3 different and tasty ways to cook pumpkin

Growing and cooking your food from scratch is the first step to self reliance. We try to use as much as possible from our food forest/garden harvest, trying different recipes, not to need to eat our harvest in one way only. That may become a bit of tiring for our taste. Who has kids, they know how picky they may be 🙂
Please check our 3 different pumpkin recipes we cook on rotation basis to make sure kids eat vegetables in different forms.
Pumpkin paratha: @0:50 and @3:00
Pumpkin fritters: @2:19 and @4:24
Pumpkin side dish/poriyel: @6:00
For pumpkin paratha & fritters, while kneading the dough, please to not add any extra water. Pumpkin is rich in water itself and that releases during kneading. Most probably, you will need to add more flour to keep the dough in shape.
For pumpkin paratha, we're using chilli powder as pumpkin itself it's rather sweet, so trying to make the dish having a bit of spiciness in it.
For pumpkin side dish, it's important to not have smashy pieces in the end of cooking, add salt at the very end. Again, after this, lots of water will release and you may end up in smashed pumpkin. That's we try to avoid. Along with mustard seeds you may also add jeera (optional, but gives extra taste).
