For anyone who needs it: ½ cup buttermilk ½ cup cold coffee 1 tbsp less than ½ cup of oil 2 small eggs Just combine 7/8 cup sugar Little less than 1 cup of flour 1/2 tsp Bicarbonate of Soda 1/4 tsp Salt 1/3 cup cocoa And choc chips Put dry into wet and mix Line tray and bake at 160 c and bake for 22 mins To check to see if they are ready, see if they are springy
I made this last night and the cake turnt out SUPER MOIST. I love it. In order to make it kids friendly, I replaced the coffee liquid with chocolate milk so it was 250ml of milk in total. Thankyou. Love from Indonesia.
I tried these cupcakes as a small gift to my dad on Father's Day. He loved it so much, I changed the recipe a bit, I used the oreo cream instead of a double cream for the filling. It turned out super amazing 😋❤
@@maillibode8264 I added a some fresh cream to loosen the oreo cream a little and then once you see it melting, you can add more fresh cream to get a runny consistency
I just wanted to say I met sally and Jemma in a meet and greet a while ago and they’re just as lovely irl as they are on these videos! Love all your bakes ❤️
I made oreo cupcakes yesterday using this recipe and they are so good. Few notes, I used regular cocoa powder (not dutch processed/alkalized). Regular as far as i know is ligter in color because we need that acid factor in cocoa to react with the baking soda (idk if the acid in buttermilk and coffee are enough).. And I made swiss buttercream + crushed oreo cookies (also from cupcake jemma) because american buttercream is too sweet. Just sharing 😊
Made these last night! I used Van Houten black cocoa and the cakes were BLACK, not dark brown, completely black. Slightly strange looking and not what I'm used to but whatever the taste matters more. The cake is really nice, moist, and spongey almost squidgy actually. I didn't use the chocolate chips in the cake batter as I didn't fancy it. They are abit oily though, the oil was seeping out through the cupcake case so if I were to make these again I may reduce the oil. The whipped cream filling just completely dissolved into the cake lol. I don't know if it's because my cake wasn't completely cool but I suspect that is the reason. I put the insides of the oreo into the whipped cream also and added vanilla extract. It tasted really lovely it's just a shame it didn't stay that way inside the came. Overall though they turned out super nice moist and really similar in taste to an oreo. Thanks for sharing the recipe! :D
Thank you so much Jemma! It’s my younger sisters birthday next week and she is in love with Oreos and cookie dough, I have been looking at so many recipes but none of them has really matched her dietary requirements and this is just perfect so thank you again!
I just want to say a big THANK YOU for sharing all your AMAZING recipes with us. They make baking and life that much sweeter and easier. ❤️ Really appreciate it. ❤️
i made these cupcakes yesterday! believe me guys these were the best cupcakes I've ever made and Eaton in my whole life...thank u so much sally🌺 u r wonderful
Just made these & it’s the first time a chocolate cupcake recipe has worked for me!!! They are so easy to make and even more delicious. The coffee adds a beautiful richness to the chocolate, I even found a dark cocoa. Wish I could add a picture!
I would love to come to the shop when this is over and get one! I love cookie and cream in.... Well everything! I'm going to try the fudge soon.... I can't wait!
Sally... you are such a joy to watch! You always put a smile on my face, and your baked goods make me hungry. I'll be making these cupcakes for my birthday tomorrow. I'm a bit perplexed about the chocolate chips listed in your dry ingredients. I don't see them in your batter. I hope you're able to respond in time!
I made these and they were so yummy! I used the smaller side of a melon baller to get the hole in my cupcakes! Just a little tip... Thank you Sally for your wonderful tutorials! You guys have brought my baking mojo back! My husband loves it, but is telling me to slow down😂 Another tip about the buttermilk is I was able to get my hands on a powder buttermilk mix. All you have to do is add water to it. Sounds “unnatural “ but I assure you that it is all natural 😉
Phatgirl9703 I do, but I guarantee you will get much better results in grams than cups. Scales to me, were very intimidating at first. Now I cannot live without them. I have always been a methodical baker and loved the process of measuring out each ingredient so it is ready to go into the recipe. It might make extra steps, but you will thank yourself later, for example if you make an Italian buttercream or caramel. Boiling sugar is not to be neglected by measuring ingredients after it reaches the correct temp. Just trust me on this! If you do decide not to use grams, you can google a conversation from grams to cups. Good luck and I hope this helps ❤️
Sally looks like a doll so cute 😆😄 the face she makes when she makes that first bite... Sending love from Kenya. I'm saving so one day I can visit London and especially your shop crumbs n doillies 😍
lovely video! you can also use the larger end of an icing nozzle if you don't have an apple corer. works wonders! keep safe and healthy wherever you are guys!
