Harpal Singh ji, thank you 🙏🏼 for this delicious healthy recipe. I used Instant Pot to cook the rajma/ kidney beans and used the same pot to sauté other ingredients and make the rajma. It took about 1/2 hour to make it and then I put it in slow cook mode for 2 hours. It was unbelievably delicious. We had roti, rice, Karela aloo sabji and raita for lunch. I used mustard oil for this recipe. I made a large quantity, hence I am freezing leftovers in small containers as my daughter likes to take it to her home when she visits us. Rajma freezes well without much change in texture and taste. Thank you ji 🙏🏼🙏🏼

Hello chef and all ! Made this recipe today and it make out and tasted delicious. Some important tips which i have learnt in this recipe and have listed below the same. Hope its useful. 1. Rajma and anyother lentil recipe should always be cooked in Ghee. 2. When u have soaked the rajma overnight and pressure cook it the next day, DONOT pressure cook it for more than 2 whistles. If you do cook for more than 2-3 whistles as i did, then u will find 25-30% of rajma being mashed and soggy. Hope the above information helps you. Thanks again chef !

Harpal ji ,cooking till oil separates or oil should be oozing out of the mixture essentially means the moisture has evaporated. Generally if I am making bhuna masala if I have added very less oil there is no oozing of oil. Some oil can be seen at the base of the pan . Pleas let me know if my conclusion is correct. Oozing of oil is related to evaporation of moisture.
Oil basically helps in reducing the mixture and then if it floats on top of a dish it helps in protecting as a preservative. First amalgamation and then separation
