When I experimented with chocolate there was four ingredients that put chocolate flavours out more. Vanilla, salt, coffee and olive oil. Are you using neutral oil or olive oil for chocolate?
Thank you for going this way as I'm not that bit of a chocolate fan and I'm on a keto regime right now (old men and their doctors often clash). I can enjoy your video without breaking down and making something just because. I am making candied and dried cherries for something right now but it's likely for my grandkids so I'm not tempted.

Where I'm from we rarely have anything above 33%, so I was wondering how I should compensate if yours is above that. Would just adding more chocolate work to thicken it? And one more, how much of a difference do you think the cognac makes in the syrup? I'm thinking of making this for a birthday and there will likely be kids eating it so I'm not sure adding cognac would be appropriate (though maybe boiling it for a bit to cook off the alcohol is an option?).
