    I have a question. Today, we have non-stick, non-this and that. I am just wondering what did we do in the olden days, I remember brass pans that needed 'kleyee' done, not sure why. Then came steel and aluminium. Question I have what did we do to ensure tarka did not stick. Thanks

    Liked your simple recipe that didn't make me feel like it was TOO hard to make this dish! Now to master making the Bhaturas!!! Failed miserably last time due to some ingredient being wrong in the dough!

    Chef. Is Chaat masala powder the same as choley masala powder? I really like the way you share how to cook many dishes and why you do certain things. I usually don't care much about vegetarian dishes, but yours are great. I'm going try more of your cooking. They are as tasty as other non-vegetarian recipes.

      No Chole Masala is more a combination of fragrant spices, while chaat masala is more tangy and has more salt content, mango pdr, carom seeds, mint powder amongst other ingredients..

    Do you remember a recipe of chhole you posted on RUclips I guess few years back and where you boiled chhole with chai Patti and other whole spices
    I can’t find it anymore here!!
    And i believe it was the best and perfect recipe!!

      +Ricardo And Shelby You can add a bit of lime or pulp of tamarind in small quantities, check the taste and adjust the seasoning..

    Harpal ji , how do I Cook chole soft without adding baking soda, my chole does not get soft. I also don't want to add tea leaves. I Cook chole for 20 minutes in pressure cooker. Can I omit tomatoes in rajma and chole. Thankyou

      If you soak overnight it does not require baking soda, you can avoid tea leaves, instead add dry amla would give a nice tangy taste, you can omit tomatoes in both..

      +chefharpalsingh Hominy is what Menudo, a spicey Mexican soup has in it. So, we thought that maybe it would taste good, too in this recipe. Have you had Menudo before?

    Sir, what's the reason behind adding or not adding baking soda?

      Some people add baking soda because it is supposed to retain moisture and cut cooking time but if you add it you need something to neutralize it... in my opinion just boil in salt the baking soda stuff is too complicated.

      +Ricardo And Shelby Thanks for the reply. To neutralize the soda's effect you have add something acidic, which is tea usually. But, cooking this way gives a smokey flavour to the chichpeas, of which I personally feel are only enjoyable with delhi kulcha breads.

      You can use general spices, like coriander pdr, chilli pdr, jeera pdr, mint pdr, mango pdr, black pepper pdr, and garam masala in general

    Sir one quary ... Some add tea pack boiled water in cholle. ....is that wrong

      Not while boiling, but when you soak the raw chickpeas over night you drop one tea bag into the water so the chickpeas turn dark in colour and gives desired colour for dishes like Pindi Chole.

    Chef. I made this curry but it tasted really bitter. I think your tbsp size is different to ours in Australia. I must be putting too much of something into the mixture to taste so bitter! Please help. I love your presentation

      Bitter can be because of only few things, onions being browned too much, all spices added and over cooked which makes it bitter.

      Bcz of dry mango powder. Add very little of it. First time mine also tasted bitter. Next time I add very little of dry mango powder.. add corrainder powder also only a spoon. Chana masla 2 spoons.

    I have learnt a recipe from you sir @2012 the best recipe but you have edited or removed that recipe from RUclips.
    But we enjoyed chikad chole and chicken tikka for quite a while
    Never expected I will never find that recipe of yours again or I would have copied the instructions the way you said to dot.
    Just miss those recipes yhis might be good too. Will definitely try
