    ▼ Behind the shooting
I introduced a recipe for warm soba at the end of the year.
In Japan, there is a culture of eating soba at the end of the year.
    It is called [Toshikoshi soba]
In some cases, udon is eaten at the beginning of the new year.
Say [New Year udon = Toshi ake udon]
"Soba at the end of the year, udon noodles at the beginning of the year"
I think it started with a joke about the udon company, but many Japanese now know it.
I wanted to talk, so this time I made a recipe for udon in January.
By the way, if you change the noodles to soba, it will change to warm soba (´ ▽ ` *)

Wow. Its the simplest recipe to follow for non japanese. Do you have a recommended brand for the soy sauce?

Udon soup can be frozen and stored.

      Konnichiwa!
      Mirin and sake contain alcohol.
If you skip these two things when making the dish, it will lack the richness of the flavor, so it will taste bland and tasteless.
So I personally don't recommend making it.
But I think it can be made.
I think you need something different to bring out the richness of the flavor.
      I did some research,
As a rich substitute for mirin and sake,
      ・A little honey
It seems better to use .
I hope this helpfuls you. \(*´▽`*)/
