It is a Belgian brand of speculoos :) Growing up here I think everbody had speculoos, it is just such a classic, great with coffee. I don't know many people who don't like speculoos, it is such a crowd pleaser. Also the spread is actually invented by a person who participated in a tv show called 'the creators', later on Lotus commercialised the product in 2008, bit hit in Belgium.
I just made these from scratch and WOW they are amazing! I added more than the required biscoff spread XD and it turned out so good my family LOVED it!!
I had a C&D Biscoff cupcake back in February before lockdown when I had given up chocolate for lent - honestly one of the best cupcakes I’ve ever eaten!
I'm a custom sugar cookie designer and decorator and I just ate an entire sleeve of Biscoff cookies with leftover icing while watching this video over and over. If you're going to indulge, Biscoff is a great way to do it.

The original recipe on her channel for these uses swiss meringue buttercream (I can't recommend it enough) so when I did put them in the fridge one time, the icing firms up as you would expect but taking it out to bring it to room temperature before eating sorted that out :) since that one time I just leave my cupcakes out because I've realised they're fine as long as theyre in a air tight container :) I know this video is doing normal buttercream but their swiss meringue buttercream..... I was eating the leftover straight from the piping bag its delicious

Tammie Martinez I don’t know where you’re located but ask your local grocery store. In California, the Ralphs/Kroger near me has them. Think I was able to first find it at a Big Lots

Hi Sally I noticed on the oreo cupcake recipe you used caster sugar for the buttercream but for this one you used icing sugar. Do they taste the same? Or does the icing sugar make it smoother? The butter cream tasted a bit granulated when I made the oreo cupcakes but then again I didn't sieve it before hand. Do you think it will taste a lot smoother with icing sugar?

I did the filled centre trick today on the chocolate cupcake kit today. I scooped a bit out with a melon baller (cos I'm so middle class) and plopped in just a teaspoon of caramel spread. Yum! My dad, a retired chef, was very impressed with that trick that I stole from you guys.

Made these over the weekend. Has to be one of the best flavours of ever tried. The buttercream wasn't sickly sweet either. Had some issues with my batter, i think its because of the butter. I've watched the cupcake Jemma Butter video before but the butter always look much softer on these recipe videos. Does anyone know how long the butter should be left out for to get perfect consistency for cupcakes please?

biscoff is a Belgium cookie (here we call them speculaas what translates to spiced cookie but you could say It's kind of gingerbread cinnamon like) =)
I prepared these during the Christmas holidays and believe me they are INSANE!!! :D They got 10/10 from everyone who had the privilege of trying them!
