I love this series and Gourmet Makes, but sometimes episodes end before the recipe is finished and that doesn't seem right.

Chlorinated water isn't usually recommended for fermentation because it is said to kill the yeasts needed for the process. Think fish aquariums. Let tap water off-gas the chlorine for a day or two before exposing yeasts to it.

Brad's ability to be so positive, energetic & inclusive of everyone around him at all times is just astounding to me. He's got such a warm presence & an unmatched ability to just personally connect with everyone around him in an instant. I'm extremely jealous. Being such an introverted & private person myself. What a gem he is.

I love how the editors have a different style of editing for all the chefs. Brad is pure chaos and gets roasted every 10seconds, Claire is just very wholesome, Chris is professional but also very funny etc

If you leave the skin on the ginger, it will help to boost the yeasts that create the fermentation. :) That's why irradiated ginger doesn't do so well, since the skin is the part that has been "sanitized." I've had pretty good luck with organic, though! And I was so happy to see someone else reuses kombucha bottles--they're the best! All of my friends know to save them for me....the crazy bottle lady. :P

I'll be making my first batch ever of ginger beer. Am a big fan of ginger beer and ginger tea. Don't just throw away the ginger pulp when finished; boil it up with some honey and make it the basis for ginger teas. It keeps for months in the frig and can be added to green, black and other teas; iced or hot. Boil the mash with added water and honey; cool to room temp, and put it in a blender for 10-20 seconds. No need to strain.

I've learned the yeast is on the surface of the ginger root. Brad not only washed, but peeled it. There was no yeast there to do the fermenting.
