No Chole Masala is more a combination of fragrant spices, while chaat masala is more tangy and has more salt content, mango pdr, carom seeds, mint powder amongst other ingredients..

If you soak overnight it does not require baking soda, you can avoid tea leaves, instead add dry amla would give a nice tangy taste, you can omit tomatoes in both..

+chefharpalsingh Hominy is what Menudo, a spicey Mexican soup has in it. So, we thought that maybe it would taste good, too in this recipe. Have you had Menudo before?
Some people add baking soda because it is supposed to retain moisture and cut cooking time but if you add it you need something to neutralize it... in my opinion just boil in salt the baking soda stuff is too complicated.
+Ricardo And Shelby Thanks for the reply. To neutralize the soda's effect you have add something acidic, which is tea usually. But, cooking this way gives a smokey flavour to the chichpeas, of which I personally feel are only enjoyable with delhi kulcha breads.
Not while boiling, but when you soak the raw chickpeas over night you drop one tea bag into the water so the chickpeas turn dark in colour and gives desired colour for dishes like Pindi Chole.

Bcz of dry mango powder. Add very little of it. First time mine also tasted bitter. Next time I add very little of dry mango powder.. add corrainder powder also only a spoon. Chana masla 2 spoons.

Bitter can be because of only few things, onions being browned too much, all spices added and over cooked which makes it bitter.
