    My last assignment for pastry school was opera cake, and I can confirm that it's DELICIOUS. It is very rich, though, so small peices are definitely recommended. Be warned that it does take a while for assembly, but it's so worth it. I can't wait to try your recipe!

      How many hours from start to finish did it take you to make this cake??? Did it turn out like you wanted? So it was your final exam at pastry school?

    i cant wait to try this cake soon!
    a couple of hints:
    1. chop chocolate with a serrated bread knife - its much easier and the chocolate doesnt go flying everywhere.
    2. put the butter in the bottom of the bowl, then chopped chocolate on top. the butter melts first and protects the chocolate from burning in case the water gets too hot underneath.

    I’ve made it a few times. The recipe i use has two quite different chocolate layers. That middle chocolate layer is a ganache, while the top is more of a glaze that will actually set. Watching this has me wanting to make another one haha

    I made opera cake for a dessert auction last year and this year. I was so happy when the cake sold for 400 dollars last year. While it didn't sell for much this year (250 dollars), I was really happy when the lady that bought my dessert told me it was one of the best cakes she's ever tasted.

      Please elaborate..how did your cake get sold for 400$? Was it a competition? Are you a celebrity or is it that you were so bad for years that there was a bet to pay you a handsome reward if you succeeded baking something? Please tell me. I buy my opera cake for 15$

    I actually made this cake and it was amazing. I followed this recipe and it worked out so well! It does take a bit of time as there are many things to prepare but for me, it was worth it. But, my layers weren’t as perfectly even but it still looked so pretty!!
    I wanted to prepare the cake a few days ahead so I put it in the freezer and that was fine!!
    For that, I prepared the cake, assembled it (without the chocolate ganache on top!!), wrapped it with plastic wrap and put it in the freezer. In the video, this would be at minute 12:39. I then took it out and let it defrost slowly in the fridge. Then I put the chocolate ganache on! This worked out well for me.
    I highly recommend making this cake!!😊

    Ooh! Chic layered desert. ❤️ Genoise batter and can be gluten free as you use ground almonds instead of flour. Remember if you have trouble getting those white peaks try a drop or two or lemon juice or vinegar (or cream of tartare). Careful with the temperature for that chocolate glaze. Too much heat and it will lose it’s shine. Caramel is lava hot! Take every precaution! Once you have followed all of Mr. Kanell’s instructions all that’s left is enjoying your delicious creation. 😋

      @Dan the Baker man - You’re right. This can be a gluten-free recipe if you replace the all purpose flour by corn starch for example. With rice flour you likely won’t get structure unless you add something like xantham gum.

      Can you please tell me which titled video these are under? I just checked John's playlist. Under John's favorite coconut and cupcakes playlists I didn't see one under fav coconut and the only one I saw that had coconut on them in the coconut playlist was the Easter cupcake video... 🤷‍♀️

    You make it look so easy. I attempted making this very fancy cake following another video back in 2020. It tastes really good but my layering wasn’t pretty at all 😅 Now I want to try again because I want this cake for my birthday coming soon 😍

    Well, mine is in the fridge prior to the final chocolate layer. Boy, that was time consuming. I started at about 1:45 and it's 4:15 now. I watched one video (Japanese), where he assembled the cake upside down in a square cake mold, and I think he froze it, because it came out with a perfectly smooth buttercream top when he unmolded it and then he poured the chocolate over. It looked spectacular.

Can't do highly involved recipes right now because I broke my ankle recently and have to roll around my kitchen in my desk chair to cook while leaning against the counter on one leg when I need to stand, but I'll be saving this one and bingeing your quick and easy recipes playlist in the meantime!

    I have to try this recipe. Your recipes are my go-to when I want to make impressive desserts. Seriously, every time I make your recipes people are impressed! So, I had always wanted to try honey cake and saw that you don't have any recipes for it. Do you by any chance have a recipe for honey cake you could make a video on? 😇 Please with sugar on top?     Hi John! I was wondering what your tip would be if we want to lessen the sugar in cakes and other desserts? Do we have to replace the sugar with something else? Thank you!

      Most desserts are too sweet. Cut out 1/4 of the sugar and see if you like it. Then plan future bakes accordingly.

      You could actually use any flavor to make it your own. Rasberries might make a nice syrup to compliment the chocolate :)

    I’ve tried this cake in the past following Chef Lenôtre recipe and I would not do it again as it took me almost the entire day to make it. But, it is worth the effort! Amazing cake!

    Thanks to you, I finally tried an Opera cake....not baking it, but eating one....I felt like I had died and gone to Heaven. I didn't eat the whole slice myself....I shared it with my boyfriend...it was WONDERFUL!

    A good tip for adding melted butter into a light cake batter like that is to take a small portion of batter into a bowl and add the melted butter to that, then add that batter with the melted butter in into the rest of the batter so it doesn’t lose as much air, as opposed to just adding the butter straight into the batter

      But don't you end up having to mix the melted-butter-batter & the non-melted-butter batter together? Doesn't air still escape that way?

      @@brie1026 it’s so that the melted butter deflates the batter and by mixing some in beforehand it lessens how much it deflates
