaked 30 grams of dried shrimps for 30 minutes. Drain it and roughly minced it. It is optional ingredient, I like to use it because It adds that shrimpy flavor to the dish.
400 grams of green beans. Take off the tip of the green bean, pull off the fiber as much as you can and break it into half. A good substitution is this long beans.
Heat up the wok a little bit, you can do this with a large saute pan as well. Add 1 tbsp of oil. Just add in the long beans.
Stir fry it for 5-8 minutes on medium low heat. What we are looking for is the skin starts burning, like some of it is doing here
Add a pinch of salt. Because if you add the salt at the end, the meat will take most of the sodium so the green beans doesn’t get that much flavor. By adding a pinch of salt now, will be easier to control the balance.
take the green bean out and set it aside.
Add 1 tbsp more oil into the same wok. Put in 1 tbsp of mince garlic, 1 tsp of minced ginger, and dry hot chilies. You can adjust the spiciness level ad you like.
Bring this to fragrant. So it will infuse every thing else. Then go in the ground pork and the minced shrimp, let it cook a little bit. If you are vegetarian, you can just skip this part or use mushrooms and tofu. It is going to cook really fast. So just stir fry for about 2 minutes.
Add the long beans back to the wok. Put in all your seasoning. 1 tbsp of soy sauce, 1 tsp of dark soy sauce, 1 tsp of sugar, 1/2 tsp of salt. Mix every thing together. You are done...

I’m a little late to the green bean party, but I wanted to share that I made this dish for our American Thanksgiving meal this year (2021). It was a HUGE hit! It’s savory, slightly sweet, salty, spicy, and super well balanced. There was only a tiny bit leftover, and one son claimed it and had it for breakfast the next day.
I have amazing elderly neighbors, and we’ve shared thanksgiving with them for the past few years. Both families contribute, but my neighbor doesn’t really cook and their house is quite cluttered and it’s just hard for them to navigate a meal. So basically, I make 90% of the meal and my kids bring it over to them. We are very happy to share and be thankful for having them in our lives, and to just brighten their day.
Anyway, they are southerners (their cornbread stuffing was incredibly delicious) and I wasn’t sure what they’d think of blistered green beans with chilies and ginger/garlic, but they absolutely loved it! I gave them your recipe, and now she’s a new subscriber to your channel. Sorry, that was a very long explanation, but it shows us that good food is always a glue that binds us together. I think this is going to be a required dish for our feast every year - and why not? It’s so delicious. Thank you again for sharing the recipe, writing it down for us, showing us each step of the process and giving us the history and cultural importance of dishes. You are the best!! I love green beans and I am eager to make this recipe. It may be a bit challenging because I am blind and there is a visual element to cooking them this way, but I am confident I will figure it out.

Great recipe. I didn't have pork, so I made it with chicken and marinated the way you do the kung pao chichen. It turned great!!!!!

Impressive meal. Since I used a cast iron frying pan, I was unable to develop the 虎皮 on the green beans. Regardless of not getting that charred look, I will make this dish often because it tastes so good.

Ahh this is what I need! This dish was one of my favourites at the local Chinese restaurant. Now that I don't live in that neighbourhood anymore I've resort to making it on my own.
We used to call it "Four Season Beans" .... Why, I wonder?

Are those dried shrimps have the shells still on them when you chopped them up? And which part of pork did you use? the tenderloin?
the shrimp doesn't have the shell on and you can use most of the cut of the pork such as pork loin, chuck.
That looks good! But if I ate that many hot peppers it I'd have to plan my funeral in advance, LOL!

I tried your recipes like BBQ eggplants and chilli Chicken are went well. I wanna to ask you as our family always went to eat Sichuan shop near our house. We always order Dry Fried green beans with pork. The taste there got a small pieces salty inside don't look like dried shrimp. May I know that is its Sui Mi Ya Cai or it is dry shrimp itself.

Are you using a cast iron wok? or is it carbon steel? I'm looking for a good wok that will work on my induction stove.
The wok I use is cast iron wok. I bought it randomly on the street. Sorry, I don't know any good brand cast iron wok that works with the induction stove.

Looks deicious, esp with ground pork to take in the rich flavours. I see "stringless" beans in the store sometimes.. but they are slightly bigger. Worth a try... thin fresh beans are often price reduced.. cos not the most popular veg.. I buy them. But make one a tiny bit gassy 😜 lolol

Now.. I've tasted a similar ground pork dish -- served on whole leaves of lettuce... It is inreadibly savoury & yummy.
