Ingredients Base 200g malted milk biscuits 50g crushed Maltesers 20g Horlicks Pinch of salt 60g melted butter Mix to wet sand consistency 9inch springform tin Press it all out until level and tightly packed Fridge for 10 min or freezer Cheesecake 700g cream cheese 85g icing sugar 40 g Horlicks Pinch salt Whisk altogether 210g double cream Whip to light peak Add to Cheesecake mixture Incorporate well Split mixture in 2 Add 100g crushed Malteser into 1 half Add 100 g of melted chocolate and mix into the other half and mix with hand mixer Pour out Malteser mixture onto base and level Add the milk chocolate cheesecake mixture and level out. Ganache 150g milk chocolate 75g double cream Melt together Pour onto Cheesecake and level out. Crush Maltesers and decorate Cheesecake Set in the fridge over or minimum 2 to 4 hours.

Made this cheesecake at 6am this morning because I'm 37+2 weeks pregnant and seemingly sleep is just not on the agenda anymore 😴😳 I also have your banoffee pie recipe sat in the fridge... I've just made this.. But instead of chocolate ganache I'm using the malteser spread on the top. Melted for roughly 30-60 seconds until its spreadable for the top 😍😍

Jemma!! I finally got around to making this yesterday. I am not a cheesecake fan, but I think this one changed my mind. I used graham crackers for the crust, and upped the malt milk powder by 10 g. (I'm in the US) That's about the only change I made to it and it is pure decadence. Just WOW!!! My mom loves it too, made a couple suggestions and I wanted to run those by you. 1. Adding in gelatin to firm it up, she says its too soft 2. Adding in just a touch of lemon extract to brighten it up. I think it is fine for me as is, but she is old school on cheesecakes. If I could give it 10000 thumbs up, I would. Just perfect!!

Can't believe Maltesers weren't introduced to the US until three years ago. And I've never thought Horlicks can be used in a cake, either. I also like that this cheesecake doesn't have gelatin in it as gelatin always gives cheesecakes a funny texture.

I made this as a birthday cake and it was a hit yay, thank you so much, your tutorials are so easy to follow and my cakes look almost as good as yours.
I occasionally do a baked Malteser cheesecake and for the base I use nothing but crushed Maltesers so when you bake it, the chocolate melts and after cooling you end up with a solid Malteser base, no need for the butter either. Plenty of fat in it though as I used 50/50 marscapone and Philadelphia :) Topped with smashed Crunchie bars too, obviously!

Hi Jemma, I usually see gelatine in cheesecake recipes, but not here. Is it holding up as well as a cheesecake with gelatine would do or is there any noticeable difference?

That looks amazing! I've found the best chocolate for ganache is the Rich Milk Chocolate from Lidl, it's really creamy but with a slight bite.