I love the videos and love how you now made the baking kits available. Shipping to NZ is not necessary as I’m making the cookies, cakes and cupcakes straight of your recipes. Everyone loves my creations based on your recipes. Which makes crumbs and doilies famous in New Zealand 👍😀
Sally, you're great, Jemma is lucky to have you keep her channel alive! 👍😎 Could you maybe tell me if the buttercream consistency would be OK if I used (considerably) less sugar? I love the C&D bakes, but they're much too sweet for my liking, especially the buttercream. But I'm worried about just leaving out 1/3 or 1/2 of the sugar...??
In my experience, what’s best to do is add the sugar little by little until you get the perfect consistency and forget the milk completely. You may also want to try adding a pinch of salt to offset the sweetness!
That's exactly what my question was! When we need milk to loosen it up, doesn't this mean we could use less sugar so get the same consistency that we would get after the milk is added? 1/2 less sugar is too much IMO. It tastes like sweet butter that way. I'd start with 1/3 less, and maybe add some more later to make it 1/4 less.
My go to is always swiss meringue buttercream, a lot less sweet than other buttercreams and still tastes SO yumyy! When I make it I use 2 eggs whites , 150 g of sugar and 200 g butter, vanilla, salt. Comes out perfect every time and not too sweet at all ;)
Sally, you are AMAZING at baking! i really miss Jemma! that buttercream looks amazikeels! that's what Barry loser said in the books btw! I cant wait for lockdown to go away and we can clear our minds and i can finally go to london on my b'day next year to eat food! particularly from C&D! Thank you C&D for keeping us updated!
You are such a pleasant person. I just love your videos. Recipes always look so very good. Really hoping to try many of them over this winter. Thank you so much for all that you do.❤️
Yayy, can’t wait to try this! Question: there’s also another cookies and cream cupcake recipe on the cupcake jemma channel posted from 5 years ago.. are these similar? Which one is better lol I wanna try both!
Hi Jemma ..they looked absolutely delicious..I can’t wait for you to open again.but am enjoying the videos..Sending love and hugs to you all at crumbs and doilies~~ Xxx Xxx
i just made this and here is my review: The sponge is absolutely insanely good. like the best cupcake sponge i have ever made, and ive made a lot. the filling on the inside is also great, but a bit bland, so i added another teaspoon of powdered sugar and a splash of vanilla extract. The oreo buttercream was absolutely awful. the amount of sugar put in is sickening, so i had to add some vanilla and cream cheese and melted white chocolate to make it edible. i would recommend the oreo mousse lifeloveandsugar's ultimate oreo cheesecake recipe, its not as sweet and a lot better. but the sponge is to die for! i baked mine for 23 mins and it was perfect and moist.
I can't get the ingredients or the kit to bake these cupcakes where I live atm... buuuuuut, watching Sally with her happy smile and positivity is better than any cupcake :)
You can put your piping bag in a cup or tall container while you fill it, just bend tip up so nothing goes through. one way you can eat a cupcake without frosting mess, take out of liner rip in half and put the bottom ontop. I wonder how this would turn out using biscoff cookies
I'm gonna sound stupud but I would've assumed all modern ovens were fan assisted? I can't see what the advantage of having an oven with uneven temperstures would be? I'll probably ponder this more whilst making/eating this delicious recipe
For anyone who needs it:

Question: there’s also another cookies and cream cupcake recipe on the cupcake jemma channel posted from 5 years ago.. are these similar? Which one is better lol I wanna try both!
Yes there is. This one has a much more chocolatey, moist sponge, but both are great...!
The other one is a malted sponge rather than a chocolate cupcake, latter of which is also the recipe in Jemma’s book!
The one with the malt powder is really delicious and the malt makes them smell amazing, the other recipe also has a whole Oreo cookie at the bottom
Well this one is more updated i guess.
I prefer the malt powder ones, theres not one flavour dominating the cupcake, plus you get a cheeky Oreo at the bottom of your cupcake!
My gosh, these cupcakes look divine! Complete and utter deliciousness! 😍
