I'm reading a lot of critism of this video along with unecessary name calling but not anyone giving a better way to do it! If you don't like his method choose another. This method may work very well for a lot of people. Not me, because my small children have actually pulled down the door when they weren't quite tall enough to open it. But I'll just keep looking for a video that might help.
If you shim out the hinge, chances are pretty good you'll need to plane the edge of the door to fit the frame. Seems to me adding matching white painted diagonal wooden brace(s) to this door would have been a far better solution.

I'm not at all clear what about what you did with the shim. How can you move the hinge over and up by bringing it straight out?

I used cardboard years ago. It sagged again. So use wood people 😁
