  • Written recipe for Authentic Punjabi rajma
    Rest time: 6 hours
    Prep time: 15 mins
    Cooking time: 1 hour
    Serves: 6-8
    Ingredients:
    • Rajma (kidney beans) 1 cup
    • Water as required
    • Salt to taste
    • Onions 3-4 medium size (sliced)
    • Oil 50 ml (4 tbsp)
    • Ginger garlic paste 2 tbsp
    • Tomato puree of 4-5 medium size
    • salt to taste
    • turmeric powder 1/4th tsp
    • coriander powder 1 tbsp
    • Red chilli powder 1 tbsp
    • Garam masala 1 tsp
    • Kasuri methi 1 tsp
    • Fresh coriander 2 tbsp (chopped)
    Methods:
    • Rinse the rajma with water thoroughly. And soak it in fresh water for 5-6 hours or overnight. After soaking, drain the excess water and keep aside for cooking.
    • Set a cooker on medium heat, and add the soaked rajma, add water and fill up to 2 inches above the rajma surface, add salt and pressure cook on medium heat for 3 whistles. Switch off the flame and let the cooker depressurize naturally to open the lid.
    • Set a deep pan or wok on medium heat, add oil and onions, cook until the onions are brown, keep stirring while cooking the onions.
    • Remove the fried onions on absorbent paper and cool down to room temperature.
    • Transfer the fried onions to a grinding jar and grind to a fine paste, use water as required.
    • Set the same pan and reuse the oil that was used earlier for frying onions, add ginger garlic paste and sauté for few minutes.
    • Add tomato puree, salt to taste, stir well, cover and cook for 5-6 minutes, while stirring in intervals.
    • Add turmeric powder, coriander powder and red chilli powder, mix well and add the onion paste and cook well for about 15-20 minutes and while stirring in intervals.
    • Add the precooked rajma along with its water, mix well and cook well for 15-20 minutes.
    • Add salt to taste, garam masala, kasuri methi and freshly chopped coriander leaves, stir and mix well. You can add hot water if required and adjust the consistency of the gravy depending on how thick or thin you want it to be.
    • Your authentic Punjabi rajma is ready to be served, serve hot with steaming hot rice and some paratha or roti as per your preference.

    Thankyou Ranveer for this recipe. Meri bhi Maa ke haath ka Rajma mujhe kabhi nhi bhoolta, she used to make the best rajma in entire khandaan. I lost her in Covid this year and everytime I make Rajma her memories make me cry and smile. Today seeing your mother and you making it together made me so happy 🙂.       Buy kidney beans , also called as Rajma in any Indian stores near you. They are dried and packaged well for sale.

    One suggestion,if your tomatoes give sour taste to your curry then please add a little fresh cream.. It will manage the sourness and gives a great look and taste

    so i never did this before
    but i had to do this for this particular recipe .
    I just finished my cooking and had a bowl of rajma cooked as per the instructions given in the above video and i just can't express in words how delicious it came out. Soo rich and absolutely yummy and hardly use masalas. Hats off to the chef👍

    Tried it just...turned out awesome..just a personal twist to it by adding a bay leaf & a cinnamon stick while frying. Used tomato paste as fresh tomatoes are very high priced here in Bahrain. Also added a teaspoon of tamarind paste to bring out the tangy flavour. Thanks, Sanjyot

    Followed the exact steps without even soaking rajma overnight. I had my best rajma today, while being with child everything smells fishy and yuckss mostly, I found your recipes life saving and inspiring instantly. Whenever I watch your video and like any recipe I immediately go to kitchen to make them.     i tried this recipe with the help of my wife tonight.. we never tried kidney beans before without any reason.. but when i prepared it then every women in our family were like
